That guacamole looks incredible. I want some.
YUM! I love Mexican night. We had a cute little girl scout come to our door tonight and OF COURSE my husband had to buy 3 boxes. Of course.
YUM! I love your Mexican Fiesta dinner :)
I had a girl scout cookie buffet tonight too! I was at the grocery store today and just as I was leaving I saw a group of girl scouts selling cookies…so of course I bought one of each, except thin mints…I had to buy two!
Waaaa….. wow those photos are awesome. I am craving up some Mexican right about now!
Totally got girl scout cookies too! :) Nothings better than mexican night! :)
My Mexican-food-obsessed husband just saw this and about died. The pictures are gorgeous and it all looks delicious!
Love the Tex-Mex eats – they’re my favorite! Plus you can never go wrong with Girl Scout cookies. The Tagalongs are my favorites! (Although, they’re called Peanut Butter Patties where I live.) :-P
it was a carb-tastic day for you eh?
i walked away from the girl scout cookies, so i could go home and eat my cadbury eggs
OBSESSED with blue corn chips! When I have them, I use them as utensils . . . guac, salsa, refried beans, enchiladas . . . mmmmm!
I like your style.
Oh yum….that looks like one of the most perfect meals ever! We love Mexican!!
Oh girl scouts. I love you and hate you at the same time. This year I got smart and most of my boxes were sent straight overseas to soldiers in Iraq. I only allowed a few boxes to come home. :) I teach third grade. I get asked to buy lots of GS cookies. :)
I’ll do the dishes for left overs!!
Best. Dinner. Ever.
Mmmmm! Mexican nights are the best!
I neeeeed some Girl Scout cookies.
Yum! Everything looks great!
So you had a “light” fat free dinner then, huh?
:)
Looks stellar!!
And I just had a Jessica Day. I cooked 3 recipes, photographed them all, and now I have to blog about them. Omg I am exhausted. And have to work til 3am. My day isn’t even half over!
Me wants go live-live in your world.
Best. Evening. Ever.
Can you please adopt me?
I’ll bake cookies and clean the dishes
your guac looks fabulous!!
This is my kind.of.meal! I’m a tx girl! Looks perfect, especially the guacamole! Love!
I hope you share the recipe for the chicken enchiladas! And the Mexican rice. I love Mexican food!!
Oh my GOD this is literally my dream-team dinner.
ooh I love enchiladas esp the veggie ones yum!
OMG I would totally love to eat this right now.
That whole meal from start to finish looks perfect and has my name all over it! YUM!!! :)
Oooooooh yeahhhhhhhhhh ;) Happy Sunday dinner!
Please come over and make me Mexican food!!!!!!!! Puuuuleeeeeeease!!!
mmm pass the tagalongs please!
AHH! Send me some girl scout cookies!! Can’t get those in France.
Wow what a delicious meal! Love Trader Joe’s and will def have to try their chilies. Girl Scout cookies look so tempting too!
Love this wordless post! ‘Nough said.
yummy!! yummy!! yummy!!!!! this is a MUST recipe!! can’t let the week pass by without trying such a delicious meal :D Thank youuuu
Great looking food! You totally managed to make mexican food look appetizing.. something I fail miserably at every single time I try. Well done!
What a huge dinner. Are you eating leftovers tonight? I love rice with my enchiladas too!
I didn’t know Girl Scouts had dulce de leche cookies. I am leaving now to locate myself a GS to get some of those cookies, yum!
We had people over – there were 6 of us, all big eaters! But there were 4 leftovers for Mr. How Sweet’s lunch. :)
I love how you used the avocado center as a garnish… Great idea!
How do you keep your tortillas from cracking when you roll them? I have this issue everytime and they NEVER look as pretty as yours!!!
My tortillas never crack – I use La Tortilla factory whole wheat! They are moist and soft.
I should add that if you microwave your tortillas for a few seconds and wrap them when warm, that helps prevent cracking too!
wow what a yummy feast!!!
Mmmmmm, really, the Girl Scout Cookies are probably the crown o’ glory for me.
Love, love, lovin’ it!
I believe they pick the tiniest cutest girl scouts and place them outside every store/place I go to. I cannot say no? Especially when their sign displays messages about helping young women’s dreams and futures… totally ok to buy 2-3 boxes every time I see one, right? ;) (plus it’s hard to keep them in the house when I find myself popping a caramel delight each time I pas the freezer…)
the perfect mexican feast, yum.
p.s. thin mints.
everything looks great, quac seems to be the death of my lately…always turns brown:( i need to try the pit thing!
Covering it tightly with plastic wrap also works!
ooooh I LOVE mexican night :) That all looks just delicious!!
Please tell you’d already eaten the box of Somoa’s and that is why they aren’t picture?
ps. my mouth is drooling over that guac…yu-um!
Samoas are my favorites too!
Mmmmm. That sounds perfect! I like to put girl scout cookies in the fridge and eat them cold! Thin mints are the best for this.
Last night for dinner we had egg salad sandwiches with homemade tomato soup and homemade parmesan croutons sprinkled on top! Mmm. Nice Sunday meal :)
Wow…that looks like one fabulous Mexican dinner!
I see you keep the avocado pit in your guacamole (I’m assuming to keep it from turning brown?). Does it work? I have heard that it is a myth…
My favorite way to keep the guacamole nice and green is to press plastic wrap directly onto the surface of the guacamole. It is air that turns the avocado brown (oxidation), and pressing the plastic wrap onto the surface works! I keep guacamole fresh and green for several days this way. Try it!
Well, I think it worked. But I also covered it tightly with saran wrap and only made it 3 hours before it was devoured. :)
Well, gee…you and Mr. How Sweet didn’t give it time to turn brown! It must have been amazing! :-)
does this mean there will be “girl scout cookie bark” and “girl scout cookie cinnamon rolls” in future posts? I sure hope so!
This is my kind of dinner. I love Mexican food and I love sweets!
Yeah yeah yeah, enchiladas. Look yummy. My thought though is this….WHAT ON EARTH ARE DULCE DE LECHE COOKIES????? Our girls scouts don’t sell those!!! I want some. Like now. Not fair :(
