Homemade Coconut Lattes.
I don’t know who I think I am right now.
A pretend barista or something?
Most of my caffeinated orders are things that would make a true barista cry, like extra caramel this and lots of mocha that and one pump of vanilla in absolutely everything I order always and forever.
No really, forever.
Plus, this all started at home with the nutella lattes. Not my fault. Those are my number one favorite, by the way. Doooo it.
These pretty little lattes are a surefire way to start a huge fight between Eddie and me. Yes, you might remember that there was a very long period of time of when I wrote this blog and hated coffee.
I mean, really hated it. But I wanted to like it! I wanted to be cool!
So now I like it. Am I cool? So not even close.
However, I have always loved coffee ice cream and coffee sugar bomb drinks and stuff. I’ve also always loved the scent of coffee brewing, I think because it’s a nostalgic scent from my childhood. Like when my parents would be brewing coffee in the morning before school or something.
Such a feel good scent.
When I say that Eddie despises coffee, I mean he D.E.S.P.I.S.E.S. coffee. Like off the chart loathes. I really think he was banking on me leaving coffee in the dust after all those attempts at loving it.
But then I started to enjoy it. And then I had a baby who (still) nevereverevereverevereverever sleeps everever and actually found myself needing it. I hate that, but it’s true. I need the caffeine! I never wanted to be that person and now I’m totally that person.
So Eddie just begs me not to make a cup of coffee when he’s standing in the kitchen. That’s how much he dislikes the scent. This past summer when we went on vacation, I thought he was going to have an absolute meltdown in the car when my mom and I both grabbed coffees and trapped him in the car oven.
And I determined that he has such a horrible distaste for it (and the scent!) because he’s worked in a corporate office setting for twenty years now and that just screams bottom burnt coffee pots. Am I right?
I feel his pain. That exact terrible scent is theeee worst.
Coconut lattes. Not with coconut milk (though you totally can use coconut milk!) but with some homemade coconut syrup. Oooooh eeeeeh ahhhhh.
This coconut syrup is my new dreamboat lover.
Almost two years ago (how?!) I shared four of my favorite coffee syrups but coconut didn’t make the cut. Now that I have a solid flavor recipe that I enjoy, it’s at the top of my list. You just have to be careful because with one tablespoon you can go from coconut coffee to what tastes like you maybe poured half a cup of Malibu rum into your coffee.
Which isn’t always a terrible thing, but you know what I mean.
That tropical coconutty flavor? You want JUST enough so it’s light coconut with a hint of vanilla and coffee.
Plus steamed milk and foam and then toasted coconut and coconut sugar annnnnd maybe some of these chocolate covered coconut flakes I found.
I’m calling it my winter drink of choice and you should too!
Homemade Coconut Lattes
- 1/2 cup coconut sugar
- 1/4 cup coconut milk
- 1/4 cup water
- 1/2 teaspoon coconut extract
to make one coconut latte
- 1 shot espresso
- 1 to 2 tablespoons coconut syrup
- 4 to 6 ounces steamed milk with foam
- coconut sugar for sprinkling
- toasted coconut for topping
- To make the coconut syrup, combine the water, coconut milk and coconut sugar in a saucepan over medium heat. Whisk constantly until the sugar dissolves and bring the mixture to a bubble. Turn off the heat and allow to cool completely. Transfer to a jar and store in the fridge.
- To make the latte, brew one (or two!) shots of espresso. Whisk in 1 to 2 tablespoons of the coconut syrup (totally depends on how sweet you’d like it, how much coconut flavor you want) and pour in the steamed milk. Cover with a sprinkling of coconut sugar and toasted coconut.

This sounds delicious and likely to give me a tropical summer feeling during these cold days!
I am SO making these…and I NEVER make any coffee drinks beyond black coffee at home!
girl, i wish i liked PLAIN black coffee!
Like Bounty coffee! Where are those gorgeous mugs from?
crate and barrel! http://www.crateandbarrel.com/welcome-white-mug/s445382
I’ve always been a coffee lover (hello, I grew up in RI the home of coffee milk – basically like chocolate milk except using coffee syrup – which exists NO WHERE ELSE, except in a recipe on my blog) but I NEVER liked coconut… until now. and now I’m obsessed. and only slightly convinced my love developed BECAUSE of Malibu rum <- so pathetic. I'm totally making that syrup and using it in my normal coffee. LOVE.
not pathetic, that is how my husband started liking coconut flavor too! (he still can’t stand the texture though.)
…..looks good, probably tastes really good, but too much work for me when I need my caffeine
I’ll leave it to the Pro’s….can you send me one?
virtual coffee drive thru here!
Ok, I seriously need to get on this recipe. And those Nutella lattes I’ve been eyeing for a while too. It just so happens I have one of those babies who neverevereverever sleeps either!
how’d we get so lucky!
I understand this is totally unsolicited… I’ve followed this blog for years and adore you as a “virtual friend” so just wanted to share a book that I found truly helpful. And wish you more sleep. :)
These look amaaaaaazing. I got a Nespresso for Christmas and I am making lattes every morning now. So obsessed. On weekdays its just been boring plain espresso with just a little steamed whole milk foam. This is happening tomorrow for a Friday treat!
the nespresso is my lifeline. so great, right?!
hahaha “wanted to be cool”! You kill me. I love hipster-style coffee AND sugar packed lattes! Both are great and both belong in my body. Definitely trying this!
Perfect timing! I’ve been on a coconut kick lately and just got a nespresso machine for Christmas.
Also, which of the coffee pods is your fave? My brother and boyfriend destroyed most of the sample pack and now I’m confused by all the fancy descriptions. How does a coffee taste round?!
so for everyday, i tend to do coffee over espresso. naturally, i like the flavored ones – I have a vertuoline, so the caramelizo, vanilizo and the swiss chocolate (it was limited at christmas) are what i’m loving right now!
Oh these look so good!
Those look yummy :) OMG the burnt office coffee is the worst :( Seriously, how lazy is the person who takes the last cup and leaves some in there and the pot on!!
Ha! eddie says for real.
This looks dreamy. I love coconut so this looks like the perfect hot drink to have in the evening :)
looks amazing. have to try this
Kisses from http://poshnessary.com ❤
I still have a hard time understanding how anyone doesn’t like coffee? Ha ha. Time to break out the espresso machine I got for Christmas!
Oh my goodness… There are some major coconut lovers in my life that would lose their minds if I put this in front of them. I cannot wait to try these! I’m thinking that coconut syrup would be pretty bonkers in hot chocolate too ;)
I can so relate with you and your husband’s coffee situation! My fiancé HATES the smell of coffee too. So much so that I have to change clothes if I’ve been to Starbucks before I see him. ? He got a little anxious when I put the French press on our registry, and I had to promise to do my coffee making on the porch. ? So yeah, I feel your pain. Haha :)
so glad i’m not alone. eddie prefers summer since iced coffee doesn’t smell as strong.
Had to giggle at the description of how much your husband dislikes coffee. :) I love coconut anything, and coffee anything (and at anytime — I’m one of those people that will drink coffee at 7pm because it tastes good). Will definitely give this a shot. How do you brew your espresso?
right now i’m using my nespresso! obsessed with it.
That is the prettiest drink I have ever seen! After my failed cup of coffee this morning and a broken Keurig, I could definitely use one of these in my life.
first week of january = get that keurig fixed!
I totally feel for your husband. Just the smell of coffee in the car used to be enough to make me car sick, and if we then pulled into a gas station? Game over. Luckily I can handle myself a little better these days.
Kristina does the Internets
i understand this because i sort of had the same feeling when i was pregnant! it passed quickly though.
I got a Nespresso for Christmas and so now I’ll be going through all of your latte recipes…seriously life-changing! lattes for days!
it is THE BEST.
coconut sugar? How do I make that or where do I buy it?
i can find it at my local grocery store these days, a store like whole foods would definitely have it. or you can get it on amazon! http://www.amazon.com/Wholesome-Sweeteners-Organic-Coconut-16-Ounce/dp/B007TGH4CK
but, you can also just use regular white/brown sugar. it will not impact the flavor much. :)
It’s funny because both my husband loved coffee so much, we bought the caraffe (sp?!) coffee pot so the coffee would stay hot throughout the morning on the weekends when we had time to drink more than one cup at home.
After a few weekends, I was like “how did I only get one cup of coffee out of that thing?” and went to my dear hubs and asked what the deal was that he wasn’t sharing all the coffee and what a coffee whore he was when he accused me of the same thing! What the what!
Oh, that would be my then 13 year old daughter who was sneaking cups in between our pours. She’s been a coffee lover since then – nearly 11 years strong now!
I’ll have to show this to her – I think she’ll flip for this :D
oh my gosh! biz that is so funny. so hannah’s been a coffee lover forever then. crazy! p.s. i’m missing you tues/thurs posts!
Aw, you are so sweet to miss me! :D Happy Friday!!
YES – where are these adorable mugs from? ADORABLE!
crate and barrel: http://www.crateandbarrel.com/welcome-white-mug/s445382
Stunning! My husband HATES the smell and taste of coffee, but with this much coconut goodness I MIGHT be able to get him to try this drink. Cheers! :)
These look incredible! Thanks for the recipe!
Yum! I love coconut in the winter. It reminds of me of suntan lotion and instantly gets me out of my winter funk. This sounds divine!
We got a Nespresso machine for Christmas and love it! This recipe will be a perfect match for it
Yes, yes, YES! This is brilliant! My absolute favorite coffee flavor combination is coconut mocha. So…. I will make these lattes, add a shot of chocolate, and mmmm… perfection!
same!! starbucks introduced coconut mocha when i was in college and i’ve NEVER got over it.
You are a latte wizard! This looks and sounds amazing. I must try this (and the Nutella latte) ASAP!
This looks sooooo ridiculously good! Coconut + coffee are a (tropical, delicious) match made in heaven!!
Dear Jessica, Thank you for your excellent recipe “Homemade coconut lattes “. By the way, I wish you could add video in this article but the images were awesome. This coffee looks so charming. Waiting for your reply!

On the milk: 4-6 ounces? Shots? :^}
I’m obsessed with this idea. And the photos are soooo pretty! I’ll be attempting this over the weekend, for sure.
You’re going to make me cry, too. WAAAAANT
These sound SO PERFECT and I didn’t know I needed coconut lattes in my life so badly!!
This latte looks delicious! I’ll have to try it next week!
Yes! This sounds deliciously decadent sweet.

I was literally thinking about your nutella latte TODAY. I don’t have any nutella rn, but I made a brown sugar latte and it was good. I still need a nutella latte, though…and I also need to add this one to the list!
Just made this and it was delicious! So tempted to add a drizzle of chocolate syrup on top…. :)

Do you use the canned coconut milk or the kind in the dairy section?
I must say, I am LOVING all your espresso and coffee concoctions. Got me a Nespresso for Christmas :) Please keep it up!!!!!
what do you mean by 4-6 steamed milk with foam? 4-6 ounces? what is 4-6?
yes ounces! sorry about that.
My mom would absolutely love this recipe! She’s a huge coffee & coconut fan. For the coconut milk, did you use canned coconut milk or the kind you would find in the dairy aisle (i.e. So Delicious)?

Thanks for th awesome recipe! Though, please stop torturing Eddie. A little maturity goes a long way in empathizing toward others. I couldn’t imagine my husband constantly bombarding me with something I hate. Get over yourself and spare the guy. This is a really mean post…right? Not half as mean as you have been to Eddie. Good for thought.
how am i mean to eddie? he asks me not to make coffee when he is standing in the kitchen – so i don’t do that. how is that mean? i make it once he leaves the house – and this post was written when i still had a baby waking up the entire night. :)
