The buffalo chicken obsession continues!
I was sent a boatload of Saucy Mama goodies, and obviously I chose to use their buffalo wing sauce to create a delicious recipe.
You can never go wrong with buffalo sauce!
So buffalo dishes are usually pretty manly, huh?
Well, Mr. How Sweet wasn’t too thrilled about the lettuce replacing a bun, but since I added cheese and peanuts on top, he ate it. It was delicious. Even he thought so. But he’s embarrassed to admit it because “real” men don’t eat meat out of lettuce cups. My rebuttal was that “real” men don’t have 4,321 diecast toy cars. Oh well.
Winner, winner chicken dinner!
Buffalo Chicken Lettuce Cups
serves 4
8 lettuce leaves
4 ounces grilled chicken, shredded
2 tablespoons Saucy Mama wing sauce + more for drizzling
1/4 cup shredded carrots
chopped arugula for garnish
2 tablespoons chopped peanuts
1 ounce crumbled blue cheese
In a bowl, combine chicken, wing sauce and carrots. Mix until combined. Spoon mixture evenly into lettuce cups. Top with chopped arugula, chopped peanuts and crumbled blue cheese.
Drizzled with additional wing sauce if desired.

I would probably use the lime chipotle marinade on chicken or shrimp. I LOVE anything buffalo, and I put it on all sorts of things, so I’d use the buffalo chicken stuff on just about everything. Actually – I can think of a delicious use for almost everything on your list! ;-)

Oh, how I love buffalo sauce. Unfortunately my boyfriend does not shares my feelings :/ I have heard wonderful things about a crockpot buffalo chicken lasagna that I would love to try, but for a dish that would be more of a crowd-pleaser around here, I would like to try using the Lime Chipotle marinade on fish for fish tacos!

I’d combine the cracked pepper with some shrimp, and serve over sticky rice with steamed mixed veggies (I know, I know, they’re veggies… but sauce makes everything better, right?).

I would use the lime chipotle marinade and make port quesadillas with black beans and roasted corn salsa. Yummy!!

OhEmGee…all of those sauces look AMAZING!
I make a southwest chicken salad that we eat on tortillas — it’s chicken chopped and mixed with red peppers, corn, cilantro, and a lime chipotle dressing…obviously the only way to make this any better would be to marinate the chicken in the lime chipotle marinade first!!
Or, because I have a mustard obsession, I might need to use that fab sounding mustard to make a delish honey mustard to brush on chicken or seafood… :)

Oooh I loved cracked pepper anything…i would probably put it on chicken while its cooking than shred it for a simple chinese chicken salad, lettuce, onions, crunchy noodles, sesame seeds, oil and vinegar. Heaven!

Jessica! I would love to have these sauces for meals making chicken breasts formy husband and I would marinate tofu, tempeh and more with the lime chipotle. These are making my mouth water.

sweet onion marinade.. but as a base on pizza… with goat cheese, dried cranberries, walnuts & caramelized onion… topped worth mozzarella.

Buffalo chicken is a must-make for the sauce. I’d try it in my crock-pot. Also, I’m sure some of those dressings would find their way into a salad.

Wow everyone is way more creative then I’m feeling this morning! I’d probably used the crack pepper marinade on the chicken for the chicken, broccoli and couscous my husband requested for his lunches this week instead of just the usual plain chicken he usually likes.

oh my GOODNESS! So many sauces, so little time! I am a huge buffalo chicken fan, but that sweet onion marinade really caught my eye. I am addicted to the Subway sweet onion teriyaki chicken sandwich. With a bottle of Saucy Mama in my hands, I could eat that sandwich as often as I want! YUM!
