Brown Butter Parmesan Chicken Linguine.
Because you know all I have is “OMG! Brown butter! Make it now! I’ve created the best thing on the planet!” Exclamation point exclamation point.
See those little brown specks way up there? Yeah… you may be fooled into thinking they are part of the whole wheat pasta, but um… they are specks of BROWN BUTTER. God rest my soul.
I mean, just what in the world am I supposed to say? That I hope someone embalms me with brown butter when my life is over? That I could probably eat an entire onion if it was caramelized? That I slap myself across the face everytime I remember that I used to hate mushrooms? I could say so much.
Just know that whatever you are thinking about this pasta (well, okay… the absolutely positively wonderful things) is true. Decadent, delicious, flavor pop in your face. A dish for a special occasion or if you have a husband like mine… a dish for weekly lunches. How not fair is that?
I wish I could be my own wife.
Many of you have asked for a compilation of my favorite Valentine’s Day dinners, and all I want to scream is “but don’t you knoooow how indecisive I am?!?” Ugh. Here’s the deal. Wait… am I late on this?
I think that this chicken romano could ensure you an engagement ring. Or whatever the equivalent of that is for you male counterparts out there. Actually I know for sure that it can – it’s happened. Clams casino linguine could earn you a new pair of shoes… or six. There are no words for lobster mac and cheese besides… UM WHAT. It’s lobster mac and cheese. I once made beef bourguignon before I broke the news of my credit card balance to my husband. No joke. So yeah… that works. If you’re not fancy but want to pretend you are this brown sugar butter roasted chicken does the trick! And if you really love someone (again, like yourself), I highly advise you to drop whatever it is that you’re doing at the moment and make caramelized chicken with mushroom sauce and grilled herb bread. Then rejoice.
But if you’re feeling lazy… just make this. No, seriously. Make this.
Brown Butter Parmesan Chicken Linguine
serves 4
1.5-2 pounds boneless, skinless chicken breasts, cut into pieces
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon smoked paprika
1 1/2 tablespoons canola oil
6 tablespoons unsalted butter
1 medium sweet onion, sliced
1 cup sliced mushrooms
4 garlic cloves, minced or pressed
3/4 cup dry white wine
1/2 pound whole wheat pasta (preferably noodles)
2/3 cup freshly grated parmesan cheese + more for topping
fresh chopped parsley for topping
Heat a large skillet oven medium-high heat and add canola oil. Pat chicken dry with a paper towel then toss with salt, pepper and paprika. Add to the skillet and brown on all sides, cooking for about 8-10 minutes total. Remove and set aside in a bowl. Turn heat down to low and add 1/2 tablespoon butter. Add sliced onions with a pinch of salt and stirring occasionally, cook until caramelized – about 15 minutes.
While onions are caramelizing, heat a small saucepan over low heat and add 5 tablespoons of butter. Whisk constantly until butter has brown bits on the bottom, then immediately remove from heat. I usually whisk for about 30 seconds more just to make sure the bits don’t burn. Set aside. At this time also prepare the water for your pasta and cook according to the directions.
After onions have caramelized, set them aside in a bowl. Add the remaining 1/2 tablespoon of butter and add mushrooms. Cook for 5-6 minutes until juicy and caramelized. Place onions back in the skillet, add garlic and cook for 30 seconds until fragrant. Increase the heat to medium and add wine. Let the wine bubble and cook for 2-3 minutes. Add chicken and pasta both to the skillet, tossing multiple times to coat. Turn off heat and stir in grated cheese. Drizzle brown butter (make sure you get the brown bits!) over top, tossing to coat a few more times. Serve with additional cheese and chopped parsley.
Tomorrow… we make dessert. JUST WAIT.

This does sound amazing and ever since I smelled brown butter for the first time I’ve totally been on the same page as you… it is divine!
Credit cards or not your husband is a very lucky man! :) I’m also really gutted that I just thought about your lobster mac and suddenly my sardine on cracker lunch isn’t looking as appealing….
Borwn butter rocks – I agree. Butter itself is amazing but something about browning it really brings out some amazing flavors.
Can’t wait for dessert tomorrow!
Um, yes please! All my favourite things in one dish!
Yuuuum! Brown butter instantly makes everything about 100 times better!!!
What a lovely dish!
It hurts so good.
I wish you could be my wife…
i wish you were my own wife too!
That looks amazing and I can’t wait for dessert.
LOL I love the story on this one! So you’re telling me that we can use cooking meals (especially ones with browned butter) as currency to earn shoes? ;) I’m in!
Yes, it would be great if we could just marry ourselves.
Wait, seriously, I don’t know if I could handle being married to me. My husband is my opposite and he’s always up when I am down and vice versa. I would not do well if I was down and “I” was down, too. I’m sure I’d be divorced before Kenny Chesney and Renee Zellweger or even Kim Kardashian and Chris.
“…embalms me with brown butter when my life is over.” Too funny, Jessica! You sure would smell good!!
Enjoy your Monday!
Brown butter = LOVE. This is divine.
I must say, your Valentine’s Day “round-up” is the best I’ve read, yet! :) And this pasta? Oh my lands.
Thank you for sneaking some white wine in there. Looks fantastic!
this sounds absolutely amazing and divine. something I’d gobble up in 2 minutes!! yum yum!
Brown butter says it all!
I swear if you poured brown butter on an old dirty gym sock I’d eat it….
Ditto.
Honey, I am all about the brown butter, made some brown butter oatmeal cookies this weekend with my sister for her boyfriend for valentine’s day. He is going to freak! My dad was super jealous, because the cookies were leaving and he could only eat just 5 of them! Anyway, I feel you on that Chicken Romano and any kind of roasted, buttery, caramelized thing is the way to my heart! Hopefully somebody will make it for me, hell, who am I kidding? I will just make it my own damn self! haha!
MANGIA!!!
If you’re gonna go all out, you should have used the whole stick of butter. Can you imagine the feeling of remorse the last 2 tablespoons of butter felt when you decided not to use them? Were they not good enough? Were they not loved? What did the butter ever do to you??? :-) This recipe look amazing, and I can’t wait to try it.
I am so unhip. I haven’t never had brown butter. Oh I’ve bookmarked 100 recipes containing it and have never made it a priority. I swear I will soon. I feel like if I don’t I’ll be pelted with pats of cold butter.
Ugh you NEED to have it!
This looks beyonnnnd amazing! Love me some brown butter!
This looks too good! You are my favorite ever. Ever ever. No lie.
The feeling is quite mutual! :)
What do I say? Spread the brown butter love!!
Brown butter is so amazing – I’ve only had it in cookies so I can’t imagine what it does to pasta! Genius
Excuse me for stating the obvious, but… BROWN BUTTER!!!!!!!!!!!!!!!!!!!
This looks absolutely delicious!!!
“I wish I could be my own wife.” hahahaaa I think I choked on my oatmeal when I read that. You have an incredible way with words. :)
People keep asking what I’m doing for my husband for Valentine’s Day – I think I just found it!
I really wish I didn’t shop and plan my week already :( This is going on next weeks menu for sure!
haha I love your indecisiveness, makes me feel like I’m not alone in the world :) I mean really, how is someone supposed to choose THE best dish to make for valentine’s day when there are sooo many options?!
I know y
Sorry about the trigger finger!
I know you love your browned butter…this looks delish and like a perfect dinner idea!
If my husband wasn’t trying to convince me to see Twilight with him at the $3 movie theater tomorrow (I’m not even kidding unfortunately), I’d be all about making this. Instead, I’m trying to figure out a dinner to punish him for dragging me to a 9:10pm movie on a TUESDAY!
OH my WoRd!! This looks yummy delicious! I may be making this for my husband tomorrow ( read: making it for myself!)
Definitely going to make this! But for Valentine’s day I am actually making your caramelized chicken with jalapeno cream.
Ooh excellent choice!
Your love for brown butter never ceases to crack me up. I love that you love it as much as you do – a true testament to how delicious it must be!
Holy Heaven!!!!!!!!! Was that enough exclamation points? I think not !!!!!!!! I want this ever so badly. :)
What is it about Valentine’s Day that just makes you want pasta? I just want pasta, pasta and more pasta!
But normally, I’m all about a marinara sauce with it. Whether it’s chicken parmesan, or lasagna, spaghetti, etc…
I really like your browned butter sauce with pasta. It was only a matter of time…. ;)
Bring on the desserts!!!
Who wants to start a petition to give brown butter its very own group on the food pyramid?
I’m game.
My hubby and I are cooking together tomorrow instead of going out and this looks like a good choice!!
This sounds fantastic…..but I don’t care for wine. What would you recommend using in its place?
Chicken stock is fine!
I was all ready to make a heart shaped pizza, margharita style, and now you throw in this pasta… hmmm I wonder if I should serve both? with red velvet/cream cheese frosted cupcakes? Holy moley, it is almost worth the busted waistband…
and then to think about lobster mac-n-cheese… decisions, decisions…..
I want a heart shaped pizza!
This dish looks wonderful!!!! The photos look great!!
It’s snowing here in Kansas City today, so I just want to curl up with a big bowl of this! Yum!
