Broiled Feta with Caramelized Cinnamon Pears.
Let me tell you a little secret.
I like to eat all of the cheese.
Like all of the cheese⦠everywhere. All the cheeses. All the time.
And the only thing better than all the cheeses all the time is when the cheese is golden and bubbly and melty and even burnt. I used to LIVE for Stouffer’s mac and cheese. Yes, the stuff that is totally microwavable and could be made in five minutes or whatever. The reason? About 75% of the time, since microwaves are whacked and can’t ever cook something evenly, a full quarter of the Stouffer’s mac and cheese would get super brown and rich and sometimes even crunchy. Occasionally I’d make it just to eat off the top layer⦠the browned and crisp cheese that could never really be replicated, ever.
And okay, duh, of course Mother Lovett’s mac and cheese was the best, mainly because she covered the top in bacon (and you wonder where I get it from?), but it was really hard to duplicate and beat that stuff in the orange box. I haven’t had it in years and I STILL remember.
That’s why we’re making broiled and bubbly feta today.
It might not be anything like microwaved mac and cheese, but it is sort of like heaven.
The feta is baked for a few minutes so it gets all soft, then broiled and topped with sweet and caramely pears, honey and toasted pecans. Um… WHAT?
I’m, like, 99% sure that this is going to be my go-to holiday appetizer for the next two months. Please invite me somewhere.
Oh! And it can be our snack that we share for my dad’s birthday. Yep yep, today is his birthday and even though I don’t think he likes feta, pears or anything caramelized, and I don’t know if he’d ever ingest something containing warm fruit and melty cheese together, it sort of makes sense because like he has always said, he hasn’t had a real birthday for 30 years because I was born the day before and since then, well⦠it’s been all about me. Can’t we just say that I was his birthday present? Is that fair? It might be.Ā But he is pretty much the best dad ever so I’ll throw in some cookies just in case.
Broiled Feta with Caramelized Cinnamon Pears
Ingredients
- 2 (8-ounce) blocks of feta cheese
- 2 teaspoons olive oil
- 1 large pear, very thinly sliced
- 1 tablespoon unsalted butter
- 1 tablespoon brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup pecans, chopped
- 3-4 tablespoons honey
Instructions
- Preheat oven to 400 degrees.
- Heat a large skillet over medium-low heat and add butter. Stir in pear slices, salt, cinnamon and brown sugar, tossing well to coat. Cook for 8-10 minutes until pears are super caramely and soft. In a separate small skillet, add pecans and toast over low heat for about 5 minutes, just until fragrant. Set aside.
- Cut both blocks of feta in half and place in a baking dish or pie plate. Brush with olive oil. Bake for 10 minutes, then turn your oven to broil and broil on high for 3-4 minutes. My plate was on the second highest oven rack, so not as close to the broiler as can be, but almost. Check after 1-2 minutes, and once the cheese is golden and bubbly on top, remove it.
- Cover the feta with the pears (and any sauce/juice in the pan), the pecans and the honey. Serve immediately with pita chips, crackers, fruit or vegetables.

One question: what kind of feta did you use? I’m in Australia, and the delis here usually have greek feta and danish feta, and from your photos it LOOKS greek, but I just wanted to check!!

I totally feel ( or felt 15 years ago) the same way about Stouffer’s Mac and cheese! (I always thought i was alone in my weirdness.) I would purposely cook it a little too long just to scrape the burnt parts. Ahh, childhood memories. I’ve actually never tried broiled feta though, and it’s one of my favorite cheeses. I will definitely be copying you and taking this to some holiday parties!!

Hey Jess, now we have even more in common, because today is my Daddy-o’s birthday too! He is 81 and still kickin’ it hard as a theater critic and amateur golfer in Palm Springs. He would love this, so I might make it when I go out today to celebrate with him and the stepmother. This would work great with brie and firm goat cheese too, yes? If you grill it, you could also use haloumi another great Greek cheese.

Omg. These look delicious. Over here in Aus at some fish and chip shops they sell beer battered deep fried feta. So bad but so good. I have a feeling you would appreciate them.

Dude. Burnt cheese is the best! I was rummaging through my friends kitchen one time because we may or may not have had the munchies, and I ran across a block of…you guessed it…burnt cheese! Like, her mom BOUGHT a block of the stuff from the grocery store! Like, it looked burnt and bubbly and delicious on all sides and of course we couldn’t touch it because her mom was using it for some sort of cocktail party she was having later that week. Ugh…to this day one of my biggest regrets in life is not stealing and devouring that dad blame block of cheese!
