Triple Layer Chocolate Chip Cookie-Fudge Brownie-Peanut Butter Blondie Bars .
I’m sort of enamored with them. Blinded by love, if you will.
Plus, how am I supposed to think with a mouthful of cookie? I mean brownie. I mean blondie. Err… brookie.
See… confusing right?
Think cookie meets brownie meets blondie meets peanut butter. Scrumptious. The first layer came from my deep dish whole wheat cookies… but, um… is definitely not wheat. Really. It’s chocolate chip cook with a little cocoa twist. Then it just gets better from there. Three words: Lots. Of. Butter.
I think I’m just going to leave this up to you.
Here. Go ahead and try one.
Triple Layer Chocolate Chip-Fudge Brownie-Peanut Butter Blondie Bars
makes one 9 x 13 pan
the chocolate chip layer (taken from my deep dish whole wheat cookies)
1/2 cup butter, softened
3/4 cup brown sugar, loosely packed
1 egg
1 teaspoon vanilla extract
1 1/3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 tablespoon dark cocoa powder (optional)
3/4 cup chocolate chips
Preheat oven to 350 degrees F. Sift flour, baking soda, cocoa and salt together and set aside in a bowl.
Beat butter and sugar together in the bowl of an electric mixer until it’s light and fluffy. Add egg and vanilla and beat until combined. Add in dry ingredients and mix until just combined. Fold in chocolate chips. Spray a 9×13 dish with non-stick spray and begin pressing the dough into the bottom. I found that using the back of a spoon sprayed with non-stick spray helped. It will JUST cover the pan and may seem thin, but it is the right amount for the bars.
the brownie layer (taken from my red velvet brownies)
1/2 cup butter, at room temperature
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all purpose flour
1/4 teaspoon salt
3 tablespoons cocoa powder
2/3 cups chocolate chips (optional)
In the bowl of an electric mixer, beat butter and sugar until fluffy. Add eggs one at a time, then add remaining teaspoon of vanilla. With the mixer on medium speed, add in cocoa, flour and salt, mixing until combined. Fold in chocolate chips. Using a spatula sprayed with non-stick spray, evenly spread brownies on top of chocolate chip mixture.
the blondie layer (adapted from simply recipes)
1/2 cup of butter, melted
1/3 cup peanut butter, melted (I used crunchy, hence the nuts in the pictures)
1 1/3 cups of  brown sugar
1 egg
2 teaspoons of vanilla
1/2 teaspoon baking powder
1/4 teaspoon of baking soda
1 1/2 cups of all-purpose flour
1/2 cup peanut butter morsels
In a large bowl, whisk together sugar, melted butter and peanut butter until smooth. Add in eggs and vanilla. Combine dry ingredients together, and whisk into the batter. Fold in morsels. Spread evenly on top of the brownie layer.
Set the baking dish on top of a cookie sheet and place it in the oven. Bake for 35-40 minutes, or until the top is just set and the middle is slightly soft. I covered the dish with aluminum foil for the last 10 minutes of baking. Let cool completely, then cut and serve!
I like layered things.

Th next party I go to…I am making these!! Who cares what they are called?
They should be called “Seriously Fattening But Who Cares” Bars.
Because who cares how fattening they are if they taste as good as they look.
Love.
oh YUM — those look completely sinful. and thus, amazing, and they need to be in my belly. now.
Get outta town with this! These would never last at my house. Gone in 60. Love it!
This I my next church bake sale contribution right here!
What a mouthful. The title. And the BARS!! Wow, they look sooooo decadent and incredible and amazing. All those layers and flavors. Genius :)
I was so excited I forgot the s after the I. That should be “This is my next church bake sale contribution!”. I promise my English is much better when I’m not imagining how good these bars taste.
Wowzer. Those look amazing!
Holy. Moly. You are my idol Jessica! How about ‘the eighth deadly sin’ or maybe just call them the bomb :) They look insannneee, very tempted to try these little gems out although my hips would most definitely not thank me!
I think these should be call OMG Bars…goodness, they look so delicious…great photos.I have a feeling I will be making these real soon but I hvae to be sure I have someplace to take them…they would be very dangerous to have around the house.
I second that! There’s really no other logical reaction to these bars. WOW.
holy.dangerous. dear lord woman, how am i supposed to wear a swimsuit this summer now?! :)
These look out-of-this-world dangerous!
Decadent- yum! I think you should call them dirty blondes
Hahaha I LOVE that name!
Oh man. Those are just UNFAIR! I was not even close on my guess yesterday (i said a flag cake! haha) – but this is way better ;)
I have made something kind of like this before but always end up burning the top layer…. yours look like they baked really evenly!
I think the key is to cover the top halfway through baking!
Oh no you di’int….
just thinking about eating three different kinds of dough for one recipe makes me tingle inside!
You make me glad I can’t eat some of these things because if I could, I’d probably have gained at least 25 pounds by now. Those look insane.
Oh yum, what a party for the mouth! All these flavors together is a match made in Heaven!
YUM! I figured out what I want for breakfast ;-)
Woah. I don’t even think they need a title. A picture of those goodies say a thousand words and speak for themselves. Yum!!!! :-)
You can call it whatever you want, but I’m calling it delicious! ;-)
woah!!! I read your title about 3 times. These bars are everything that I love combined into one. you rule!!!!!
That’s the sexiest dessert I’ve ever seen on a Tuesday morning… or ever.
Um, CRAZY!!!! How do you come with this deliciousness???? I am in awe. This doesn’t even need the 10,000 add-ins that I normally include in my dessert recipes. No walnuts or chocolate chips could even compete with this triple threat…
It’s cool – layering all the things you love. It’s inspired. And i’m inspired. Thanks for sharing.
Wow… these look absolutely amazing, but I think there’s way too much room for error for a novice cook/baker like me! It would be inevitable that I would mess up at least one of the layers! :P I think I will just drool over yours and have major bakers-envy. ;)
If it’s too much to bake from scratch, I think you could totally do store bought cookie dough, brownie mix, then make the blondies yourself!
Mmmm…now…what kind of ice cream should these be eaten with? Because really, you can’t eat this without ice cream. And fudge sauce. And whipped cream.
I am so disappointed that I didn’t see this when I was craving sweets and needed to bake something ASAP. On the other hand, I am glad I didn’t see this because they would have stood no chance. Really, what else could you want? You are amazing :)
Wooot-woot! …..My guess was pretty darn close! Yummm! Girl, I don’t know how you sleep at night with all these delicious thoughts dancing in your head! :)
ohh my these are definitely a labor of love…
but totally worth it :)
I am soo making these soon!!!! :D
Yikes….this scares me!
These look AMAZING!!!
The middle layer almost looks like blueberry. I think my brain is playing tricks on me trying to call these somewhat ‘Healthy” ha! They look delicious!
Oooh yes… then we can eat more…
I’m back to let you know that PW featured your Grilled Breakfast Pizza from Tasty Kitchen on her blog! Man does that pizza look delicious! :-)
That pizza was SOOOO good Kim! I made it a few weeks ago and now I need it again!
If it tasted half as good as it looks, I’m making it! I printed the recipe this morning! :-)
Oh, dear…
(sigh)
Wow…you might have officially outdone yourself!! I have also been thinking that you should be my employer. Because the way I see it you probably (sometimes) have to make a few batches of things to make sure they come out right…you know adjust things here and there…and you definitely need someone on your payroll who tastes everything and gives you unbaised opinions. I will emailing you my resume shortly. ;)
Would LOVE that!
I so wish I had these at home — I’d have them for breakfast, lunch and dinner today.
These look amazing. It’s like I’ll never have to choose between desserts because this one has everything in it!
I know!
drooling on my keyboard.
Just reading the name of this made my mouth water!
Oh my… you’ve done it again! Awesome recipe Jess!
These look seriously amazing! I wish I were eating one (or five) right now!
Brookie!! You’re funny. What’s not funny is I’m drooling at my desk and now craving a sinfully sweet dessert. At 10 am. ;)
Yes. I will be trying these.
I’m mad at you. You shared this recipe too late. Now I have to actually wait to make these suckers when I could have made them this weekend for our potluck. Like I said. I’m mad at you….
….but I love you too much so I’m over it now. :)
At least you know what to make next time. :)
It’s the dessert for when you can’t decide on just one dessert!
Perfect description!
My co-workers are going to love you and hate you so much when I inevitably bake these but have to get them out of my house immediately.
I love layered things too :)
