We’re in full blown summer with some of the most delicious meals this week!
What To Eat This Week
Kick things off this week with my peanut noodles with roasted broccoli! One of our favorite meals EVER. So easy and delicious.
For taco Tuesday, make these grilled corn summer enchiladas. They are so perfect for the season and a great way to get in veggies.
Summer salmon tacos for Wednesday! The corn poblano salsa is to die for and you can use any leftover corn rom Tuesday!
Make a batch of pulled pork with chipotle cherry BBQ sauce. I like to cook this overnight in the slow cooker and leftovers are great, plus you can freeze extra.
Shrimp kale caesar salad is next! This is a simple dish but loaded with flavor.
Finally, end the week with my simple parmesan chicken and lemon arugula. So easy.
For lunches, I’m going with a batch of my summer chicken salad. It’s amazing. And breakfasts, making a batch of peanut butter and jelly breakfast cookies. YUM!
