Balsamic Blueberry Crisp.

It seems that in the last four weeks, Mr. How Sweet has aged light years. I mean, he’s always been old, but now he’s really old. He is no longer finding it appropriate for me to watch my mindless trash after 10pm while I lay in our fluffy bed. He wants to fall asleep in silence and darkness. Ummm… hello? When else am I supposed to see Kim Kardashian get cellulite lasered off her rear or salivate over a pork cupcake on Cupcake Wars? Please enlighten me.
He also watches the news. Only the news. Except for the 43 hours he spent re-watching the Royal Wedding this weekend. And that’s probably only because he went to grade school with the Queen. He is enjoying cutting the grass. Like, three times a week. I assume this is satisfying since it gets him out of the house and away from my nagging, but I can’t be sure. Next thing I know he will be reading newspapers instead of the internet and trimming his nose hairs over the sink.
But back to this whole TV thing. I’ve tried the argument that I’m a tortured writer. I use the word “writer” loosely, since anything lengthy of mine worth reading requires me to make a strong commitment to five glasses of wine. I’m afraid of the dark. Sometimes I think I’m haunted. I get spooked by shadows. I fall into mini depressions when I finish reading a good book. Me = tortured.
Yeah, so that hasn’t worked so well. He doesn’t care how tortured I am. He thinks that his sleep carries more value over my mind-numbing relaxation techniques. Fair? No.
So instead of counting sheep while I lay in the dark frightened out of my skin, I’m counting food. It dawned on me two weeks ago that I am inconceivably, foolishly, passionately in love with food. The way it smells, tastes, feels and looks… I adore it. This probably isn’t late breaking news since I’ve been tormenting you with post after post for 17 months, but it was news to me. An epiphany. An enlightenment. A revelation.
I lie in bed and choose an ingredient and think of every combination possible. Blueberries. How many dishes can I make from blueberries? Pancakes. Muffins. Cookies. Pasta? Maybe. Salad? Yuck. Scones. Ice cream. Sandwiches? Possibly. Crisp? Definitely. Would blueberries taste good with steak? What about pork? How about rice? Quinoa? Now I’m hungry. I wish I had blueberry pie in the fridge. I need to get on the treadmill. For the rest of my life.
I birthed this blueberry crisp from my new nighttime habit. Weird, I know. I’m also in love with my blueberry balsamic vinegar, so I suggest you get some and drink it with a straw. It is that good. The regular stuff will work too, but blueberry is the cat’s meow. And I don’t even like cats.
Balsamic Blueberry Crisp
serves 2-4
2 cups of blueberries
3 tablespoons of sugar
1/2 tablespoon flour
1/8 teaspoon salt
2/3 cup oats
2/3 cup loosely packed brown sugar
1/4 cup flour
1/2 teaspoon cinnamon
1/2 stick softened butter
1 teaspoon vanilla extract
1/2 cup + 1 tablespoon balsamic vinegar
1-2 tablespoons coarse sugar for crunch
vanilla ice cream
Preheat oven to 375 degrees F.
In a bowl, mix blueberries with sugar, 1/2 tablespoon of flour and salt. Spray a baking dish with non-stick spray and add blueberries. I used a 4 1/2 x 6 1/2 baking dish because I wanted a thick blueberry layer, but an 8 x would work fine too. Once the blueberries are added, toss them with 1 tablespoon of balsamic vinegar. The blueberry flavor works the best but original should be fine too.
In a bowl, combine oats, brown sugar, flour and cinnamon. Add softened butter and vanilla, and mix thoroughly with a fork and your hands until it becomes clumped together. Layer crumble mixture on top of blueberries and sprinkle coarse sugar on top. Bake for 25-30 minutes.
While crisp is baking, add vinegar to a small saucepan and heat over lo heat until it reduces by half – about 5-6 minutes. Set aside to cool, the mixture should thicken at this time. When blueberry crisp is finished, serve with vanilla ice cream and drizzle balsamic reduction on top.
I also suggest you use a larger plate, or even perhaps this thing I’ve never heard of – a bowl – for your crisp. Someone has a bit of laundry to do. Blueberry stains, what?

my husband watched three hours of the royal wedding as well, glad i’m not the only one. we don’t have a tv in the bedroom but husband always falls asleep in the living room with the tv on and then stumbles to bed after 2 a.m. i think we just need to install a tv on our ceiling and life would be good.

We don’t have a tv in the bedroom. In my husband’s opinion, the bedroom is not a place for TV…but for sleeping, intimate exercise and reading.
I loved having a TV in my old bedroom…because I too was scared to fall asleep in the dark. But now I have my handsome hubby beside me (and a 9mm) so I feel completely safe.
Actually…now that I think about it we only have one TV…and we dont have cable.
THat makes me a bit depressed.

I feel tortured right now. This looks unbelievable. I’ve never tried blueberries with balsamic, but I love it with strawberries, so why not?!
I have the same problem as you do! My boyfriend is an old man (38…soo old!) and claims he is not able to sleep in a room that has ANY light, at all. This is a problem seeing as I have a massive fear of the dark. As soon as those lights go off, my thoughts go wild! This has pretty much been a micro-war in our relationship since day one.
Any suggestions?
I don’t know why I do it, but I sometimes think it’ll only be a nap and 5 hours later, I’m waking up discombobulated, sleep drunk, and annoyed that I have to go to work in a few hours. Not a smart move…EVER. Watching TV and riding in a car are my sleep inducing activities.
I’ve been wondering what to do with my extra two quarts of blueberries I got on sale– thanks for this wonderful idea!
P.S. I do the exact same thing when I’m trying to think of new recipes as I lay in bed! They almost always involve peanut butter. :)
Oh, yes. I would have used a bowl for that. Totally not unheard of. I would have used a BIG bowl. Yum.

I’m married, just passed the 4 year mark, but my husband and i work opposite hours so he sleeps during the day when i’m working. Though he can sleep through anything, anywhere.
I can’t. I need the perfect sleep environment. But that depends on my mood. :)
So truth be told, I sleep with the TV on, it started when I was 15 and I can not break the habit. Husband used to not have a problem with it since he slept like the dead. Mind you that I did use the sleep timer on the TV. Although over time this drove him batty – and now he is an x-husband.
I always use the sleep timer too – I set it for 30 minutes!
I love berry crisps and this looks amazing!! I am totally your husband at night. My husband wants to watch Sports Net and hunting shows in bed at night while I’m trying to sleep and it drives me crazy. I just love seeing a moose get shot right before I fall asleep ~ material for sweet dreams for sure ;-)

Longtime living in sin. My bf claims he needs the tv to truly relax and let go of his day. So we usually watch a few minutes of some movie almost every night. Invariably, he falls right asleep then I’m stuck turning everything off and putting the remotes away so that they don’t crash onto the floor off the bed during the night, which by the way is totally traumatic. So yah, I’m kind of on Mr. How Sweets side on this one. PLUS it’s obviously going to get you coming up with even more amazing recipes than you already do and I’m all for that too. (Oh, and I’m 3 yrs younger than my OLD man but I’d always rather read).

Husband used to need a quiet room to fall asleep in however, I have reformed him and now he can sleep with the television on. He knows that a happy satisfied wife keeps him a happy husband :)

Watching tv together in bed is our nightly ritual. I’m living in sin (lol) and now I have him hooked on all MY shows, and I love it! haha but I have to be the last one with the remote in hand, he always goes to sleep and leaves it on blaring, but I turn it down real low and tuck the remote under my pillow so it doesn’t fall off. OCD, a little?

When we got married, Jeremy said he didn’t want a TV in the bedroom and we’re still glad we don’t have one. That being said, I can fall asleep on the couch with the TV on, apparently, with no problem at all. =)

This recipe is genius though! I love the complexity that balsamic vinegar gives dishes. I’ve never seen this blueberry variety… I bet that’s awesome with cheese…

lol @ your last comment… all I could think of towards the end of the pics was omg the possible stains! eeek!! Looks gorgeous though. I’m not a blueberry fan but hubs would totally love it. If it were apples I’d be totally on board though ;) As for the tv bit – no tv in the bedroom. We have one and it’s in the living room. However I did once have a bf who would set the timer on his bedroom tv to turn off when he had already fallen asleep so I’d lay there annoyed listening to freaking wrestling and other nonsense he loved at the time (oh I’m sure you get it). I love how your mind works at night though – I need to find a good time of day to start doing brainstorming. Gotta get back in the groove!

As for the TV, I can totally relate. I can’t even watch the Daily Show after 9pm – it stresses me out to much, which really irks my husband. I need mindless trash, and sleeping in a dark / quiet room sounds terrible. We’ve been married for two happy years, and I’m pretty sure it’s all thanks to night lights and Bon Iver at sleepy time. :)
A tv without a sleep timer is just rude.
I just cannot fall asleep in silence, my thoughts run rampant like little kids in an ADD supermall. “Is the toaster on? Wait, do I even have a toaster? …All of a sudden I’m hungry…for toast…” and so on and so forth.

Sadly, my hubby went through the same transformation as Mr. Sweet. This surely has nothing to do with the fact that he is 6 years older than me, but come on!! He doesn’t even really like going out to the movies anymore! AND….he prefers talk radio to actual music in the car!!!!!????? I have to read before i can fall asleep at night and for the longest time, he never cared if the light was on til 1 am but now it is lights out by 10 so I have to read by a book light. (If I had to be up before 5 every morning, I would want lights out early too)
Luckily, I love this man like I love chocolate, maybe even more!!! :)

I hear ya! I love to read before bed too but that light is waaaay too bright for his liking. He can handle the TV more than the light, but would rather have none. Boo.
OMG, I am a trash tv addict….I hate myself for it….I could go for this treat though, then I could feel bad about eating it…glutton for punishment that I am.
My husband has set a strict rule of no laptop in bed (we don’t have cable). He is an old man too (7 years older then me!) haha but mostly he works really hard all day every day and really just wants to have a good sleep. He usually says “come cuddle with me till I fall asleep, then you can do what ever you want” Of course by the time he is asleep I am nodding off too. Its a trick! Don’t fall for it!

I KNOW! I was in Traverse City, Michigan, last summer with my parents on vacation while my husband was deployed, and we wandered into a Fustini’s there and sampled so much olive oil and vinegar that I nearly vomited. And it was worth it!!! I wanted everything, but somehow came home with only the chocolate one. And then, I put it away and it sat in a cabinet for MONTHS because I wanted to save it until my husband came home. Now THAT is willpower.

Balsamic and I have never been friends. I’ve tried SO hard to like it; there are so many delicious-looking recipes that have balsamic vinegar in them, but I just can’t do it.
For a crumble like this, however, I may be willing to give it one more try.
My boyfriend and I don’t even have a TV in our room. Actually, we don’t even have cable. We’re not really television people. He does spend plenty of time on his computer when I’m trying to sleep, which doesn’t usually bother me, but will sometimes result in my sleep-talking. We’ve had full conversations when I’m asleep. And apparently I get really frustrated when he accuses me of being asleep. Sometimes I think I might be crazy.

I gotta admit, we watch TV but not really, more like its on mindlessly in the background while on the computer etc. Also, thinking of food is a great way to fall asleep!! Usually I already plan what I want for breakfast. Last night it was pb+J on toast, and it definitely happened this morning! but sometimes that jsut makes me hungry, and it’ll turn into a before-bed snack.
