So.
It is just me, or does the new year not really start until the first Monday of said new year? It’s kinda true.
Please join me in forever being a Monday starter and reveling in this first REAL day of the new year… five days late. Indulge me. Don’t let me be a loner.
My resolution this year is the same as last: I don’t want to eat one single thing that I don’t completely #omglove. At least not on purpose.
I want to adore every bite I eat, to flip over each morsel I put in my mouth and keep food the wonderful, super enjoyable, nostalgic and perfect thing that it is in my life right now.
To keep on loving it so much like I do right now, or even more if that’s possible.
Which means I totally might have to cover my broccoli in cheese and use a bit more bacon grease when applicable, but hey. Whatever works.
I am on a serious mission (again) to get out of the boring chicken rut. I went through a good ten months of not wanting anything to do with chicken, aside from the perfect roasted one here and there and maaaaaybe in taco form, and due to that I went back to boring basics since they were easy. Because, of course, if I wasn’t eating, I would just make the easiest thing. Total brat mode.
The other thing is that I’m pretty nutso over this chili garlic combination these days – on meat, fish, vegetables, heck, even on grilled bread with nothing else. I love the spice and the slight sweetness. And! Then combined with the tangy yogurt dipping sauce… which gives it a cool and refreshing kick, I’m just so crazy about it. It lends loads of flavor to whatever foods I’m working with. Always a plus, of course.
I skewered these little bites to do something different and switch it up a bit, to keep the meal fun. Because skewered bites ARE fun! You can definitely just make a regular old chicken breast or thigh in the same manner and rock out the exact flavors though. Whatever floats your boat. The things I must do to entertain myself…
Chili Garlic Chicken Skewers with Yogurt Sauce
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into chunks
- 1 tablespoon olive oil
- 2 tablespoon honey
- 3 tablespoons chili garlic paste
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
- lime wedges for serving
yogurt sauce
- 1 cup plain greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons snipped chives
- 1 tablespoon honey
- 1 lime, juiced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Add the chicken pieces to a baking dish or large resealable plastic bag. In a bowl, whisk together the oil, honey, garlic paste, salt and pepper until combined. Pour it over the chicken and mix until all of the chicken is covered. Place in the fridge and marinate for at least 2 hours or even overnight.
- Soak a few bamboo skewers in water. Skewer 4 to 5 chicken pieces on each skewer. Heat a large skillet (or your grill!) over medium-high heat and add the olive oil (not if using the grill). Add the chicken skewers and cook on each side for 4 to 5 minutes, until cooked through. Serve immediately with the yogurt sauce and extra lime wedges.

- Whisk all ingredients together in a bowl until creamy and combined.

Oh, this looks divine and I definitely know about that chicken rut. I’ll cook use it for weeks on end and then all of a sudden come to a crashing halt, not knowing what to do with it or having gone into chicken overload where i don’t want to touch it for months.

chili-garlic/sambal is always in my fridge.
If you really don’t like broccoli, try bok choy (or broccoli, gasp!) sauteed in your less-flavored oil of choice, a drop of sesame oil, oyster sauce, and sambal.

Would Sriracha and minced garlic work instead of chili garlic paste?
i’m not sure if it would be exactly the same, i personally think the chili garlic sauce has little more sweetness (or something) to it. the sriracha and garlic may work in a pinch though!

It is always the day I have to go back to work that real life starts again. This year was rough since it was Friday. It was so hard to get out of my sweats.
I’m too lazy to put the chicken on skewers and arrange it beautifully like you have, but I’m definitely planning to follow this recipe using chicken thighs!

Made this chicken for dinner tonight–I used boneless chicken thighs and didn’t skewer them but they were fab anyway!! Also, I couldn’t find chili garlic paste in 2 supermarkets so I used regular garlic paste and threw in red pepper flakes- still tasted great! Thanks so much, Jessica!
Made this for dinner tonight! It was SO delicious and will definitely make again! Didn’t have skewers, so just cooked the chicken breast chunks in the skillet. YUM! Served it with oven roasted broccoli and greek rice.
These were delicious! I can’t wait to make these again. And the avocado ranch is amazing….as I was eating it tonight, I was already thinking about adding it to a fried egg sandwich for lunch tomorrow!
