Milk Chocolate Mousse with Coconut Whipped Cream.
I’d like to talk about embarrassing things in life.
This has all come about because my husband just threw 7000 songs on to my computer and well, I can’t get over my ancient albums and how I’m now blasting Aaliyah’s One in Million every single chance I get. No really. Every single chance.
I mean, it’s one thing to be addicted to the TLC, Backstreet Boys and Kenny Loggins Pandora stations (semi eclectic taste?), but it’s an entirely different one to actually own all of the albums on now practically extinct CDs. Wait. What’s a CD? Will my future kids even know what one is? Probably not. My first one was Alanis Morrisette, by the way. What was yours?
Other gems I’ve rediscovered include but are not limited to the Waiting To Exhale soundtrack and Gloria Estefan. In addition to this, I nearly died when we were in the car on Sunday and a Melissa Ethridge song came on the OLDIES STATION. And I knew all the words.
I should have been born in 1955. I know.
The good news is that if you were born around that time, we would SO get along. Call me.
In other car related embarrassments, sometimes I talk to myself in the car. Yes. Like straight up turn off the music and talk. Discuss things with my own brain. Then I happen to drive by someone and I freak out, thinking that they KNOW that I’m talking to myself when in reality, they probably just think that I’m singing along to the radio. Which is kinda sorta embarrassing too, but whatever. But then when I’m mid-convo (with myself, mind you) I start to think ‘what if my phone just randomly called someone and they hear everything I’m saying?’ So then I have to obsessively check my phone, which I can’t, because it’s somewhere on the floor in order to stop myself from texting and driving. Are these (hashtag) first world problems? These are (hashtag) first world problems.
On the far-too-humiliating-things-to-admit-out-loud scale, I’m fairly thrilled that Magic Mike is now on HBO. Not for the obvious reasons but because… I kinda sorta maybe like the actual movie. As a whole.
Speaking of holes, I’m gonna go crawl into one and die now.
My last embarrassing fact of the day: I will fight you to the death over my thoughts on milk chocolate being a million times better than dark chocolate. It just IS. I love it so much. Sure, I force myself to eat dark chocolate when I “try to be healthy” or when I need to “justify the antioxidants” or when I “want to be cool” but let’s be serious: it’s nothing compared to milk chocolate. Which isn’t even real chocolate, right? That’s what you’re going to tell me next. What does that make me? Immature? Unsophisticated? The owner of an unrefined palette?
I don’t really care. It’s just what I like.
Oh but don’t get me wrong – if I’m dying for chocolate and my only option is dark, I’m obviously going to grab it because I have the sweetest teeth ever. I will sacrifice my taste buds all in the name for dessert. As long as it’s GOOD chocolate. But otherwise: milk all the way. Forever and ever.
My goal for the rest of 2013 is to stop being embarrassed about things. So I’m not embarrassed at all to tell you that I ate one of those obnoxiously large portions of chocolate mousse in one sitting. This chocolate mousse that I made with coconut milk instead of cream, then topped with coconut whipped cream.
It may have been one of the best nights of my life.
Milk Chocolate Mousse with Coconut Whipped Cream
Ingredients
- 8 ounces high-quality milk chocolate, chopped
- 2 tablespoons unsalted butter
- 2 tablespoons water
- 2 large egg yolks
- 1 tablespoons sugar
- 2 tablespoons water
coconut whipped cream
- 2 cans full-fat coconut milk, cold (refrigerated overnight)
- 1 tablespoon powdered sugar
Instructions
- Combine chocolate, water and butter in a microwave safe bowl. Microwave on medium heat for 30 seconds, stir, then microwave for 30 seconds again. Stir constantly until all chocolate is melted and the mixture is smooth. Set aside to cool for 10 minutes.
- While the chocolate is cooling, take one can of coconut milk out of the fridge. Open the can and discard the liquid, then scoop the firm coconut meat into the bowl of your electric mixer. Beat on medium-high speed until completely whipped and thick. Set the bowl in the fridge.
- Add egg yolks, sugar and remaining water to a saucepan over medium heat. Whisk constantly until sugar is dissolved, mixture is opaque and light yellow and has thickened and can coat the back of a spoon. Remove from heat and stir in melted chocolate mixture. Place saucepan in a bowl of ice water and whisk constantly until chocolate is cooled.
- Remove whipped cream from the fridge and fold it into the chocolate mixture. Once whipped cream is completely folded in, evenly pour mousse into either two or four glasses. Refrigerate for 4 hours.
- A few minutes before serving, remove the other can of coconut milk from the fridge and whip the cream just as you did earlier. Once whipped, add in powdered sugar and beat just until the sugar is incorporated. Top mousse with the whipped cream and extra chocolate shavings if desired.

Coconut whipped cream seriously makes everything better. Am I right? This looks like heaven. Also, never been a fan of dark chocolate over milk chocolate. I mean, seriously? Hello, bluebell milk chocolate ice cream basically started my addiction, then came Reese’s PB Cups and the rest is history. First albums…spice girls, backstreet boys, n’sync, brandi, selena, mariah carey, celine dion, and odd balls like jude cole, sade, and elton john. I just love them all! My first cd was No Doubt – can’t remember what album, but i’ll never forget my dad letting me buy it. also, i totally agree about milk chocolate, and people look at me like i’m crazy but i’m sorry it’s just the best. I buy the Trader Joe’s blue milk chocolate bars with hazelnuts by the dozen and scarf them at my desk (not while listening to Aalyiah – although i wish)

if you don’t use the coconut milk i think you have to use heavy cream – not sure if actual milk will work!

1. I am ALWAYS paranoid that my phone has accidentally called someone and that the person can hear what I’m saying. I’m usually afraid that the person will hear me talking shit about that, not that they’ll hear me singing ha.

I was just reading this with my husband reading over my shoulder(he secretly loves you too)… I said “OMG, she does what I do” (talk to herself in the car), and my husband laughed and said ‘you do what?’. I then had to admit I have full on conversations with myself when I am alone in the car, sometimes rehearsing what to say to my boss, sometimes carrying out conversations with what I think a parent in my class will say to me and my response back, etc. I told him I even practise conversations between the two of us (me and my husband, not YOU and me), when he has ticked me off and I need to tell him! The secret is out, and I am glad I am not alone! BTW, making the mousse tomorrow, and will buy 20 of your cookbooks when they come out!

Alanis was my 1st cd too! And to continue with the sharing of embarrassing stories I just got married a week ago and we checked into our suite the night of our wedding and someone had left Alanis in the CD player. So we sang loudly to you ought a know while drinking champagne until 3am…not the most romantic song choice but a classic nonetheless!
First one? Goo Goo Dolls (Dizzy Up The Girl). Yup. And seriously, I love the pandora stations, but I too have dug up my old CDs! BSB on repeat. And chocolate and coconut? Totally the best.
Yeah, I wonder about my kids and CDs too. Stamps too. But I could go into a world of “will they think I’m so dumb if I told them I think that ___ is still cool/in style?” bc the answer is yes… we’re in for a world of hurt when we actually have kids!

I have a semi-embarassing collection of CDs/songs on my hard drive as well, but usually I just say “oh, they’re for my workout mixes, I need peppy music” even though sometimes I listen to Britney Spears and Nsync in my car, when I’m nowhere near the gym…

I made this, and it was amazing! I substituted a cup of heavy whipping cream in the mousse instead of the coconut meat, and turned out great. I made some when I visited my parents, and my dad asked me to make a second batch before I left!
Was eager to make this, but ended up not having time. The cans of coconut milk have been in the fridge for a couple of weeks now- will that make a difference?
I don’t have access to canned coconut milk so I’m going to make my own from coconut flour. But now I don’t know which part of the mixture is needed. Should I keep the coconut flour after I strain it through a cloth? Or will the coconut milk (only the liquid part) be what is needed in this recipe?
hmmm i don’t know anything about making your own coconut milk from coconut flour… the thing is to make the whipped cream, you need the cream/meat of the coconut milk. the can separates into the coconut water and the cream – you use the cream. so the liquid part definitely wouldn’t work… but i’m not sure if the flour part would? have you made coconut milk like this before? i’m curious because i’ve never heard of it so i can’t say for sure that it wouldn’t work, you know?

ah, okay! i would definitely try to whip the shreds that remain – but put them in the fridge first like you would with the can of coconut milk and let them get cold. not sure if it will work but i’m really curious, so let me know please. :)
It actually worked!
I put 60 grams coconut flour and a cup of water in a saucepan and stirred constantly until it boiled and then 4 minutes more. I let it cool for about 5 minutes and then transferred it to a blender and blended it for about 2 mins on highest speed. I put it in a kitchen cloth and over a sieve and then just squeezed all the liquid out. I let it cool and then put the liquid into a plastic container and in the fridge over night (about 12 hours). In the morning the coconut water separated from the cream, so i just scooped it out and mixed it on high speed and got whipped cream! (:
I got a really small amount of cream but it was just an experiment to see if it would work.
