Cheddar Stuffed Soft Pretzel Bites with Hot Honey Mustard.
These cheddar stuffed soft pretzels are an incredible snack! Melty cheddar is stuffed inside a fluffy soft pretzel then brushed with hot honey. Dip in spicy honey mustard to serve and you’re in heaven!
Doesn’t that just SOUND like October?!
And fall?! The minute I hear about cheddar stuffed hot pretzels I automatically think of Octoberfest. And it’s probably not even right or close to being traditional, but it sounds like it in my brain!
Side bar: whyyyyyy is yeast just so satisfying?!
If you want to make a snack this weekend that your friends and family will go wild over, you have to try these. They are ridiculously satisfying and taste amazing.
I rarely make soft pretzels at home because I always *think* that they take forever. I just have it in my head that they are such a process. Aside from letting the dough rise, they are quite easy and simple. Yes, there are multiple steps because they need to take a bath before they bake, but it’s not difficult.
And the homemade ones are just so so so much better than frozen. I promise! You will not be disappointed.
These can be any size you want them to be. The key is that they are rolled tight so the cheddar mostly stays inside the pretzel. Sure, some will ooze out and yes, those are obviously the best ones. The ones I will fight for.
But the best is taking a big bite and having the cheese right in the center as a surprise!
Especially when it’s brushed with hot honey. OMG. The flavors are incredibly decadent. Football food! Cold weather food! Whatever kind of food you want to call it, you’ll be craving sweatpants after enjoying it.

We are going to dip said soft pretzel right into some hot honey mustard. I crave this stuff.
As a huge mustard freak, I have tried my fair share. A mixture of hot honey + dijon reminds me of the mustard that my grandma used to buy when I was a kid. She’d also put it out as an appetizer with some sourdough pretzels and a hickory farms beef stick! I can still taste it today.
These salty pretzels stuffed with melty, savory cheese then dipped into tangy hot honey mustard? YES.
Cheddar Stuffed Soft Pretzel Bites with Hot Honey Mustard

Cheddar Stuffed Hot Honey Soft Pretzels
Ingredients
- 1 ½ cups warm water
- 1 package active dry yeast, (2 1/4 teaspoons)
- 2 teaspoons honey
- 4 ½ cups all-purpose flour, plus more for your workspace
- 2 teaspoons kosher salt
- 4 tablespoons unsalted butter, melted
- ¼ cups baking soda
- 1 egg lightly beaten
- 8 ounces sharp cheddar, cut into cubes
- flaky salt, for topping
- hot honey, for brushing

- ½ cup hot honey
- ½ cup dijon
- 2 tablespoons mayonnaise
- 1 tablespoon chopped fresh chives
Instructions
- In the bowl of your electric stand mixer fitted with a dough hook, combine the water, honey and yeast and let sit for 5 to 10 minutes until foamy.
- Add in the flour, salt, and butter, then mix with the dough hook until thoroughly combined. Cover with a towel and let rise in a warm place for 1 hour or until doubled in size. Punch the dough down and turn it out onto a lightly floured surface.
- Line two sheet pans with parchment paper.
- Divide the dough into 12 to 16 equal pieces - depending on the size of pretzel balls you want. Form each piece over a chunk of cheddar cheese, pinching the ends of the dough on the bottom side so it rounds out.
- Place the dough balls on the baking sheets. Cover with a towel and let rise in a warm place for about 30 minutes.
- Preheat the oven to 425 degrees F.
- In a large saucepan, bring 2 quarts of water to a low boil. Add the baking soda and lower the heat to a simmer. Put the pretzel rolls into the water - I like to use a slotted spoon for this. Boil for 30 seconds then carefully turn the pretzels over in the liquid. Repeat for another 30 seconds then remove with a slotted spoon to the prepared sheet pans. Repeat with all the dough.
- With a pastry brush, brush each roll of pretzel with the lightly beaten egg, making sure to coat all sides completely. Use a very sharp knife to slice an “x” in the center of each roll, not deflating the dough. Sprinkle with the flaked salt.
- Bake the bites for 12 to 18 minutes. Remove them and brush with the hot honey. Serve with the hot honey mustard.

- Whisk ingredients together until smooth. Sprinkle with the chives and serve!
