Sweet potato chowder coming in hot! So many of you made this last week so I had to add it to the list. Are we still eating in soup in April? We are now, I guess.

For taco Tuesday, we’re going with this slow cook barbacoa beef. It’s so delicious and you can freeze the leftovers. The pineapple pico is wonderful but of course feel free to serve with your favorite taco toppings right now.

This parmesan crusted chicken salad is an oldie but goodie. It’s super crunchy and like a salad you’d order from a restaurant, which is always my fave.

Breakfast fried rice comes together super fast and is some major comfort food. You can make this a clean-out-the-fridge meal and add whatever you’d like to the rice.

Let’s do a burger night! If you haven’t made the best veggie burger yet, NOW is the time. It’s a bit high maintenance and a perfect project to take on when you have extra time at home. You could serve it with these crispy smashed potatoes too.

Finally, this cacio e pepe pie is an absolutely dream. Serve this with a house salad. It’s satisfying and tastes fantastic.

For breakfast, make a batch of these no bake oatmeal peanut butter bites! They work great as a snack too. For lunches, I want to do a version of these nicoise bagelwiches with green beans!
