This spring radish butter is the dreamiest condiment you can make this season. With just two ingredients (okay, and salt and pepper), it’s ridiculously simple but tastes amazing.

Well.
Let me tell you this… you’ll be in heaven!
And not only is this deliciously simple, it’s gorgeous. Hot pink anything = sign me up.
I never really thought I’d be posting a recipe that only consists of radishes and butter, but here we are. Because radishes and butter are pure perfection.
Easy, simple, flavorful perfection.
It’s rich and savory, spicy with a bite. Refreshing and earthy at the same time. Lovely crackers or crostini!
If you want a showstopper app for happy hour, a dinner party or a fun afternoon out, this is perfect. It’s light but hearty. So incredibly satisfying, crunchy and savory at the same time.
If you want an app for kids? This is not it. I mean, maybe an adventurous one. I have one, maybe one and a half of those. But this is definitely more adult friendly. Beautiful, easy, can be prepped ahead of time and definitely requires a more mature palette!
This is how simple it is:
You’re going to finely grate a pound or so of radishes. You can also very finely dice them, but I really like grating them. They are easier to eat and the texture is SO fabulous in the butter. The downside is that they release a bit of moisture.
Next, use a hand mixer or soft spatula to mix some butter until it’s creamy. Here’s the thing: use the GOOD stuff. Like, high quality butter. I like to use Kerrygold because we usually have it on hand. European butter with a higher fat content is great. But whatever you love – use it.
Mix those two together with a big pinch of salt and pepper. Mix mix mix. Just until combined. This doesn’t love to look perfectly creamy or anything. The texture of the radishes will keep that from happening. But you ideally want each smear of butter to be full of radish texture and flavor.
That’s it!
Serve it with some really great crackers or crostini. Veggies like carrots or celery. Even soft baguettes that aren’t toasted work. Ideally though, something that is a neutral classic flavor.
If you want a little more color, a sprinkling of chives or green onions is a beautiful touch too.

Spring Radish Butter
Ingredients
- 6 tablespoons salted butter
- ⅔ to ¾ cup finely grated radishes
- kosher salt and pepper
- crackers or crostini, for serving
Instructions
- Mix the butter in a large bowl, either using a hand mixer or a soft spatula. Mix until creamy. Add in the grated radishes and mix until combined. Add a big pinch of salt and pepper. Stir until combined and the radishes are fully incorporated into the butter. Don’t worry if the butter separates a bit from the radishes - this ideally works as a “” and not a “dip.” You want the mixture to be spreadable on crackers!

I think I used like 4 large radishes. Nowhere near a pound.

I just made this. I can’t tell if I fell for an April fools joke or not. 😅 The butter is tasty but I’m not sure about the ratios and I’m not sure about the radishes. Was I too gullible?
Well this was OK for a few days. I waited for the recipe that was referenced in the post using the rest of the butter but never did find it. Today I threw out the rest of the radish butter as it started to taste off. Bit of a waste of Kerrygold. Oh well.
I made this for Easter. Radish-lovers loved it! Will make again.
