This lemon herb ricotta with grilled bread will take you minutes to throw together! Whip some ricotta in a bowl with lemon zest, juice and a ton of fresh herbs. Give it a drizzle of olive oil and maybe even hot honey if you wish.

Any herbs you have? Throw them in! This is an amazing way to use up fresh garden herbs as the summer goes on.

Fresh lemon makes everything taste brighter and better. I grate the zest and then squeeze the juice right into the ricotta. Salt and pepper are must. 

A big drizzle of olive oil is also lovely! Adds a bit of fruity, light flavor.

If you’re feeling it, a drizzle of hot honey also goes a long way. And if you’d like to skip the heat, regular honey works too. Just a touch. A tiny drizzle! 

The combo of the creamy ricotta, citrus, fresh herbs and spicy honey are incredible. So many flavors in such a simple dish.

To make plain grilled bread extra fabulous, here’s what you should do: 

  1. Spray it all over with olive oil or avocado spray. This ensures the entire thing is coated.
  2. Sprinkle it with salt, pepper and garlic powder
  3. Grill until golden, toasty and charred 
  4. Slice into sticks because they are more enjoyable to eat! 

Easy, simple, delicious and addictive. It’s one of those dishes that people will flip over if they come to your house. The thing is, it’s basically NOTHING – ricotta and bread – but it tastes so amazing when served together with these simple upgrades.

Ingredients

  • 16 ounces ricotta cheese
  • 1 tablespoons fresh lemon zest
  • ¼ cup chopped fresh herbs, like basil, dill, chives, parsley, thyme
  • 2 to 3 tablespoons olive oil
  • kosher salt and pepper
  • hot honey, for drizzling
  • 1 loaf sourdough bread, sliced thick
  • olive or avocado oil spray
  • 1 teaspoon garlic powder

Instructions 

  • Preheat the grill to the highest setting.
  • In a large bowl, whisk together the ricotta, lemon zest, juice, herbs, olive oil and a big pinch of salt and pepper.
  • Slice the bread into thick slices and place it on a baking sheet. Spray each side of the slices with the olive oil spray. Sprinkle all over with salt, pepper and the garlic powder.
  • Place the bread on the grill and close the lid. Grill for 2 to 3 minutes and then flip the bread. Grill for 1 to 2 minutes more or until toasty, golden and charred. Remove the bread. I like to slice the bread into strips so it’s easy for dipping, but you can also just cut it in half for dipping!
  • Serve with the ricotta cheese. If desired, drizzle more olive oil and some hot honey on the ricotta. Top with more fresh herbs too!
