This sesame beef zucchini stir fry is packed with flavor and comes together so fast. I love making it for a quick weeknight meal, but the leftovers are also great for lunch the next day. If you find yourself with tons of zucchini from a late summer harvest, this meal should happen!
Many times I forget about meals like these and when I remember, I kick myself because they are such great ones. And big crowd pleasers in our house. We always cook ground beef in other ways so it falls by the wayside.
And it shouldn’t!
Meals like this always go to the top of my list during a busy season. It’s actually hard to believe how quickly they come together!
They are simple, flavorful and with the combo of the veggies, beef and rice, super filling!
Plus, who doesn’t love a bowl?!
It’s also a nice change of pace from the other recipes I make with ground beef. It’s different from tacos and pasta and burgers, and while those aren’t all we make, they definitely are in the top list for us.
This provides an exciting change at dinner time and tastes amazing too. So that’s a definite win.
If you are still finding yourself with an overflowing garden, like you have zucchini up to your ears, this is for you! Slice one or two and saute them in a pan with lots of delicious seasonings and sauces.
It might only be second best to actually frying the zucchini and dipping it in marinara with tons of parm. You know, the classics?!

Now, I (not so) secretly take a little extra time with the zucchini here because it almost caramelizes. It cooks so nicely in a pan that it reminds me of sliced onions done low and slow. This method also makes it a little more enjoyable to eat with the beef because it’s all combined over rice. It’s easy and marries together well in the skillet.
Which is quite perfect, because then it’s less green. Which means my kids are more inclined to eat it!
I mix the beef right into the zucchini and add the sauces and flavors that way. I find that it distributes them so well and everything tastes amazing, without cooking all that toasty sesame flavor off. We have green onions for crunch, toasted sesame seeds (yum!) and jasmine rice for the perfect base.

Sesame Beef Zucchini Stir Fry
Ingredients
- 1 pound lean ground beef
- kosher salt and pepper
- 1 teaspoon olive oil
- 2 zucchini squash, thinly sliced
- 4 garlic cloves, minced
- 2 tablespoons soy sauce
- 2 tablespoons toasted sesame oil
- 2 tablespoons honey
- 4 green onions, thinly sliced
- 1 tablespoon toasted sesame seeds
- jasmine rice, for serving
Instructions
- Heat a large skillet over medium-high heat and add the ground beef. Add a pinch of salt and pepper and bread the beef apart, cooking until it browns and all the fat is rendered. Once it’s cooked, use a slotted spoon to transfer the beef to a plate.
- In the same skillet, heat the olive oil over medium heat. Add the zucchini and a small pinch of salt and pepper. Stir to combine. Cook for 6 to 8 minutes, until the zucchini starts to brown a bit. Reduce the heat to medium-low and cook for another 10 minutes, stirring often, until the zucchini cooks down. Stir in the garlic.
- Add the beef back into the skillet. Mix everything together. Add the soy sauce, sesame oil and honey. Mix well and cook for another 3 to 5 minutes. Stir in the green onions and toasted sesame seeds.
- Serve over rice. Enjoy!
