Start the week off with something simple and customizable! These crispy baked quesadillas are a dream.

Blackened shrimp kale caesar is next on the list! One of my all time faves. This is a simple meal but one that has SO much flavor. It’s delish.

Next, go with this 30 minute cajun salmon with salted lime butter. I like to serve it with rice and you can add in some citrus avocado salad on the side.

It’s New Years Eve and I’m all about the snacks. A hummus trio, maybe ciabatta bread pizzas. And a cheeseboard, of course!

Since Friday is the start of the new year, I suggest going with this sweet and spicy pulled pork! It’s SO good. You can throw it on a sweet potato, use it on a sandwich, eat it alone – it’s amazing.

Eat some greens next – I love going with this winter crunch salad. There is so much flavor and texture. You can always add some roasted chickpeas or something extra if you wish!

Fire roasted minestrone is up next! A perfect way to load up on veggies and have leftovers from the week ahead.

Breakfast is coming in the form of my winter vanilla bean chia pudding. And lunches? I’m going with my baja grain bowls!
