Or something like that. These grilled shrimp skewers over garlicky herby bread will become a repeat dish in your house for sure. It’s easy, tastes amazing and can feed a crowd.

You can also prep this ahead of time by skewering the shrimp. With that done, it comes together in no time at all!

This is one of those dishes that is so ridiculously simple yet amazing. It makes you wonder why you don’t have it more often… because it’s truly that easy. 

And tastes so good, like restaurant quality good.

This is how I make it!

First up, the shrimp skewers. I like to use raw shrimp that is peeled and deveined. I keep the tails on because it’s just easier to manage that way. Then, I skewer them! Lots of seasoning too. 

Next, the garlicky herb butter. I melt a ton of butter in a skillet and add in fresh herbs and minced garlic. It’s incredibly fragrant and flavorful.

Finally, the bread! I will always choose thick slices of sourdough, of course. They are going right on the grill too. 

That’s in. Three main components that when put together… taste heavenly.

You will never regret serving the shrimp right on top of the grilled bread. Holy cow. It’s almost like garlic bread topped with buttery shrimp and I mean… who would say no?!

This is actually one of the meals I made for Eddie for Father’s Day… when we got home from the beach, this dish was on the menu that week and it’s just superb!

Also, as long as the shrimp is thawed, this truly takes minutes. The shrimp and bread are both only on the grill for a few minutes each. 

You can always serve it just as is… or even with some tomatoes, maybe a little salad or even grilled corn. A simple no-cook summer side that really allows this to shine.

Grilled Garlicky Herb Shrimp & Bread

This grilled garlic butter shrimp is divine! Garlicky herb butter is drizzled over grilled shrimp skewers and thick slices of grilled sourdough. The combination is mouth-watering and fabulous!

Ingredients

  • 1 pound uncooked peeled and deveined shrimp, thawed if frozen
  • kosher salt and pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried basil
  • 8 tablespoons butter
  • 4 garlic cloves, minced
  • ¼ cup chopped fresh herbs, like basil, parsley and chives
  • 6 slices sourdough bread

Instructions 

  • Pat the shrimp completely dry with a paper towel. Skewer the shrimp on grill-safe skewers, putting anywhere from 4 to 6 shrimp on each skewer. Season the shrimp all over with the salt, pepper, garlic powder and basil.
  • Preheat the grill to the highest setting.
  • Place the butter in a small saucepan over low heat. Heat until the butter is completely melted. Once melted, add in the garlic cloves and the fresh herbs. Stir and turn off the heat.
  • Place the shrimp skewers on the grill. Close the lid and grill for 2 to 3 minutes, then gently rotate the skewers. Grill for 2 to 3 minutes more, or until the shrimp is pink and opaque. Remove the shrimp and place them on a baking dish, and brush them all over with the garlic butter.
  • At the same time, place the bread slices on the grill. Grill for 1 or 2 minutes per side (until toasty and grill marks form) and then flip and grill for another minute or so. Remove the bread from the grill and slice it in half. Drizzle it all over with the melted garlic butter.
  • Serve the shrimp skewers over the grilled bread with a few more drizzles of the garlic butter. Enjoy!
