Dark Chocolate Blueberry Muffins.
Did you ever have a diary? I did.
I think I got the idea from the Babysitter’s Club books. You can tell I read many classic novels as a child.
Anyway, this diary of mine. I wrote in it a lot. I’d write in it every single day. And sometimes when I was done writing in my diary, I’d doodle big hearts on the inside cover with a boy’s name in them. David, Doug, Don, Dwight… clearly I liked boys whose names began with the letter D.
One diary was a hot pink and purple squishy plastic. Stereotype city. It had a lock and a key, which I just thought was cool. I stashed the book underneath my mattress and the key somewhere in my desk drawer, which I frequently lost, so my brothers couldn’t find it. It was chock full of top-secret news, like what I really thought about Judy Blume’s Forever.
I don’t have a diary anymore; instead I have this little page on the internet that most people over the age of 60 don’t “get” and an impulsion to take pictures of my food and talk to my computer screen about them.
I don’t tell you when it’s raining or what I wore to school yesterday.
I don’t tell you about the one girl who got caught passing a note about me and my thighs. Hint: it wasn’t nice.
I don’t tell you about how I’m scared to ask my mom if I can shave my legs.
I don’t tell you that my mom, who won’t let me shave, said I looked like Roseanna Barr when I got a perm at age 9.
I don’t tell you that there are days when Mr. How Sweet wishes I’d take a long walk off a short pier.
Well… I may tell you some of that stuff. I tend to overshare.
But I always, always tell you when I make some deliriously good muffins.
And today is one of those days.
Chocolate. Blueberries. Whole wheat. Brown sugar. Sounds like the epitome of health to me. Lots of health here. Lots of reasons to devour them. And feel good about it.
Eat up. And don’t forget the butter.
Dark Chocolate Blueberry Muffins
Ingredients
- 2 cups whole wheat pastry flour, or all-purpose flour, do NOT use regular whole wheat
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 tablespoons dark cocoa powder
- 2/3 cup brown sugar
- 1 teaspoon cinnamon
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 cup butter, melted
- 1 cup milk
- 1 cup blueberries
- 1/4 cup chopped dark chocolate
Instructions
- Preheat oven to 350 degrees. Line a muffin tin with muffin liners.
- In a bowl, combine flour, baking soda, salt, cocoa powder, brown sugar, cinnamon and mix until combined. Using a whisk, stir in the egg, vanilla, melted butter and milk. If the dough still appears too dry, add another tablespoon or 2 of milk. Fold in blueberries and chocolate.
- Using an ice cream scoop, spoon muffins into liners. Bake for 13-16 minutes, or until muffins are cooked through.

And how about when Mother Lovett died, we were cleaning out her house and I came across some of my mom’s old stuff, like diaries and notes, and she ripped them out of my hands! She wouldn’t let me read them… haha!
Mine is probably in between my old mattress and box spring, too! What a scary thought! I bet the people that work at Good Will, Salvation Army, etc., have lots of fun reading these “lost” diaries! Again…just hoping I didn’t use my last name in mine! ;-)
That is so funny about your mom’s diary! Truth is, diaries are very personal and not meant to read by anyone but the writer, but we would all love to read other people’s diaries! :-)
Now, I am off to think about what my mom did with my childhood mattress! Hmmmmm…

I had many diaries, at least two for every school year. I wrote in my diary almost every day. Then one day my Mom found it, read it and killed it for me. Anywho, fabulous muffins!

Ah yes, young love and middle school diaries… such fond memories… I recently stumbled across mine and couldn’t help wondering what foolish little child had written such nonsense about boys and prank calls and boys and movies and such… certainly not moi! Well, at least it helped remind me of what to expect from my almost 13 year old son who has recently discovered girls and spends most evenings on the phone with his “girlfriend”. Sigh. (The muffins look gorgeous and beautiful!! Blueberry and chocolate – YUMM!!!)

Haha!! I had a diary when I was a teenager too, and like you, I thought that having a big lock on it with keys that were frequently lost was super cool. Oh, and I’m glad you never liked a boy named Dwight, because every time I see that name I picture the Dwight on the office. I think you and Mr How Sweet are a much cuter match. :)

Oh my gosh- I totally started my diary because of babysitters club too! I had a little mermaid diary with a lock….top secret. Onto the muffins- blueberries+ chocolate? I love the idea. Funny thing is, I never had a diary when I was younger. Mainly because my sister found EVERYTHING of mine and used it against me. There was no chance taking in that.

Our childhood diaries sound very alike. I haven’t read mine in years but last time I did it was both embarassing (for the 12 year old me) and insanely funny.

What an interesting combination. They are gorgeous for sure! I used to LOVE the babysitter’s club books and tried to keep a diary because of them too. But I didn’t have the drive or focus to actually write in them. Oh well…

Oh, the Babysitter’s Club…I sure remember those days! And I kept diaries, too…I need to go find them, but I will have to be mentally prepared for the cringe-fest. And then they will have to be burned.

Just curious–why the ice cream scoop? Is that typical for muffins? Do you do the same thing for cupcakes?

It doesn’t have to be an ice cream scoop, but I always suggest using something (like a 1/3 cup measure) that will make each muffin/cupcake equal so they are uniform in size. I usually use my ice cream scoop or a measuring cup!

These muffins look awesome…my mom just sent me a recipe for a loaf that’s very similar to this recipe — I think I might have to give it a try this weekend. Whole wheat flour, blueberries & dark chocolate ~ sounds like a health food to me.

I have to say it again…GORGEOUS photos. The light colors work perfectly with the dark muffins. It’s not easy to make a chocolate muffin look good, but you did it!! I would have never thought to make a dark chocolate muffin….great idea!
