This white bean dip with burst tomatoes is the perfect snack or appetizer as we head into late summer. The tomatoes are juicy and flavorful. The white beans are whipped into submission! They are incredibly smooth and creamy.
You will fall in love because this can be used as a dip or a spread. Use it as a dip for a day and then use the leftovers for sandwiches the next afternoon. It’s pure perfection.
Now I may be in the minority, but I love white bean dip even more than hummus. I find the white beans to be so much creamier than chickpeas, no matter what method you use to make super creamy hummus.
They are also so rich and buttery. It’s an overall heavier dip, but in a good way!
And you can flavor it exactly the same too. However you like your hummus – roasted red peppers, jalapenos, french onion – you can do the same to white beans in dip too!
I am a certified bean freak. I’d even go as far to say that beans are my favorite food. Every variety, though yes, I do play favorites. And a lot of times, those favorites depend on the season.
If you’d like something a little more substantial, if you’d like to load this up a bit more, you can make my summer garden white bean dip! I first shared it over a decade ago and it’s super flavorful and packed with garden herbs and veggies.
It may not be *quite* as smooth and creamy as this, but that’s only because I’ve been perfecting my whipped ways for 10+ years since. You can also use this base of white bean dip with all of those summery toppings instead! Whatever works.
This is how I make it, and it’s embarrassingly easy.
First, the tomatoes are going into a pan with some olive oil, salt and sugar. Don’t forget the sugar! It’s key. Let them pop and burst and do their thing.
While that happens, the beans go into a food processor with lots of garlic, lemon and a few herbs. I keep it simple but the main thing is – don’t forget the salt and pepper.
Blend up the white beans and taste a few times, adding a little salt and pepper as needed. Do not be afraid to add that salt! You will need it in this recipe for incredible flavor.
Scrape the bean dip out of the food processor and straight into a serving bowl. Then top it with all those juicy burst tomatoes!
I like to add a lot of fresh basil too.
Now it’s up to you if you’d like to stir it up and swirl those tomatoes in before serving, or serve it just like this. Topped with those bursting summer jewels!
It will get mixed as you go, so you don’t really need to decide. It’s just perfect.
Throw in your favorite crostini, baguette, crackers, crudite – whatever you love with a bean dip or hummus.

White Bean Dip with Burst Tomatoes
Ingredients

- 2 tablespoons olive oil
- 2 cups cherry tomatoes
- 1 teaspoon sugar
- kosher salt and pepper

- 2 cans cannellini beans, drained and rinsed
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons fresh chives
- 1 lemon, juice freshly squeezed
- 1 teaspoon kosher salt
- ½ teaspoon pepper
- ¼ cup ice water
- chopped fresh basil, for topping
Instructions

- Heat the olive oil in a saucepan over medium heat. Add the tomatoes with the sugar and a big pinch of salt and pepper. Cook the tomatoes, shaking the pan every so often, until they are bursting open, soft and juicy. Turn off the heat and let them cool.

- Add the beans, garlic, olive oil, chives, lemon juice, salt and pepper to a food processor or blender. Puree until smooth and creamy, scraping down the sides as needed. With the processor on, stream in the ice water until fully combined.
- Taste and season with more salt, pepper or lemon as needed.
- Scoop the dip in a bowl. Top with the burst tomatoes and fresh basil. Serve immediately with crackers, veggies, crostini or chips!
