Chili Lime Grilled Chicken Thighs with Mango Corn Salsa.
These grilled chili lime chicken thighs will become one of your most versatile meals! Super juicy and flavorful, I like to make a grilled corn mango salsa to serve right on top of mine. Throw in some rice or tortillas for the perfect easy summer dinner!
It’s another version of my favorite meal!
I love a quick and easy chili lime grilled chicken thigh – and even more so when it’s topped with a refreshing and juicy mango corn salsa!
Grilled meat + fresh fruit and veggie salsa. This combo can’t be beat and I’m not even sure what iteration we are on here. I’ve made so many different versions of this, but when I find one that really sticks that we love, I must share.

Plan on it for dinner tonight with some jasmine rice or grilled potatoes. You will LOVE it.
It’s no secret how much I love serving a dish like this. It’s what I make once or twice a week because it’s ridiculously versatile. I can make this for dinner tonight and serve it with said jasmine rice.
Then tomorrow night, I can use the leftovers for tacos with soft and pillowy flour tortillas. Maybe add some crumbled cheese.
There are so many options and if you have both of these prepped in your fridge, I promise it will make your life easier. You will not regret it.
As you know, I’ve already made one recipe with this chili lime chicken – sandwiches with a creamy corn topping! This is another way you can repurpose this same chicken and make it feel fresh and new for dinner. All while serving actual leftovers. Yay!
This is how I make it!
First, you’re going to sprinkle some chicken thighs all over with tajin! Or your favorite chili lime seasoning. Cover them completely. You can add a drizzle of olive oil and let it marinate if you wish. Or plop it right on the grill.
The corn is also going to take a little nap on the grill. Just a quickie. Maybe 15 minutes max, with a rotation every 2 to 3 minutes. I like to get some char on the kernels!
Once the chicken is done, you can hit it with some fresh lime juice. Let it rest before serving.
The corn gets cut off the cob and tossed in a bowl with fresh mango chunks, jalapeno peppers, cilantro, more lime juice and salt.
Also, just grab your chips while you’re at it. Because you will not be able to stop eating this!
It’s such a fabulous mango salsa that you can eat it by the spoonful. Save it for the top of your salads. Have it on taco night. Just make it constantly because it’s wonderful.
I like to slice the chicken thighs and serve the mango salsa right on top! The combination of the warm spiced chicken against the juicy mango salsa is UNREAL. The texture is spot on. And the mix of savory and sweet just can’t be beat!
Chili Lime Grilled Chicken Thighs with Mango Corn Salsa

Grilled Chili Lime Chicken Thighs with Mango Corn Salsa
Ingredients
- 3 ears of corn
- 1 pound boneless, skinless chicken thighs
- 1 tablespoon tajin, or other chili lime seasoning
- 1 ½ cups diced mango
- 1 jalapeno pepper, seeded and diced diced
- ½ cup chopped cilantro
- 2 to 3 tablespoons fresh lime juice
- kosher salt and pepper
- lime wedges, for serving
Instructions
- Preheat the grill to the highest setting.
- Once hot, add the ears of corn on the grill. You’re going to grill them for 10 to 15 minutes, turning every 2 to 3 minutes. When finished, transfer the corn to a plate.
- Season the chicken thighs all over with the tajin. Once the grill is hot, place the chicken on the grates and close the lid. Grill for 6 minutes, then flip the chicken. Grill for 5 or 6 minutes more, or until the internal temperature reaches 165 degrees F. Transfer the chicken to a plate.
- Slice the kernels of corn off the cob. Place them in a large bowl with the mango, jalapenos, cilantro, lime juice and a pinch of salt and pepper. Toss well until the salsa is combined. Taste and add more lime, salt and pepper as needed.
- Slice the chicken and serve the mango salsa on top. Enjoy!
