Savory Roasted Red Pepper + Parm Snack Bread.
There are the days when crisp, juicy apples and creamy peanut butter do the trick. Ahhh… the classic. Sprinkled with cinnamon, things get even more exciting. And that whole shebang makes you feel good too. Lots o’ energy. Winning.
I had my fair share of banana boats as a kiddo – which was simply a slice of bread slathered in peanut butter, a banana placed in the middle, and the entire thing skewered together with skinny pretzel sticks. Oh baby.
I want to be a kid again. Ugh.
Sometimes my brain wants pita chips and some sort of dip. Dip choice is significant, since things like hummus, spinach dip (vegetables what?) and anything containing or closely resembling cheese somehow sort of… disappears. In minutes? Whatever. I’m looking at you pub cheese.
Cookies… good snack. Brownies… better snack. Ice cream…. bestest snack. Chocolate fudge swirls and cookie dough pieces picked OUT of ice cream… most amazingest snack ever.
People (me) that leave cartons of picked over ice cream in the freezer… annoying snack eaters.
And there are also times when you are on your third chocolate chip covered peanut butter spoon during your 58th viewing of Friends with Benefits. Because, you know…Â THAT is going to make you look like Mila Kunis from the waist down. And like, why can’t she just be my BFF for life?
Like everything else that goes on in my wacky head, I get bored with snacks. I want variety but taste. Satiety but energy. Flavor but ease. You know what? I’m super complicated. It’s annoying. What a pain.
For weeks I’ve been digesting the idea of a savory quick bread, and while my first choice was goat cheese, my local grocery store decided to revert back to the Stone Age and STOP CARRYING IT. What? Or else they are just hiding it from me. So parmesan it was. Actually, that may have been an even better idea. And roasted red peppers, since they are totally that one thing I can eat over and over and over and also classified as a vegetable. Vegetable bread! That’s what we’re eating here.
It’s easy, fairly quick and delicious when toasted and spread with hummus.
Say hello, savory quick bread.
Savory Roasted Red Pepper + Parm Snack Bread
makes one 9×5 loaf
2 cups whole wheat pastry flour
1 cup all purpose flour
2 teaspoons baking soda
1/4 cup granulated sugar
1 teaspoon salt
1/2 teaspoon pepper
1/3 cup + 2 tablespoons extra virgin olive oil
2/3 cup lowfat milk
3 large eggs
1 1/2 cups freshly grated parmesan cheese
1 large roasted red pepper, chopped
Preheat oven to 375 degrees F. Coat a loaf pan liberally with nonstick spray. Â In a large bowl, combine flours, salt, pepper, sugar and baking soda, whisking to combine. Fold in parmesan cheese.
Measure out 2/3 cup of milk, then lightly beat in eggs. Add olive oil and milk/eggs to the flour mixture, using a large spoon to mix. Add in roasted red peppers and mix until fully combined. Batter will be pretty thick, but should be wet. If needed, add in an additional tablespoon of olive oil or milk. Spoon batter into loaf pan evenly. Bake for 32-35 minutes, or until bread is set and top is golden. Let cool for 30 minutes before cutting.

LOVE this! i agree, roasted red peppers are definitely a veggie i can eat over and over again. i’m now craving roasted red pepper hummus spread all over this bread at 7am as i eat my oatmeal. blah!

This looks so good! Perfect for a brunch! I did something similar in jumbo muffin form and with bacon not too long ago. We served it with a salad for a lighter dinner. I love savory quick breads like this. So good!

Awesome idea! I think the only quick breads I’ve ever made are banana bread and carrot cake loaf, but this one sounds intriguing! Oh, and the banana boat thing? How come I’ve NEVER heard of this before?! I need to try one out to see what I was missing in my kiddo years!
Pita chips and dip ARE my weakness. And did I maybe eat apples and peanut butter for dinner last night? YES, and it was delicious! But today, this bread might be calling my name, it looks super yum, especially with some dip slathered on top.

OMG- I SO want this for breakfast right now! I have everything I need to make this, but will have to sub. white cake flour for the whole wheat. I think I will spread some goat cheese on it, since my store luckily still carries it and I have a log in my fridge! ;-)

OMG! I was sold at Parmesan. Anything with Parmesan in it has my name written all over it. I am pretty sure that Mila Kunis and I are totally bff’s…she just doesn’t know it yet. Haha I single handedly blame your blog for me gaining 10 pounds…and I am not complaining one bit!
First of all, is it eccentric of me to melt a little dish of peanut butter until it’s practically boiling and then burn my tongue off as I dip slices of bananas in it? I do get strange looks. But yeah, all of your snack choices are really good, I would say and I’m not really sure how I’ve missed out on the banana boats all my life.
Secondly, my grocery store also seems to be suffering a cheese shortage. No smoked cheddar, goat cheese, fresh mozzarella… NOTHING. I have to make a billion mile journey to a good grocery store time the craving hits. Not cool.
I’m a total picker when it comes to ice cream. I will dig to find all the peanut butter swirls and leave the carton damaged and lonely with only boring vanilla ice cream left for the next snacking victim to find :)

Quick breads are awesome! I tend to only make sweet ones, but this definitely convinces me to try some savory. Hummus on bread that is not pita is a new one to me though, but it looks divine :)

The bread looks and sounds delicious, but it was the the banana boats that made me smile. My mother used to give my sister and I similar banana boats, only instead of pretzels, our bananas were slathered in peanut butter and mayonnaise. Sounds weird, but we ate them.
This savory bread looks great! Last week, I made focaccia with onions and mushrooms and I considered it a vegetable bread too… Just like the government considering pizza a vegetable. LOL! This bread can serve as a meal on its own.
As far as the goat cheese goes…they probably moved it. I work in the specialty cheese shop at our local supermarket and we move stuff around constantly. It makes people very angry.
