This grilled pepper and prosciutto snack plate is out of this world delicious, so easy to throw together and leaves everyone completely satisfied. It’s such a delicious appetizer or party snack!

A few years ago over Memorial Day weekend, I threw this snack plate together with items I had in my fridge. It was SO well received.

And it really just hit the spot! Sweet and savory combo, melty and cheesy, warm toasty bread – it has everything you want.

I rarely make the same snack plate twice, but there was something special about this one. We couldn’t stop talking or thinking about it, so I made it again.

And then again and again!

When I first started my substack last year, I shared this recipe and since then, tons of you have made it too. I’ve watched you make it for all holidays this entire year – even in the winter!

I’ve taken a few liberties myself, adding peaches to the plate as well as cherries. Peaches are probably my favorite thanks to the texture and flavor, and just how well they complement the burrata and peppers.

But really, you can’t go wrong with anything you’d add to this plate. Pickled veggies, pickled onions, heck – even pickles?! You can throw on a few things that you love and make it work. Because the ingredients are just that.

Simple.

Satisfying.

Easy to work with.

Delicious to almost everyone! 

And serves a crowd.

The pepper idea definitely came from my grilled peppers with burrata, but using the mini sweet peppers made them even better. They are so perfect to begin with, then we add some smoky charred caramelization?

Oh I am so here for it.

I like to use a baguette and slice it, toast it until golden and maybe even rub some garlic on it. But french bread works too and so do crackers! It’s really your own preference when it comes to dipping. 

I will say that there is nothing better than one of these golden crunchy baguettes, sliced and piled high with melty burrata, sweet grilled peppers and salty prosciutto.

Grilled Pepper and Prosciutto Summer Snack Plate

Ingredients

  • 1 large baguette, sliced into rounds
  • kosher salt and pepper
  • olive or avocado oil spray
  • 1 whole garlic clove
  • 1 pound mini sweet peppers
  • 8 to 12 ounces burrata cheese
  • 6 ounces prosciutto
  • chopped fresh basil, for topping
  • balsamic glaze, for topping

Instructions 

  • Preheat your grill to the highest setting. Spray a grill pan with nonstick spray.
  • Slice the baguette into rounds. Spray the sides of the baguette slices with avocado oil and season with salt and pepper. Place them on the grill and grill for 1 to 2 minutes until toasty. When finished, rub the garlic clove all over the baguettes and let them cool!
  • Place the peppers on the grill pan. Spray them all over with avocado or olive oil. Season all over with salt and pepper. Grilled for 10 to 12 minutes, tossing every 2 minutes or so.
  • While the peppers finish on the grill, assemble the plate! Pull the burrata apart on a large plate. Add the prosciutto on to the plate. Add the baguette slices.
  • When the peppers are done, add them on to the plate too. Drizzle everything with balsamic glaze and top with salt and pepper. Enjoy!
