Roasted Garlic and Dill White Bean Dip.
It’s been six weeks and counting, and I have been compulsively buying fresh dill because I can’t get enough. And before you tell me that I should just grow it, I will show you a picture of my basil plant that I accidentally banished to the shade and watered… once. I fear for my future children.
At the risk of identifying myself with a certain poofy-haired Jersey girl, I’m nearly positive that my love for dill started with pickles.
Man… I loooove pickles.
But not the bread and butter kind. The dill kind. The only way I can describe that skeevy bread and butter chaos is that they taste… unnaturally sour and too wet. [Hopefully that’s never what she says. Ever.]
While my pickle love is nothing new – I’ve always been a fan – I tend to go through stages. Sometimes I crave them and go through two jars in one week. Sometimes I forget about them because I can be flakey. Sometimes after finishing that second jar I’ve decided I’ve had enough.
After eating them straight up (usually with some olives and cheese) as a child, I eventually graduated to dipping my salty potato chips in the leftover stream of pickle juice on my paper plate while eating grilled burgers for dinner. This was long before those pickle-flavored potato chips hit the shelves in the grocery store, but I vividly remember the exact morning that a girl on my school bus hopped up the steps with said potato chip bag in hand. Totally weird and delicious. I was jealous of potato chips.
One thing I absolutely never, ever did was eat peanut butter and pickle sandwiches, which my dad ate as a kid. In fact, he’d still probably scarf one now. I can’t even fathom that mess… but if you’re into that kind of thing, I pretty much love you. And if this yucky feeling I hold over peanut butter + pickles is how some of you feel about bacon? I’m crushed.
Anyway, this is just one of the many ways I’ve been enjoying some dill this summer. I think it’s fabulous, but you could probably rub roasted garlic on a shoe and I’d demolish it. So, so good.

Roasted Garlic and Dill White Bean Dip
make about 1 cup of dip
1 15-ounce can of cannellini beans, drained and rinsed (or about 1 1/2 cups of cooked beans)
2 bulbs of roasted garlic
3 tablespoons of fresh dill
1/4 cup of olive oil + more if desired
1/2 teaspoon salt
1/4 teaspoon black pepper
Combine beans, dill, roasted garlic, salt and pepper in a food processor and blend until smooth. With the processor running, stream in olive oil and make sure to scrape the sides and bottom a few times. Serve in a bowl garnished with fresh dill and additional drizzles of olive oil.

I know you love the TJ’s white bean dip and am not surprised you took it upon yourself to make something similar but yours looks wayyyy more fabulous than theirs!
I love pickles,too! But I like the sweet & sour refrigerator kind most of all. But with me, I will always prefer sweet to savory :)

I’d eat that dip with a spoon. I can’t get enough roasted garlic… or dill. This pregnancy I’ve been the stereo type pregnant girl who’s sitting on the couch pounding dill pickles (or sometimes dill green beans sooo good!) and a container of Ben and Jerry’s.
That is what I’ve ALWAYS pictured pregnancy to be! I don’t know why, maybe I saw it in a movie when I was little or something?!
I’ve never been that overwhelmed by dill but I think I’m going to have to change that now because this dip looks mighty fine.

This looks awesome – I love dill, too! I tried growing it this year and it died – so sad. I love dill pickles too and totally agree with you on the sweet – yuck – except as relish in tuna salad. Have you tried Trader Joe’s kosher dills yet? If not, you have to try them! They taste like homemade pickles and they are soooo good! I can’t stop eating them.

“When I dip you dip we dip” – ummmmm I totally did a dance routine to that song as a high school cheerleader. Eeep. Bread and butter pickles are disgusting, I agree, I only like me a nice, salty, crunchy dill pickle. Have you ever had a sour pickle? Not the same as dill, but still pretty good.

This looks incredible — I too go in stages with pickles. We’ll have giant jars in the fridge and we’ll eat them all the time, and then poof they are gone and we don’t buy them for weeks. A friend of mine makes her own pickles and they are the best things on earth. Seriously.

LOL about the fresh dill and basil plants! I managed to keep a basil plant alive all summer, and although I haven’t stopped watering it or giving it sunlight, it’s looking very, very sad now. I wonder if dill is easier to grow? Either way, I’ll be picking some up at the grocery store to make this on the weekend!
The extra drizzle of olive oil looks amazing! I find that dips like that or hummus are just so much better with that finishing touch!

I can show you what my dill plant looks like in a garden of otherwise lush herbs. Dill is just hard. And it doesn’t come back – now your stuck with this tall brown twig in your yard not wanting to call it dead but pretty sure its not doing anything any more but giving that spider a nice perch. Way to remind me I need to weed, btw. ;)
This dip looks great. I just discovered hummus like a year ago and have been in love with it – I haven’t tried a white bean dip yet but I’m probably going to be addicted.

I guess I was sheltered or something because I had just never had it before last year – want to hear some magic though? Trader Joes tomato and basil hummus + those short crunchy sour dough pretzles = pizza Combo’s perfection.

Bring on the dip! Yes, my mom told me that if I could not keep up plants then I would not be able to keep up kids. I finally got an African Violet 3 years ago and it is flourishing and so is my pregnant belly. 7 more weeks. :D just sayin’!

I make a dip like this except I use a few spoonfuls of garlic-y pesto sauce as flavoring. I love dill so I need to give your version a try.
And I agree that the only real pickle is a dill pickle.

Love dill pickles. Hate bread & butter ones. This dill dip looks awesome. For some reason I keep thinking about dipping a beef stick in it…kinda like a weird twist on a pickle wrap.

This dip looks great!! I had a big pickle obsession when I was a kid. My dad used to order the pickle spears at restaurants (the ones that come with sandwiches) for me before the meal. The waitresses always thought I was weird after that. lol

YUM! This appears to be a much more sophisticated version of my best friend’s “Pickle Dip” to which I giggle like a 12 year old everytime I request she make it. “Hey Mel, don’t forget how much I love the Pickle Dip”. “It’s not a party without some Pickle Dip”. I could go on and on…

I was at Trader Joe’s earlier this week and I kept contemplating buying this dip or not.. So glad I didn’t so I can make it on my own now!
This is a great way to use dill! I do actually have a pot of it on my front steps but have maybe used it 2x the whole summer. Perfect for the long weekend!

Oh I have such a major pickle obsession… kosher dills only, Strubs are by far my fav (don’t know if these are only in canada though).. a close friend still makes fun of me for always ordering a vanilla milkshake and 2 side orders of pickles whenever we would go to Harveys growing up! (burger place, also I think Canadian).. I loved them with cheddar cheese or wrapped in some smoked turkey or chicken …still do.. yum!
Also white bean hummus is amazing! Just started buying this “Eat well Enjoy life” white bean hummus with roasted garlic tapenade…. i have a substance abuse problem with it I think!! Have bought 1 container a week since discovery but it’s gone by like the 3rd day :)
I will have to try and make this dip to get through the rest of the week!

Hubba, hubba. This looks fan-freakin’-tastic. True story: Last year I tried to grow dill, cilantro, and parsley. I got 2 black lab puppies, and one day I came outside to give them snuggles and noticed that they smelled oddly of pickles and Italian food. The little buggers had eaten my herbs! This year, I tried all over again, but kept them elevated. Welp, a mama dove decided that my lil’ herb garden was a perfect nesting place for her. I gently watered her every day, and she hatched two fine baby birds. I like to think she snacked on my dill. My herbs ended up dying, but I grew some doves! Animal Kingdom- 2, Stacey’s Herb Garden- 0.
