Quick + Easy No Bake Oatmeal Peanut Butter Bites.
I love today.
It’s Monday, but it’s really Tuesday and even though it feels like Monday and smells like Monday and tastes like Monday, it’s really Tuesday. So perfect.
Let’s do this every week.
I also made you a snack. A snackity-snack, if you will.
And guess what? I can’t stop eating it. You’re probably expecting me to be like OMG! I’m so obsessed with this! and guess what? I totally am.
OMG. I am so obsessed with this.
Soooo I wanted to make my oatmeal peanut butter snack squares for my husband… and as I started gathering ingredients I realized that I had no flour. Zero. None. No whole wheat, no all-purpose, not a drop. Not a sprinkle. Which meant I had to get creative, but it couldn’t be *too* creative since he just wanted some “normal” food. Sometimes he just wants spaghetti and meatballs.
He rarely gets it. Because I’m always shoving something new in his face, something much too “foodie” for his liking. I decided it was time to be nice.
Two things were instantly out: first, coconut. Even though he likes the flavor (read: coconut rum), it’s the texture he can’t stand. That was fine… I wasn’t really in the mood for a peanut butter coconut ball. Second – no dates. I actually love dates on their own, but looooooooathe them in granola bar and ball recipes. No people – they do not taste like cookie dough. Or chocolate. Or s’mores topped with peanut butter topped with fudge. No. They taste like freaking dates, because that’s what they are. !!!!! In case you don’t quite get it yet, I looooooooathe them.
It took a few test runs, but I developed the chewy-but-not-too-sticky consistency that I wanted with the majority of the ingredients I was going to use anyway from the other bars and boom. Instant peanut butter balls. I don’t know if we can call them energy balls but that’s what I say because I think I know everything. And they are so much better when rolled in crushed almonds or peanuts. I mean, so much. We actually ended up fighting over them… like when I went to grab some before a workout and noticed they were GONE. Like totally missing. He took them to work and I threw a fit.
Now, I just make a big double batch on Sunday (rolled in peanuts for him, almonds for me) and keep them in separate containers labeled “touch my balls and you’re dead.”
Quick + Easy No Bake Oatmeal Peanut Butter Bites
Ingredients
- 1 cup old-fashioned rolled oats
- 1/4 cup ground flaxseed
- 1/4 cup sliced almonds, chopped
- 2 tablespoons chia seeds
- 1/8 teaspoon cinnamon
- a pinch of salt
- 1/4 cup + 2 tablespoons creamy peanut butter, melted and slightly cooled
- 1/4 cup + 1 tablespoon honey
- 1/4 teaspoon vanilla extract
- 2 tablespoons mini chocolate chips
- 1/4 cup ground peanuts or ground almonds, to roll the balls in
Instructions
- Combine oats, almonds, flaxseed, chia seeds, salt and cinnamon in a large bowl and stir.
- Melt peanut butter and allow it to cool slightly (I melted mine in the microwave for about 30 seconds, then stirred), then stir in honey and vanilla extract until it’s combined. Once peanut butter has cooled a bit, pour it over the oat mixture and mix well with a spoon then bring together with your hands. Once mixture is sticking together, fold in chocolate chips.
- Roll dough into golf-ball sized (or slightly smaller) balls, then roll in ground peanuts or ground almonds. These can be eaten at room temp but we really like them stored in the fridge!

One last thing – my ice cream obsession led me to toss a tsp of dried ginger into Peach Ice Cream made with swirls of my peach butter and your carmelized roasted peaches chopped up in small pieces….O.M.G. Only sprinkles would have made it better.

I am going to sit down and figure out how many calories/fiber/protein these have in them so I can figure out how many I can eat each and every day!! They look so delicious!!
I’m not a huge date fan either, but I do like the Amazing Plums product. Little bits of plums and they add a little chewy sweet factor. I may try adding them. Raisins would also work. Or just eat them with none of that fruity stuff!!
Charene any luck figuring out the nutritional info? I would love to hear what you learned…hungry in Maine.
Not too sure on the nutritional info, but I know there are lots of calorie counters out there on the web – if you guys put in the exact ingredients you use and divide by the amount of balls you make, you can get an exact number!
I calculated them out.. I didn’t have chia seeds, and I used 2 graham cracker sheets instead of the nuts to roll them in because I didn’t have any nuts on hand (and I had to make these ASAP so I didn’t go to the store) So, the stats will be just a little less than written, but it will be pretty close.. I made 15 balls – cals: 116 /fat: 6 /carbs: 14/(6 sugar) /pro: 3
And they are AWESOME!
I just used the Recipe Tool on MyFitnessPal and if I make them as written, and make 15 servings, I get 128 calories per ball! :) BTW, I was originally born in New Brighton, Jessica! A lot of my family still lives in the Beaver Falls area! :) Love PA, but living in MO! :) (although, I’m married to a die hard Red Wing fan)
Well, I ended up using my small Pampered Chef scoop. I got 24 balls, so that brought the calories down to 80! :) I like being able to have 2 per serving! :)

Just made these with almond butter and they are scrumptious! I also subbed maple syrup for honey and shredded coconut for flax…wonderful recipe and definitely versatile. These are a perfect on the run breakfast or snack. Thanks for this post and your hilarious/craving inducing blog!

Wow just made these.. they are amazing! I changed a few things, instead of chocolate chips I used goji berries, prune, carob & white chocolate chips… this is so versatile!

I am so relieved to hear that you don’t like dates in your granola bars/smoothies/whatever, either! I hear date-sweetened and I am OUT. That gritty texture and gummy sweetness… I could go on. I wouldn’t trust myself around these peanut butter bites. I need to find myself a hungry fellow to polish off my leftovers, huh?

Okay, I am allergic to nuts and peanuts but I think I could really make this work. Thankfully, sunflower seed butter exists, and maybe instead of rolling it in almonds I could use crushed graham crackers. Maybe I could also add a half scoop or so of vanilla protein powder (whey, allergic to soy, too!). Ooh, and throw in dried cranberries.
BTW I’m not sure if I’ve ever commented before, but I’ve been reading your blog almost daily for a year and I really appreciate what you do here. :)

My friend returned a Tupperware I lent her FULL of these balls! She saw that I had pinned this recipe on Pinterest and had everything to make them except the chia seeds. She brought them over tonight for dessert and they were delicious!!!! They taste even better with white wine….ha ha! My boyfriend’s going to be so excited when he comes home and finds extra balls in the fridge. *insert immature giggle here* Thanks for the recipe!

I love these!!! I just made a double batch for last weekend. I use wheat germ instead and skip the almonds and cinnamon and the chia seeds. I took mine and divided them into 3 bowls. One i added raisins, one I added dates and these little caramel balls, The ones with the caramel balls went the fastest…they loved them! These make a good snack!
