These chicken bacon ranch smashburgers are everything you want a burger to be… and more. Super juicy and flavorful, crispy bacon, homemade ranch and a buttery brioche bun. Serve it right up!
And they are cute too!
We are getting very close to burger season and this is my argument for making this a signature at your house this spring and summer. It’s packed full of flavor and tastes incredible. It’s a unique and fun twist on a burger without being *too* weird.
I know that even when my kids love one of my creations, that it has to be good. And very “not weird!” as they say.
It’s come to a point where I can’t eat any burger these days unless it’s a smash burger. Not only do I want that super thin burger patty, it’s the crispy, browned scraggly edges that really get me. They are the best part!
So, I did what any normal human would do and used ground chicken instead. Add a bunch of ranch seasoning (this trader joe’s one is my go-to), some melty cheddar, crisped up some bacon and blended up a batch of my ranch dressing.
The ranch is drinkable. I didn’t even like ranch until that ranch. You must try it!
The whole combo is dreamy!
Smashing the chicken right into that hot cast iron skillet imparts SO much flavor. And texture on the outsides too! The inside stays juicy and tender, but the outside is golden and packed with flavor. Throwing some cheese on top only makes it better. I swear.
When you have thin burger patties like this, you can totally double up on the sandwich. Eddie loves a double patty; me, not so much. It’s too much burger for me, so I’ll usually only do a single. But be assured that the juicy double burger is elite for you absolute burger lovers!
Another must-have for me is shredded lettuce.There is just something wonderful about shredded lettuce on a burger. It reminds me of an old school diner burger or something and we adore it. It’s also super easy and makes eating the burger more enjoyable. My kids don’t want a burger with actual lettuce leaves, but shredded lettuce? They will do that.

Chicken Bacon Ranch Smashburger

Chicken Bacon Ranch Smashburgers
Ingredients
- 8 slices bacon
- 1 pound ground chicken
- 2 teaspoons ranch seasoning
- 1 tablespoon avocado oil
- 4 slices white cheddar cheese
- 2 cups shredded lettuce
- ranch dressing, for drizzling
- 4 to 8 brioche buns
Instructions
- Preheat the oven to 400 degrees F.
- Line a baking sheet with parchment paper. Place the bacon on the baking sheet. Bake for 10 minutes, then flip and bake for 10 to 15 minutes more, until crispy and golden.
- While the bacon is cooking, make the chicken burgers. Season the ground chicken all over with ranch seasoning. If your ranch seasoning does not have salt, you can also add some salt and pepper here if you’d like. But your seasoning probably already has salt! Divide the chicken into 8 equal pieces and form each piece into a ball.
- Heat the oil in a cast iron skillet over medium-high heat. Once hot, press each ball of chicken burger into the skillet. Use the back of a glass/jar sprayed with non-stick spray and press the burger into the hot skillet until it’s as thin as possible. Repeat with 2 or 3 remaining burger balls, pressing them into the skillet.
- After 2 to 3 minutes, gently flip the burger. Press the other side into the skillet with a clean glass. Cook for 2 minutes.
- Add a slice of cheddar on top of each burger. Cook until the cheddar melts, another 1 to 2 minutes. Remove the burgers and repeat with remaining chicken.
- To assemble the burgers, add some of the shredded lettuce to the bottom of one bun. Top with 2 patties (or just 1 pattie!). Top with 1 to 2 slices of bacon. Drizzle with ranch and finish with the top brioche. Serve!

Would loved to have seen a pic of the burgers “after” they had been smashed. For the life of me, I can’t seem to get a mental picture how many would fit in that one skillet. The recipe does intrigue.
The picture with the cheese on top in the skillet is an after-smash picture. She fit 5 in her skillet, but skillets come in different sizes.
Just a chicken sandwich, not a “smashburger”. Everything being called a smashburger nowadays is ridiculous.
uh, not really? you literally smash the chicken into the skillet to create the smash burger.
simple concept but was so good! I’ll be making the chicken burgers once a week now… kids loved them!
These were a hit! I love the thinner smashburgers and never thought to make one with ground chicken. Great flavors!
