We love this zucchini puff pastry with lemon and goat cheese! Flakey crust, melty cheese, thin slices of zucchini and fresh lemon zest. This is so delicious, refreshing and satisfying!

This recipe today comes from Everyday Dinners and is one of the most made by you guys. If you haven’t noticed, I have a serious infatuation with puff pastry, and there are puff pastry pizzas for every season in the book, including a few extras.
This is the summer version! It’s loaded with thinly sliced zucchini, lemon, goat cheese and garlic. It is so super fantastic.
I love these puff pastry pizzas because they are so incredibly versatile. I shared my first one back in 2014 and have been nonstop ever since.
These can be served and eaten like pizzas with a greens salad. They can be sliced and served like appetizers for a dinner party. Or they can even be a quick lunch.
You could also do puff pastry pizza parties with an array of toppings for everyone to choose from. Seriously the options are endless.

This zucchini puff pastry is just a peek of what you can find in Everyday Dinners. I love how fresh this pastry is for spring and summer – the lemon and goat cheese are so light and flavorful. This flakey bite of heaven is just what the season needs!
Zucchini Puff Pastry with Lemon & Goat Cheese
Zucchini, Lemon and Goat Cheese Puff Pastry Pizza
Ingredients
- 1 zucchini, very thinly sliced
- 1 sheet thawed puff pastry
- ½ cup freshly grated mozzarella cheese
- ½ teaspoon garlic powder
- kosher salt and pepper
- ¼ teaspoon crushed red pepper
- 4 ounces goat cheese
- 1 lemon, zest freshly grated
- fresh herbs for serving
Instructions
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
- Place the zucchini on a cutting board and sprinkle it with salt. Let it for 5 minute, then pay it dry with a paper towel. This helps to remove excess moisture.
- Place the sheet of puff pastry on the parchment paper. Cover with the mozzarella cheese, leaving the 1 inch border. Top with the zucchini and sprinkle with a little more salt, the pepper and the garlic powder. Crumble the goat cheese over the zucchini and sprinkle on crushed red pepper. Sprinkle on the lemon zest.
- Bake for 20 to 25 minutes, or until golden and crisp. Sprinkle with fresh herbs before serving.

What type of mozzarella cheese is it? Do you grate the soft type of fresh mozzarella or is it a harder kind?
I recently made this from Everyday Dinners -its DELICIOUS and easy. With summer coming it’s going into the rotation!
You might want to change it to “pat it dry” unless there’s a way for zucchini to pay. :-) I’ll be making this soon!
I love this cookbook SO much! Just last night we had the black bean burgers that I prepped ahead of time and tonight we’re having the chicken tortilla soup with the chicken and cheeses already shredded and prepped. Your granola scones have been breakfasts and the herby bean salad is lunch. I seriously don’t know how I would feed my family so much variety without your recipes!!!
Dear Jessica, first of all, you have absolutely started something in our little family of 2. The recipe you shared is outrageous, and I could have eaten all of the zucchini without even cooking….I’ve never made a “pizza” with such ease. Now to check out your other pizza iterations using puff pastry. If I could ask 1 question, it would be based on the comic situation yesterday of me staring for what seemed like an hour at the various puff pastry brands in the market. I ended up trying to be in your head, which of course is silly….but I guessed that perhaps you used the tried and true Pepperidge Farm brand. Would love to know if you have a favorite brand, because I can see that some are butter based. The packages of the various brands seem to have different net weights too, so I just went basic with Pepperidge Farm. Thank you so much for this delicious experience.
Great Recipe! On question: when I buy the puff pastry, it comes by 2 and it usually stick together, very difficult to separate. Any solution? Thanks.

Made this today. It was easy, but I didn’t have goat cheese so I used Feta instead. It was delicious.
