Blueberry Breakfast Cakes.
Many moons ago (like… in September), I made individual pumpkin spice breakfast cakes. Remember those?
They were good.
I made them multiple days in a row.
I ate many of them.
They satisfied my super sweet teeth.
And they were healthy, because any time you use whole wheat flour it cancels out all butter and sugar in a recipe. My goal is simply to educate you.
Then I forgot about them. How sad.
But I thought about the cakes a few days ago, remembering their fluffiness and how they crumbled when my spoon so perfectly scooped up a bite. And I was able to breath life into a new breakfast cake.
This was made possible by the 4 pints of blueberries I absentmindedly tossed in my cart at the grocery store last week. I don’t really even love blueberries, unless we’re talking pancakes. And I really have no idea how we spend so much money on food.
Don’t you just want to dig in? It’s like a ginormous muffin. But it’s cake!
I highly suggest topping them with a blueberry glaze. Of course. If you haven’t noticed, I’ve been all over the glazes lately.
Yeah. That picture kind of ruined my placemat. Any tips on getting sugar glazes out from in between beads? I’m really not concerned.
This is such a fun breakfast. And for those of you oddballs who don’t like things very sweet, this cake is perfect. Not too sweet at all.
Blueberry Breakfast Cakes
adapted from pumpkin spice breakfast cakes
1/4 cup butter
1/4 cup sugar
1 teaspoon vanilla extract
1/3 cup Greek yogurt
1/3 cup whole wheat pastry flour
1/4 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
3/4 cup fresh blueberries, tossed in flour
Preheat oven to 350.
Cream butter and sugar together until light and fluffy. Add egg and mix until well combined. Add in vanilla and yogurt and stir. Mix dry ingredients together and add to batter, only mixing until just combined. Fold in blueberries.
Spray 2 ramekins with non-stick spray and pour batter into them equally. Bake for 30-35 minutes or until inserted toothpick comes out clean.
1/2 cup of powdered sugar
3/4 teaspoons vanilla extract
1 1/2 tablespoons cup heavy cream
1 tablespoon milk
Add sugar to bowl and stir in heavy cream and vanilla until mixture resembles a thick batter. Add milk (one tablespoon at a time in case you need more), stirring until smooth – about 3-5 full minutes. Mixture may look lumpy at first but just continue to stir and it will come together. Continue to add liquid if needed to get desired consistency. Mash in a handful of blueberries.
I hope you didn’t eat breakfast yet.

Great minds think alike.
I have a half a bag of frozen cranberries that have been sitting in my freezer for awhile. Do you think you could make this with cranberries, or would they be too tart?? Have any other good cranberry recipes?
Love your blog!!
I have never worked with cranberries before! I would make sure they are thawed and then give it a try.
Why settle with a muffin when you can have a cake? Lovely recipe Jessica… Love all those blueberries!
YUM! Sorry you had to sacrifice the placemat!
I would be all over that. Can I have one now, please? :)
Cool recipe! I like the addition of Greek yogurt. And as always, beautiful photos too.

I am always learning something new on this blog! Who knew that whole wheat flour makes everything healthy! I love it! :-)

Ho. Ly. Photos. Seriously.
Homegirl needs to find some little dishes and get this going. I am ALWAYS looking for something that’s easy and portable for the mornings. And by portable I mean I can carry it around with me while I do important things like my hair and makeup.
Love this. Reminds me of a ‘to go’ muffin cake… YUM
Holy crap! Ridiculous..amazing photos!! I totally have a blueberry breakfast bake in the oven right now…It’s buckwheat though, try not to gag. ;)
Thank you on the photos!
And obvi… I forgive you. ;)
What a fun idea! These would be a huge hit with my family.
I used to love blueberry muffins and then I had an unforunate stomach bug one day after eating one and I have never been able to eat them again. How sad because these do look amazing.
That is so sad. But at least they are blueberries and not something completely and totally delicious like strawberries or apples!
Yum!! It reminds me of the giant Costco muffins – they were like a mini cake! I love love love little ramekins. Everything baked in them is just that much cuter. These look delicious.
I love those massive things!
You totally should have invited me over for breakfast.
Time? Distance? Snowstorms? Those are merely details.
LOOOVE how you baked these in ramekins!! I really don’t get to use mine enough.
Next time! ;) And yes, ramekins make eating more fun.
The words.. Breakfast and Cake seem like an Oxymoron ..
But these do look delicious.. That’s definetly a great way to start the day.
I had some leftover blueberries, and was just wondering what to do with them last night…so I was sooooo excited to see this post this morning! They are delicious! I left off the glaze, and they were still awesome. Thanks so much for the healthy(ish) recipe!
Ah! So glad you made them and liked them!
I could seriously be on your site all day and drool over all the amazing things you make : )
These look soooooooooooooooo good! I love blueberries and I love the glaze you made , it sounds amazing!
These look amazing! I could eat cake for breakfast every day!
That crust is calling out my name! In ANYTHING that I eat, I always love and pick the crust first.
I think it would be even better with course sugar on top!
O..M..G! That blueberry drizzle on the side of the ramekin totally has me drooling, looks like I know what i’m making for dinner tonight! kidding (ok, maybe not really haha) Love your blog, it’s dangerous though! : )
I say it works for dinner. :)
Looks like the perfect breakfast to me! I like cake anytime of the day!
I want little individual ramekins like that! those look so freakin good!!!!
I think it’s so funny everyone likes the ramekins – they are so cheap!
Dang it, I already ate breakfast. But there’s always another day! I just need to get rid of this pesky job so I can stay home and make blueberry cakes in the morning. :-)
I agree. :)
These look amazing, clearly. Ok, so maybe you haven’t run across this yet but do they reheat well? Or do you eat them room temp?
I honestly haven’t had to reheat them because I only make 2 at a time (that’s what the recipe makes). But they are super moist and I think they would reheat great. They are delicious hot, warm and at room temp!
Never tried Greek yogurt in a cake. And I loooove Greek yog.!can’t wait to try this and the cashew chicken!
Oh and thanks for the helpful and educational info about wheat flour canceling out the sugar! Lol :) love it
Let me know if you give them a try!
I love your humor and food rules, lovely shot & perfect weekend breakfast.
OMG what an amazing idea. I love it! I want it!
Thanks for your Blueberry Breakfast Cakes recipe! It was very delicious especially when I ate it with a 5-Minute Triple Berry Smoothies. The recipe for the smoothie is http://www.fourgreensteps.com/community/recipes/beverages/-5-minute-triple-berry-smoothies
I want this breakfast cake RIGHT NOW! That blueberry sauce sounds absolutely divine! I’m a huge fan of anything blueberry – too bad their megabucks at the grocery store right now :(
I think you could use frozen ones!
I used frozen and they came out perfectly!!
Yum! Buzzed this recipe for you =) I will have to make it soon!
Woman. You kill me. I need that now.
omg I have been obsessed with blueberries lately thanks for another sinfully delicious recipes, you are amazing!
Gay, that looks delicious! Noms!!!
What is it about blueberries that makes them SO perfect for breakfast? I can NOT wait until it is summer and I can go blueberry picking again!
I meant GAH!!! I swear!!!
I really wish we were neighbors and you made too many and decided to bring some over. I am craving blueberries now
I wish I could too!
Oh and Starbucks stopped selling my fav fat free blueberry muffins with extra goodness on top.
Oh well. Who wants a fat free muffin anyway? Bring on the butter! :)
I’ll happily eat these for breakfast :)
mmmm…nothing is better than baked goods for breakfast! I love me a big muffin! The bigger, the better. However, out of all of your breakfast recipes, I think the cake batter pancakes take the “cake”, hehe (ignore my awful pun). I can’t WAIT to make them and gobble them up! I always check your blog in the morning when I am eating my breakfast and it always perks me up and makes me smile. I don’t understand it when people say things are “too sweet”, or “too rich”. Those superbowl baked chicken nachos are also calling my name Mmm blue cheese and buffalo sauce! :)
absolutely loving these!
These look amazing! Oh, and the cashew chicken too.
