This blackberry skillet pancake is truly a breakfast cake. A big old breakfast pancake, served in slices rather than stacks, topped with maple syrup and whipped cream. Fresh berries are lovely on top too!

Who could say no to this?

Imagine that sun streaming through the windows when you serve this on a summer morning. When all the fun summer possibilities lie ahead. Ones that are so fun, that a big special breakfast is necessary. 

Or maybe it’s a nice little weekend brunch with mimosas and bacon. This is the best way to add that carby goodness that everyone adores. And you don’t have to make single servings either! Bake it and slice. Super easy.

If there is one breakfast item my family loves, it’s blueberry pancakes. And when it’s a different berry season, or we find ourselves with an abundance of other berries, I use those too. Eddie is always THRILLED. He loves any kind of berry in a pancake and so do my younger two. 

I think it’s because the berries get so juicy and burst inside the pancake as it cooks. It’s almost like a little berry sauce, because they flavor every single bite. And they make it look pretty!

Now I am a huge fan of a dutch baby giant pancake, but this is a different version. The dutch baby gets puffed up and is a bit lighter, but also thinner. And even slightly gummier.

This here is a more cake-like version of a skillet pancake. It’s almost like a coffee cake and a pancake had a baby. It’s hearty but light with a nice, tender crumb. And it tastes exactly like a pancake!!

My kids will always choose maple syrup for their topping. But my personal favorite is either a sprinkle of powdered sugar and/or fresh whipped cream.

And when I say whipped cream, I mean softly whipped cream with no sweetener. It’s one of my favorite things!! I love it in hot coffee or cocoa and it’s rich and cloud-like.

I use heavy cream and a hand mixer. You can throw in a touch of vanilla extract. But I don’t add any sugar because the cream nicely cuts the sweetness of the pancake. And it’s not too sweet, but it just adds this wonderful texture and no extra sugar, which is a very nice complement.

Depending on the berries you use, they can be a pop of sweetness or a tart bite. It’s incredible!

I love how versatile this is. You can use different fruits and spices and really make it your own. Just wait until you see the fall version that I have coming up!

Ingredients

Instructions 

  • Preheat the oven to 375 degrees F. Add the 2 tablespoons of butter to an oven-safe or cast iron 10-inch skillet.
  • Separate the eggs. Place the whites in a bowl and beat them with a hand mixer until soft peaks form. Set aside.
  • Place the skillet with the butter in the oven to heat up.
  • In a large bowl, whisk together the flour, sugar, baking powder, soda, salt and cinnamon. In a smaller bowl, whisk together the buttermilk, egg yolks, vanilla extract and melted butter. Add the wet ingredients to the dry and mix until just combined. Fold in the egg whites until fully incorporated - folding and not mixing. Stir in the blackberries.
  • Remove the skillet from the oven. The butter should be melted. Pour the batter into the skillet. Bake for 25 to 30 minutes, or until golden brown.
  • Let cool slightly, then serve with maple syrup, whipped cream and powdered sugar.
