It all begins with peanut butter.
Don’t most things start with peanut butter? Lunches as a kid, first days of school, breakfast every morning…
Maybe it’s just me.
But sometimes, I think my life revolves around peanut butter (and chocolate, of course). Not that I’m complaining.
I used the recipe for whole wheat chocolate peanut butter pancakes, left out the chocolate, and then smothered the pancakes with melted peanut butter and a jam topping.
I love smothering.
Peanut Butter Pancakes
serves 3-4
2 cups whole wheat pastry flour
2 teaspoons baking powder
1 teaspoon salt
2 eggs, well beaten
2 cups milk
2 tablespoons canola oil
1 teaspoon vanilla
1 teaspoon cinnamon
3 tablespoons peanut butter, melted + additional for drizzling
Stir together dry ingredients. Add eggs, milk, vanilla and oil. Stir until dry ingredients are moistened. Stir in peanut butter. Cook on preheated pan until bubbles form and edges start to dry. Flip and cook until lightly browned.
Top with additional melted peanut butter and jelly.
Jelly Topping
1/4 cup strawberries
1/4 cup blueberries
1/4 cup jam of choice
1-2 tablespoons water
1-2 tablespoons maple syrup
In a small saucepan, combine blueberries, strawberries and water over low heat. Mash the berries and add jam, stirring until mixture becomes mostly liquid and warm. Stir in syrup. Drizzle over pancakes.

Oh my word…the shots of the ooey gooey peanut butter are MONEY. I want to stick my tongue under the PB waterfall in the first one.

WOW! and my BF and I thought we were the only folks in the world who melted peanut butter and put it on our pancakes!! I like to make 3 small ones for myself and spread my homemdae raspberry jam in the middle of them and then pour the peanut butter on top! It’s sooo good!!

Yum!! My favoriteeee pancakes are whole-wheat chocolate chip with melted peanut butter on top! But definitely going to have to give this a try next time : )

Ohmygaaa that peanut butter looks like it’s practically dripping onto my computer screen. I almost licked it. Yummm. Never had PB on my pancakes. Not sure why cause I love the stuff! Oh right, because I don’t make pancakes. Well, maybe once a year ;)

I love PB on pancakes!!!!! I hardly ever even use maple syrup anymore b/c PB is so yummy when it gets all melty!! Such a great combo!! :)

All I can say is yum. I LOVE PB&J…in any form. You make the 5 year old staple look so…well…pretty!

Good thing my boyfriend is allergic to peanuts and I cannot have peanut butter in the house… because I would NOT be able to stop eating these!! This sounds amazing!

I was looking for a fun recipe to celebrate National Pancake Day with, and this was a home run! They came out amazzzzing! I had a add a little more flour than called for to make the consistency right, but that was probably b/c I used Skim milk. These were delish. I want to try every single thing on your website. I just love the way you make such fun food combinations. I told my husband to get prepared for some awesome meals/ desserts because I found a secret website ;)

I’m thinking of making these for brunch this weekend, but am wondering if using regular all purpose flour would okay. I have so much of it and already have everything else for this recipe….I’m just feeling lazy and not wanting to go back to the store. Would the texture be off?
