Leftover Sweet Potato Casserole, Brie and Bacon Grilled Cheese.
How trashy can we get?
That is the question.
Very trashy is the answer. Who puts potatoes in their grilled cheese sandwich?
Well, me. Apparently.
This is the sort of thing that happens to me when I’m left to my own devices with a giant pan of sweet potato casserole in my fridge. So this is my solution.
Also, it’s like ten million times better if your sweet potatoes have marshmallows or a crunchy, crumbly topping included. Mine had both.
The good news is we’re eating whole grain bread. I mean, right?
Leftover Sweet Potato Casserole, Brie and Bacon Grilled Cheese
Ingredients
- 2 tablespoons unsalted butter softened for spreading
- 4 slices whole grain bread
- 1/3 cup
- leftover sweet potato casserole
- 4 ounces brie cheese
- 4 slices cooked bacon
Instructions
- Heat a large skillet or grilled over medium-low heat.
- To assemble the sandwiches, spread the outsides of each slices with softened butter. On the insides, add a slice or two of brie, the bacon slices, a big spoonful of the sweet potatoes and some more cheese. Top it off with the remaining bread, buttered sides up. Cook the sandwiches until golden brown on both sides. Eat!

This looks like a tempting killer carb overload. If I weren’t so full I would eat this today. Thankfully we don’t have a ton of leftovers!
Confession: Totally did not make sweet potatoes last night. The hubs doesn’t…like…them… I don’t get it.
Confession #2: I’m making sweet potato casserole today, just so I can make this grilled cheese. Literally struggling at what to say right now because I can only think about this sandwich being in my face.
Is there a better thing than carb+carb? I mean, I love the combination of pasta and potatoes… So there’s really nothing awkward about sweet potato grilled cheese. It’s simply delicious (or that’s at least what I imagine it to be).

i did this combo today too! I did my toasties with kale and edam in the mix. it tastes amazing but your picture have sum that up perfectly!
I’m in Canada and we had our Thanksgiving last month… BUT the way I see it, there’s ALWAYS room for more Sweet Potato Casserole and then grilled cheese!

I’m all for the trashed up food today. And I still feel like a sausage–and I haven’t eaten breakfast yet!!! That’s a bad sign.
Ummm can I just say that I made that sweet potato casserole yesterday and it was freaking amazing?!? My whole family loved it. I had to double the recipe and I made two changes: I omitted the flaked coconut and doubled the oats (because I HATE coconut) and I used full-fat coconut milk because that’s what I had on hand. I didn’t get to take any leftovers home, which I think is totally unfair considering I made it. I totally want to make more but I’m out of marshmallows – gah!! Oh well, they’re going on my next grocery shopping list.

Grilled cheese are a vehicle for virtually anything in my books. There is no such thing as too trashy!

I am doing same olds as yesterday too! I like ’em just the way they were, but I am sure in a few days I will want to trash them up or throw them in the trash, but in the name of food I shall do the former!
I am sad. I AM SO SAD. We had Thanksgiving at a restaurant last night (which was the first time EVER, so it was weird and cool at the same time) BUT that means I didn’t get any leftovers. None. Zip. And their gravy was weird. Ugh. What I wouldn’t do for a leftover plate of potatoes, green bean casserole and stuffing (covered in gravy of course) …. MAN!

Putting sweet potatoes in a sandwich is a wonderful idea. I have done several recipes with left over candied sweets. This gives me such good ideas.
