This grilled salmon with avocado corn salsa is one of my favorite summer dishes! It’s light and refreshing but very satisfying. Tastes bright, fresh and is super filling. A quick weeknight meal that everyone loves.

This grilled salmon with avocado corn salsa is a major favorite of mine and something I’ve been eating on repeat since June. It’s flavorful, light enough for when it’s so hot out and most importantly, very very filling!
Basically, it’s the best.
We have a few meals that we make over and over again in each season. This is a version of one of them. We make salmon at least once or twice a week – the kids even love it – and it’s a dish that can be enjoyed in multiple ways. So there’s always a little something for everyone and when it’s grilling season…

Grilling is just SO much easier once you do it over and over again. Nothing beats the smoky charred flavor and I swear the cleanup is almost fully eliminated.
The next time you need an easy but show-stopping meal, grab your salmon and throw together a quick and bright salsa!
This salsa is packed with so many wonderful ingredients, but my favorite is the sweet corn. I don’t cook it, I cut the kernels straight off the cob and the crunch is unreal! They tastes so fresh, so sweet and just overall incredible. We love eating it this way.
Of course, there are so many ways you can serve this. I love it just like this because it’s so summery and light. Especially when it’s ridiculously steamy outside and almost too hot to enjoy any food other than watermelon.
But my kids love it with rice, it’s excellent with this parmesan herb orzo or even these garlic butter zucchini noodles!!
Another reason that I love this is because it comes together SO quickly.
Slice the corn right from the cob. Throw it in a bowl with avocado, diced jalapeño, cilantro and a boatload of fresh lime juice. And you’re golden! I could eat this straight out of the bowl or with a bag of chips (obviously).
The salmon is made on the grill in 10ish minutes. Like, super fast!
Throw it on a platter, top it with the salsa and it’s ready. Buttery, flakey, fresh and citrusy. Talk about amazing!

Grilled Salmon with Avocado Sweet Corn Salsa
Ingredients
- 4 skinless salmon filets
- kosher salt and pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 3 ears corn, kernels cut off the cob
- 2 jalapeno peppers, seeded and diced
- ⅓ cup chopped fresh cilantro
- ¼ cup freshly squeezed lime juice
- 2 avocados, chopped
Instructions
- Preheat your grill to the highest setting. Pat the salmon completely dry with a paper towel.
- In a small bowl, stir together a big pinch of salt and pepper with the smoked paprika and garlic powder.
- In a large bowl, combine the corn, peppers, cilantro and lime juice with a big pinch of salt and pepper. Set aside.
- Sprinkle the salmon on both sides with the paprika spice mix. Place the salmon on the grill and grill for 4 minutes, then flip and grill for 3 to 4 minutes more. Transfer the salmon to a plate.
- Add the avocado to the corn salsa and toss well. Taste and season more if needed.
- Serve the salmon with the corn salsa on top. Enjoy!
