This is the second time I have made this fantabulous strawberry coconut cake from Joy the Baker.

It is full of vanilla, strawberry, and coconut deliciousness, and I plan on eating about 6 slices. Then I’ll wash it down with a slice of bacon since Lent is over. Rejoice!

Mr. How Sweet is still pouting because there is coconut on the cake. He would rather give up steak, spend 6 hours locked in a small cell with me while I ‘analyze life’, or watch Gone With The Wind 8 times before eating coconut.

    YUMMMM! I was toasting some coconut tonight for cookies and saw strawberries in the fridge and thought, “I need a coconut strawberry something…” And this looks delicious and perfect! Great job!

    This looks amazing! Joy the Baker’s website (well ok, and yours) really make me want to take up baking as a hobby. But if I may paraphrase you, the desire to at least somewhat fit into my clothes keeps me from too many baking adventures…for now…
