This lemony farro salad is packed with juicy olives, tangy feta, crunchy almonds and drizzled with a fabulous lemon shallot dressing. It’s one of those salads that makes your mouth water – it’s so incredibly briney and the texture is fantastic. 

What we have here is a ridiculously simple salad that is absolutely loaded with flavor.

It makes a wonderful side dish, a base for any extra protein or even just a snack to grab and go. It can also be a perfect party dish as long as all of your friends love these ingredients. 

This is 100% my kind of salad. I could olives by the jar full for a snack – and it’s been like that since I was a baby! My mom always talks about how much I loved olives when I first started eating and it blew her mind. Back then, apparently my preference was black olives and while I still love them, now, it’s green all the way. The brinier the better!

Is that a word? Probably not, but it is now.

I love a salad that’s versatile and that is exactly what this one is. You can change up the nuts you use and even the cheese. And like I mentioned before, it works in so many ways.

This is a lunch that I dream of. I enjoy it most as is – just like you see it.

The farro is so chewy! And the feta is creamy. The almonds are crunchy. This dressing is zippy and zingy and garlicky. 

And then, the olives. Well we know how I feel about those.

So a bowl of this? Perfect for me. 

I’ve added shredded rotisserie chicken. Beans too! I love a chickpea, even better if it’s crispy. Oh, I’ve added tuna too!

See, there’s a little something for everyone. 

The olives are so buttery and rich. I love how satisfying they are and when you pair them in this salad with the feta, almonds and farro, it’s very filling. Doesn’t even need anything else!

The dressing is a vinaigrette with lemon and red wine vinegar and it also has garlic and shallots mixed right in. This helps both of them to marinate so they lose some of that spicy bite. It also makes them ten times more delish, if I do say so myself.

A grain bowl like this is my salad preference because you can get a bite of everything on a spoon. And it has crunch!

Ingredients

Instructions 

  • Whisk together the lemon juice, vinegar, honey, dijon, shallot garlic and a big pinch of salt and pepper. Stream in the olive oil while whisking until the dressing is emulsified. This stays great in the fridge for a few days and you can make it ahead of time!
  • Toss the cooked farro in a few tablespoons of the dressing, make sure it’s evenly distributed. Add in the olives, almonds and feta cheese. Drizzle with a bit more of the dressing and toss. Taste and season with salt and pepper as needed.
