Blackberry Cobbler Waffles.
Waffles are totally underrated.
They get a bad rap as pancakes’ not-quite-as-fluffy and not-quite-as-simple ugly cousin, with nooks and crannies just deep enough that the glob of butter won’t melt and a front left quarter that frequently hogs all the syrup.
I mean, really. Waffle irons are kind of a pain. As if I don’t have enough pots, pants, mixers, bowls, lids, quesadilla makers, toasters, platters and other necessary items that I use twice a year, you’re telling me that I need to find a uniquely shaped space, somewhere between my cupcake-shaped cake pan and my never used must-have All Clad asparagus pot, for a 13-pound waffle maker that I might drag out on occasion?
Yes. I am. If only to make these waffles. Go buy one. I’ll take the blame. I listen well. Just try me. You can scream and yell and holler all you want at your screen and I will just… sit here and listen.
I would’ve been positively devastated if I didn’t get that asparagus pot, by the way.
Pancakes were much more accessible and commonplace when I was younger, so when it came time to register for wedding gifts, I was over the moon to spy a waffle iron and add it to the list. I once spent an entire summer burning the skin off each of my fingertips making waffle cones at Bruster’s, but it was totally worth it given the french vanilla aroma that I went to bed smelling of every night. And the banana cream pie ice cream that I used to eat by the bucketful. Back-to-school shopping was a blast that year.
Not only did I envision lots of waffle making, but I had grand plans to make waffle cones and maybe even cheese-soaked sandwiches and whatever else you could use a waffle maker for. Which is basically nothing.
Which is what I’ve used the waffle maker for. Nothing. I’ve made nothing about six times.
When I came across a dying pint of blackberries in our fridge, I decided it was high time to break out the iron. I don’t even know why I buy blackberries. I hate the seeds in my teeth. Seeds in my teeth make me lose.my.mind.
FYI: These waffles aren’t terrible for you. It’s not like I threw together flour and sugar with reckless abandon and dumped a gallon of Haagen Dazs atop. So you can drop the raised eyebrows. Sure, there is something creamy and vanilla beany on top, buuuut who doesn’t eat ice cream on their waffles? Not me.
Blackberry Cobbler Waffles
serves about 4
1 1/2 cups flour (I used whole wheat pastry, all-purpose is fine too!)
1/3 cup rolled oats
2 teaspoons baking powder
1/3 cup brown sugar
1/4 teaspoon salt
1 teaspoon cinnamon
2 eggs
1 teaspoon vanilla extract
1 1/3 cups milk
1/4 cup butter, melted
2 pints fresh blackberries
vanilla ice cream + maple syrup for serving
Preheat your waffle iron and spray it with non-stick spray. (I also sprayed mine before each waffle)
In a bowl, combine flour, oats, baking powder, sugar, salt and cinnamon. Stir in eggs, milk, vanilla and butter, mixing until combined and smooth. Fold in about 1 cup of blackberries. Make waffles per your iron’s directions.
Heat the remaining berries in a saucepan over low heat and mash with a fork until saucy. Serve waffles with warm mashed berries, syrup and vanilla ice cream.
Oh yeah… the title? They totally taste like cobbler. And that’s coming from someone who shoveled in three bowls of cobbler Sunday afternoon. I can’t tell a lie.

I just picked up blackberries yesterday because they looked really good this year. I was going to use them in my homemade yogurt, but now that just seems so bland… Thanks for posting this in time for breakfast, this is definitely what we’re having :)
Your waffle-making resume sounds eerily similar to mine. I’ve used my hugh jass waffle maker 3 times and 2 of them resulted in epic failures. Yeah, now I usually stick to frozen Eggos, but I think I’ll have to make an exception for these. ;-)
That is like a waffle sundae- how yummy! I agree though- we have a waffle maker and I only pull it out like once every few months- I just hate cleaning the darn thing! But for these- it’d be so worth it. Plus, Josh LOVES blackberries.
Umm…hi breakfast. With ice cream! We heart our waffle maker – it’s totally a pain to drag out but sooo worth it. Plus we sort of love that all the butter and syrup pools in those little crannies…more butter and syrup for us!

This looks incredible! (And I know what you mean, the blackberry seeds annoy me to no end). I’m actually more of a waffle person than a pancake person, but the fact that you say it tastes like cobbler makes me want it NOW.

You know waffles are the way to my heart (and stomach)! I feel like every meal deserves an outstanding waffle with it! I think they hit all the texture points necessary for complete satisfaction at a meal…YEP, I LOVE waffles!
Ooooh look at the chunks of blackberries… and of course ice cream is required on top of waffles.
I’m going to be devastated when I leave college and the wonders of a dining hall waffle iron.

i actually like waffles more than pancakes, but you’re right – they’re not as simple. if i have a chance to make them though i’m totally down with that instead of the ‘cakes! and how did you know that i had a big thing of blackberries with nothing to do and nowhere to go? ;)
Seeing these pictures makes me think of the blue cornmeal waffle with blackberry glaze that I had at Mesa in Las Vegas. It was so incredibly delicious.

I think I have the same waffle maker as you! You’re right, a waffle maker is a bit of a pain to haul out (and clean – damn crevices!) but if I had time, I think I’d make waffles every day! Especially if they involve blackberries and ice cream..

There are also chocolate cookies that you can make w/ a waffle iron….a whole lot faster than baking in the oven! Probably the main reason that I love them, because I can have hot cookies in like 5 minutes! hahaha

Give me a waffle over a pancake any day. I actually think they are easier than pancakes. My waffle iron has an indicator light that i can set to my desired darkness. When it goes from red to green it makes a little ticking noise. This is perfect for me because it allows me to cook bacon and waffles at the same time without forgetting or burning either one. I can’t ever seem to do that with pancakes. There is no little “tick” noise that lets me know when the pancakes are done!

Bruster’s! The best ice cream in the WORLD! I first had Bruster’s outside Pittsburgh, back in the 90s, and I’m thrilled that they’re in Virgina now. Sadly, they’re nowhere near me (but that’s probably a good thing).

I’m so envious of your waffle aroma. I worked at a cafe making breakfasts and went home with hair/skin/clothes smelling of bacon. I still can’t stand bacon, as a result!

I know, I know. I actually still like bacon in sweet things, like Vosges Mo’s Bacon bar, but the smell of it cooking makes me feel sick. I promise I like other things you love though :

I like waffles so much more than pancakes, but I think part of the reason is because they aren’t as simple? Whenever my mom would make them for me she would go all out with toppings and most memories of pancakes are just pretty plain :P Needless to say when I moved out and couldn’t bring the waffle maker with me I was pretty heartbroken.
And a dying pint of blackberries?! They never last long enough to even come close to dying in my fridge :P I might need to pick some up just for this though!

honestly, the main thing holding me back from making waffles all the time is cleaning the waffle iron. seriously it’s so annoying.

Niiiice! I do the same thing with blackberries, and then they sit there, staring at me, daring me to use them. These are a gorgeous way to use them up! I’d totally go for the ice cream, too.
Of course I forgot to register for a waffle iron when I got married. So it looks like I’ll just have to have ice cream and berries for breakfast instead, but only because you said it was acceptable.
I used to have a waffle iron. I packed and moved it with me about 6 different times before I realized I hadn’t used it in years and it was time to “goodwill” it. Naturally, I now feel that I cannot bear another day without homemade waffles. Sigh.
