Strawberry Burrata Salad.
This strawberry burrata salad is a summer staple – perfect for a light lunch, and easy starter or a seasonal side dish. It’s drizzled with a basil vinaigrette and is the best combo of savory and sweet!
This year’s strawberry salad is out of this world!
This strawberry burrata salad is dreamy, made with a base of arugula, topped with pistachios and drizzled with a super fresh basil vinaigrette. It makes for a lovely side dish, a starter salad or a perfect light summer lunch.
Add some toasted sourdough on the side and this meal is complete!
Two of my favorite things in the food world: strawberries and burrata cheese! Today they are getting married and I’m throwing them a giant, basil-drizzled reception.
I’m thrilled that strawberries are finally back in season here. We used to go strawberry picking every year, and even though it was 95 degrees every time we did it, it was fun and the kids loved it! There is nothing like a farm fresh strawberry – it is sweeter than candy, truly. I dream of them!
Since the strawberries are extra good right now, I’ve been making everything I can and utilizing them in all the ways. Especially in savory varieties. I adore fruit, but I love it the most when it’s used in a savory recipe. This is no different.
Plus, isn’t this the most gorgeous salad ever?
It’s super easy to layer too. SO easy.
We still have some lettuce of course, in the form of baby arugula greens. But the show is all about the cheese and fruit, so I only do a small base of arugula to keep it focused on the other ingredients. I want more berries than greens on this plate.
Here’s how I make it!
First up, a plate of arugula. Throw on some salt and pepper!
Next, pillows of burrata cheese. Pull them apart and place them directly on top of the arugula. Salt and pepper is good here because it’s verrrrry important to season every single layer.
Next, the berries. Add a ton. Sliced, whole, chopped – however you like them.
Then, the pistachios. My favorite nut ever, and especially gorgeous with its vibrant green. It is fabulous with the berries too.
Finally, a dressing of my basil vinaigrette. It’s tangy, refreshing, so delicious, herby and silky smooth. I use the nutri bullet and it comes together so easily and fast. This is one of my favorite summer dressings to use for pasta salads, greens salads or even grilled chicken.
Throw everything together and it’s a beautiful mess! Serve it with a fork or scoop it up with crostini or crackers. I can’t even tell you how delish the combo of sweet and savory is!
This is one of those dishes that is embarrassingly easy but looks elegant and semi-fancy. It’s a beaut!
It tastes amazing too. Think of it as almost dipping the strawberries into the burrata cheese. OMG.
The dressing is so fresh and summery. The pistachios add the texture. You don’t need anything else!

Strawberry Burrata Salad

Strawberry Burrata Salad with Basil Vinaigrette
Ingredients
- 4 cups baby arugula greens
- 8 ounces burrata cheese
- 3 cups sliced strawberries
- ¼ cup chopped pistachios
basil vinaigrette
- 1 cup tightly packed basil leaves
- 1 garlic clove, minced
- 1 tablespoon lemon juice
- ½ tablespoon apple cider vinegar
- 1 teaspoon honey
- big pinch of kosher salt and pepper
- ⅓ cup olive oil
Instructions
- Place the arugula on a large plate or in a bowl. Season with salt and pepper. Top with the burrata cheese, pulling it apart to spread it out. Add another sprinkle of salt and pepper.
- Top with the strawberries. Sprinkle on the pistachios. Drizzle with the dressing. Taste and season more if needed. Serve!
basil vinaigrette
- Add all the ingredients to a blender or food processor and blend until smooth. Store any extras in a sealed container in the fridge for 3 to 4 days.
