Sticky Thai-Style Chicken Wings.
Friday… thank goodness you’re here.
And the only reason I’m saying that is because I had an almost actual heart attack last night while watching Grey’s Anatomy, another show I’m not so invested in until the season finale rolls around, and really, I think I almost died. I mean, I’m serious. I had phantom pain. Or something. I just kept talking to my husband like they were people in the universe, like this was true life non-MTV division, and just completely and utterly like… losing my mind. I mean… oh.mah.gah. I have heart palpitations just thinking about it. And all he could say to comfort me was that “they should just bring Izzie back, because you know she saved that stupid deer once so I’m sure she could save everyone here.” Whatever. I’m not throwing stones.
Needless to say I had a straight up meltdown and felt anxiety all day leading up to the episode and cannot stop considering this one minor detail: the life I need to get. Also, I sort of feel like I could do all sorts of surgeries on myself in the wilderness now if needed. Because I’m not a doctor but I watch them on TV.
And then I couldn’t even sleep a wink.
But now that you’ve clicked that big black “X” in the corner because I’m thoroughly ridiculous, pathetic and disillusioned, let’s discuss chicken wings that can be made in one skillet and one skillet only. They definitely rank up there on that list of foods that are a boatload of work to eat for a super small result, and I’ll be the first to admit that they are last on my list of snacks – even after multiple adult beverages are consumed – for the mess factor and the tiny yield.
BUT.
These… these…
In my world, anything thai flavored is fantabulously fantastic and to say we went to town on these wings would be a crazy understatement. And then after that, someone I know dipped about a thousand pretzels in the remaining skillet sauce. Why couldn’t Grey’s be that awesome?
Sticky Thai Chicken Wings
Ingredients
- 2.5 pounds chicken wings
- 2-3 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup sweet chili sauce
- 1/4 cup rice vinegar
- 1/4 cup lite canned coconut milk
- 3 tablespoons brown sugar
- 3 garlic cloves, pressed or finely minced
- 1 tablespoon creamy peanut butter
- 1 teaspoon-sized knob of ginger, grated
- 1 lime, juiced
- 1/2 tablespoon soy sauce
- 1/4 cup chopped peanuts
- 1/2 cup fresh cilantro
- 4 green onions sliced
Instructions
- Preheat oven to 375 degrees F. Pat chicken wings completely dry then season with salt and pepper. Combine chili sauce, vinegar, coconut milk, sugar, garlic, ginger, peanut butter, soy sauce and lime juice, mixing with a fork.
- Heat a large oven-safe skillet over medium-high heat and add olive oil. Add chicken wings and sear, about 2-3 minutes per side. Remove wings and set on a plate, then reduce heat to medium-low. Add chili sauce mixture and bring to boil. Let simmer for 1-2 minutes, whisking constantly.
- Add wings back into the sauce, tossing to coat. Place skillet in the oven and bake for 25-30 minutes. Remove and spoon the sauce over top of the wings, then garnish with peanuts, cilantro and onions.

I’m still here, and I read every single word! I haven’t seen last night’s GA yet. I recorded it and plan to watch it this weekend. Now I’m scared…you are making me wonder if I should even watch it! It’s funny-I was hooked on that show for years, but the story line in recent years has left me uninterested. I think I have watched it maybe 3 times this season. That said, for some reason I recorded the finale, so I guess I’m still somewhat invested! :-)

I do love me some Grey’s — and was shocked at some of their decision making for the season finale. I don’t like how every season they end on such a HUGE cliffhanger like that. Every. single. season.

I watched the first 7 minutes of Grey’s that was posted online but they’ve not showed the full show here in the UK yet. I was having anxiety attacks watching it and wanted to scream for her to shut it just like Cristina did. I’m dying to see it now!
My husband wouldn’t like me making these wings for the exact reason you state before the recipe starts….too little food for such a laborious result. It would probably taste just as nice if I did it with thighs or drumsticks, non?

It was an awful episode, but the wings look and sound amazing.
You know, I’ve never watched Grey’s Anatomy before and my boyfriend and I were just about to start watching it on Netflix. However! Having heard a lot about it lately, I don’t think I’m too keen on getting attached to a bunch of people and then… THAT… happening.
On another, more-cooking note, I love Thai-tasting food as well, but I’m very against eating chicken that still has bones in it. I know. Chickens have bones. I just don’t like my teeth rubbing up against them. I’m going to try this recipe out with some boneless meat. Because that will make my teeth happy.

OMG – Grey’s Anatomy!!! Can’t they just end one season without some humongous catastrophe??? Any why Lexi??? And why didn’t Hunt answer his phone earlier? Why doesn’t anyone’s cell phone work? Where are they?Gaaaah! It’s like torure waiting until September to see what happens. And they never actually show you what happens, they just fast forward to the end of summer vacation. Maybe they won’t now that they aren’t students anymore.

ha ha ^^^ totally agree with Larissa’s comment. That’s what I kept thinking the whole time. I’ve been a loyal watcher since the beginning, and I’m pretty sure I’ve never missed an episode, but I’m not sure I can take one more dramatic near-drowing, accidental ice cicle stabbing, serial killer in the hospital, random bomb going off, plane crash episode. Enough already!
Ha! I totally agree too. Even when Cristina said it during the show, I was like um, yeah. This needs to stop.

Grey’s Anatomy has been quite the addiction for me lately…I’m so far behind that I’m watching the previous seasons on Netflix, so I haven’t seen any of the newer episodes (for this reason, I forced myself to skip over some of your post just in case it gave away details). All I know is I’m so wrapped around the show that I could swear Meredith, Izze and Christina are my bbfe’s. Your chicken looks freaking amazing. I want to eat it in front of Grey’s Anatomy. :)
The pretzels in the remaining sauce is kinda genius…and by “kinda,” I mean “I-absolutely-would’ve-been-right-there-doing-the-same.”
I’ve watched a couple of Grey’s episodes, but it wasn’t something I ever really got in to. It’s probably a good thing because season finales just KILL me! I can’t handle the torture of waiting months for closure, it must be my type A personality.

I’m glad I’m not the only one who was in disbelief last night. I kept telling my fiance “Maybe it’s just one of those stupid dream episodes and someone will wake up at the beginning of next season and everything will be fine.” I don’t know if I’ve ever yelled at my TV so much. And just like Heather, we totally discussed everything in details last night and my fiance (who is not typically a fan) had a dream we went to rescue them. I think I need to make him these wings to help block it from his memory.

Ah, Greys. For me they jumped the shark a while back once Katherine Heigl’s semi-dead husband kept coming back. But these chicken wings are DEFINITELY something I can get behind. Delicious looking recipe!

I recently discovered every episode on Amazon Prime and have been wasting my life away watching it over again from the beginning. It used to be like ten times better!
Hahaha oh man, he was totally being facetious. He absolutely HATES Izzie. In fact, he used to watched Grey’s until she operated on the deer. He’s never watched another episode since after that ridiculousness.
