What To Eat This Week
Kick things off with breakfast for dinner! This sheet pan sweet potato hash is one of our favorites and just so easy. Add your favorite toppings and go to town!
For a slight taco-ish feel (tex mex?!), make this southwest salmon salad! I love how customizable this is. I like to eat it as a chopped salad, with everything in small bits.
My fire roasted minestrone soup with kale pesto is next on the list. Oooooh this is so good and leftovers are unreal.
French onion stuffed shells with a house salad for Thursday! It’s absolute comfort food that everyone will love.
Next, try my crispy chickpea chopped salad. Yes, I’m all about the chopped salads! This is surprisingly satisfying and delicious.
For Valentine’s weekend, I highly suggest making this rosé coq au vin, even if it’s for yourself! Leftovers are wonderful and it’s such a special meal.
For lunches, I’m making my brussels crunch salad. I cannot get enough of this! For breakfast, a batch of almond butter baked oatmeal.
