8 Quick and Easy Meals.
I fully intended on sharing a delicious, bacon-filled recipe with you today, but then I remembered that I didn’t have any bacon.
Fail. And yes, I was way too lazy to go buy any.
So I decided to make something else, but then I was deterred because Mr. How Sweet was running sprints on the treadmill downstairs and was screaming obscenities at himself. It just scarred me for life. And it was loud and annoying. So I curled up on the couch and continued laying around.
In that case, I’m leaving you with a recycled, cop-out post of some of my favorite meals that can be made in 30 minutes or less. And I’m not talking about made in the Rachael-Ray-I-already-have-everything-strategically-sitting-out-on-my-counter-30-minute way. As long as you have looked at the recipe beforehand and have the ingredients at home, 30 minutes should do the trick!
You can add whatever you want on these. Especially bacon. I highly recommend it.
Definitely won’t take you 30 minutes for this one. It’s a favorite meal!
Yes, your pizza may have veggies on it. Please feel free to add them on. But don’t expect me to.
I’ve been making these crab cakes for years – the secret ingredient is sauteed peppers and onions. They always get rave reviews!
Breakfast for dinner is the best. And sometimes totally necessary.
I had to include a salad here because if I didn’t, well… you’d probably judge me. But it is a good one.
Lightened-Up Four Cheese Mac and Cheese
I make these in ramekins for easy portion control. Not that it really matters anyway… we just end up eating 3 or 4 each.
Anytime I make these for myself, Mr. How Sweet ends up eating them all. Not fair.

I am all about ease lately since the kids are back in school! They come home wanting food NOW! Recaps are not a cop out…sometimes we all need a little reminder! Too bad you don’t live closer…I have a secret stash of bacon that I would have gladly made for you! SHHH don’t tell my boys. I am going to use it to bribe them later! I make your pizza pasta once a week!
Well, the cooking part isn’t quick and easy but the prep is for Nacho Chicken Rice Wraps. Mix cut up chicken breasts, one medium jar of picante sauce, two cans cheddar cheese soup, one cup rice and one cup water. Cook in the crockpot all day. Serve on tortillas with sour cream and refried beans. P.S. You take gorgeous pictures of food… I find food ridiculously hard to photograph!

Breakfast for dinner is definitely a favorite. Omelets and scrambles make appearances weekly for dinner around here

Typically something stir-fried. Also one of the easiest since I’m vegetarian and my husband’s not. I can make a veggie stir-fry, a pan of meat (to be mixed later), and everyone’s happy.

Thanks for the meal ideas! My favorite quick and easy meal is probably breakfast for dinner. Cheese omelets make me swoon ;)
quick and easy = brown sugar salmon (you just mix up brown sugar with some pepper and lemon pepper and top a piece of salmon then bake/grill for 20 minutes) plus rice or quinoa and some veggies. dinner in under 30 minutes!

The crab cakes look perfect! The last time I ate a crab cake was about 9 years ago, i was an occassional seafood eating vegetarian, i.e. when I was out Id have appetizers that had crab in them and we were living in a beach town!! in NC and SC. Anyway, i ended up in anaphalactic shock in the hospital ER that nite. WAy to spend a Sat. nite, I tell you. And the thing is, I still want crab cakes!! Ok that was random :)
It was fairly lame last nite but better than sitting at home reading my googlereader :)
You just gave me tons of ideas for tonight. And a reason to buy a waffle iron. Now I can’t stop thinking of fluffy, melt in your mouth waffles. Yum.

I love anything Mexican or breakfast in nature…and loads of meat. Especially meat piled on top of bread with cheese and bbq or tomato sauce…Or I get a rotissere chicken and rip it apart with my bare hands, dragging it around a plate of sauce. Ben finds this endearing, luckily.
That whole scene you just described with the chicken would probably be like pornography for my husband.

My favorite quick and easy meal is the concoction. It’s my word for any recipe that consists of throwing a bunch of stuff together until it tastes good.
There’s the skillet concoction, which generally consists of grain + vegetable + protein + sauce, although the grain often needs to be cooked beforehand (pasta, quinoa, etc).
Then there’s the yogurt concoction, in which you throw toppings on yogurt until foodgasms result. I made one recently with Greek yogurt, agave, vanilla extract, blackberries and gingersnap granola – hell to the yes.
My favorite quick and easy meal is a yogurt mess. I take a 1/2 cup of greek yogurt, add a bit of honey for sweetness, and then chop up any and all fruit that is laying around. Nothing is safe.
I will have to try your mango colada parfait. It looks sooo good and I have been obsessed with mango’s recently.

One of my favorite “quick” meals is whole wheat penne with spinach and cherry tomatoes. I cook the tomatoes until they are bursting and then add them to cooked pasta and throw the spinach on top and stir until spinach wilts. I also sometimes add some cheese on top, either shredded mozzarella or feta. Yum.
Holy Cow… all of this looks so good! I want it all :)
