Break out the stretchy pants!
I mean, seriously… break them out.
If showing you a picture of melted butter and chocolate doesn’t convince you, I don’t know what will.
I’ve never really been big on bundt cakes. In fact, I didn’t even like them on Friday. Or Saturday morning. But then my mom made a marble bundt cake on Saturday night with chocolate fudge chip frosting and I just about died and went to heaven.
Luckily I didn’t, because that allowed me to make my own bundt cake.
A brownie bundt cake.
I love eating my favorite treats in different forms. It spices things up and keeps dessert fun. I used our favorite brownie recipe, the recipe that I just converted into brownie cupcakes.
Seems I’ve been on another brownie binge!
I ended up making a recipe and a half of the brownies because I honestly was sure if one batch would be big enough for the bundt pan. Good thing I did. Who doesn’t need extra sugar, butter, chocolate and flour?
This cake is a little rich. And by a “little,” I mean there are 6 whole eggs and nearly 3 cups of sugar. Ooops! Guess that’s what happens when you almost double a brownie recipe.
Obviously I had to top it with sprinkles. Life is meaningless without sprinkles.
Just like the cupcakes, the bottom (which yes, is the top before flipping it over) is crunchy and crackly. Such amazing texture with this recipe.
And they are so oooey, gooey, chewy and rich that you only need a skinny slice.
Or a large chunk. Which ever you prefer.
I went with a large chunk. I felt it suited me better than a skinny slice.

Chewy Brownie Bundt Cake
1 1/2 sticks butter
5 squares Baker’s chocolate
2 1/2 cups sugar
6 eggs
2 cups flour
1/4 cup cocoa powder
2 teaspoons vanilla extract
1 cup chocolate chips
Preheat oven to 350.
Melt butter and baking sqaures in a microwave safe bowl. In the mixing bowl, cream melted butter and chocolate mixture. Add in sugar and vanilla and beat until fluffy, about 2-3 minutes. Add in eggs, beating one at a time. Add flour and cocoa powder and stir just until combined. Fold in chocolate chips.
Grease a bundt pan thoroughly with butter. Pour batter in the pan. Bake for about 75 minutes, or until brownie is set. The top with be a bit crunchy and the insides will be fudgey. Top with vanilla glaze and sprinkles.

Well you are the reason I am now needing to log on to Target and edit my wedding registry, for the sole reason of adding a bundt pan! Maybe I should add 3, just in case no one gets the point that this is a drastic necessity. Can’t wait to try them!

I am so glad you did! Honestly, I put one on my wedding registry because my mom used it often, but hadn’t used it until yesterday. I believe it’s one of those things you probably never take the time to buy yourself!

AH sprinkles!!! love that you put them on everything because well, sprinkles make everything better!!! (so I think I am taking one of the better than crack brownies to my show to eat afterwards!!) They are in my freezer because I made so many and I just want one SO BAD!

This looks so good! I’m thinking of making this for my daughter’s 2nd birthday. Hey, she’ll be 2. I’m sure she could care less that her birthday cake has a hole in it. As long as it’s yummy chocolate, she won’t mind a bit.
We can’t get Baker’s Chocolate where I live (Holland). Am I correct in thinking 1 square weighs 1 ounce? So this would be 5 ounces/142 grams?

Well. I used 1.5 cups sugar and 1 1/4 sticks butter, and kept everything else the same. It was a nice chocolate cake, but not like brownies the way I hope it’d be (i.e. moist and chewy). I’ll have to try it again with the full amounts.
On the plus side, our guests’ kids had three slices each. That’s a compliment if I ever saw one.
Hi! This looks delish! Think I could sub unsweetened/bittersweet chocolate for the semisweet? I’m thinking it would cut some of the richness? Or not? I have no idea really. Just looking for some support. :oP Making this, um, TONIGHT, for a baby shower tomorrow because my meringue flopped and this looks pretty foolproof!

I just made this and it was amazing! I used these cute 4″, one cup mini bundt pans, which made about 12. Delicious! :)

I’m sad because I overcooked this. It’s been a while since I’ve used my bundt pan and had forgotten cakes bake faster in it. It’s a little too well done on the outside, but the flavor is nice. I made a chocolate glaze instead of vanilla! This just means I’ll need to bake another and remember to bake only 60-65 minutes! :)
