I’m not gonna lie.

I still hate dealing with these stupid cranberries.

Remember last week, after I dumped the entire bag on the kitchen floor… then made the salsa which I inevitably finished off with a bag of blue corn chips… then swore I’d never make anything with these unjuicy little pearls again… then shoved them on the bottom rack of the fridge, where they spilled out all over the floor again, 14 minutes later… and told you that I baked something with cranberries?

Yeeeeep. This is it.

I’m still confused about the cranberries.

Fruit.

That I can’t really eat raw.

That I can’t really bite into.

That I can’t really smother with peanut butter.

That I can’t really dip into caramel sauce or freeze after smothered in chocolate. This.doesn’t.make.sense.

And I can’t get over it.

To the point of wanting to punch myself in the face.

I mean, look at them. Just so cute and weird and freaky inside.

Who runs hot and cold? Not me.

By the way, I’m definitely not sitting on my couch with an entire 9×13 baking dish full of breakfast cake in my lap and watching Sex and the City. Because it definitely wasn’t me who just want “one bite” to taste which turned into two and then three and in case you didn’t know, standing over the sink with a fork while attempting to type on your computer isn’t exactly what one would call… feasible.

But hey – not my issue.

So these are kind of cute, right? Fat, fluffy biscuits studded with bright red cranberries that melt in your mouth. A little doughy, a little sweet, a little tart and a little savory. Not exactly something I’d serve with dinner, but warm from the oven with tons of melted butter on top accompanying eggs at breakfast? Particularly brown sugar and maaaybe… cinnamon butter? I’m all over that.

Cranberry Whole Wheat Buttermilk Biscuits

[slightly adapted from bon appetit]

makes 12-15 biscuits

1 1/2 cups all purpose flour

1 1/2 cups whole wheat pastry flour

4 tablespoons brown sugar

4 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon baking soda

1 1/2 sticks (3/4 cup) cold butter, cut into pieces

1 1/4 cup buttermilk

2/3 cup fresh cranberries

Preheat oven to 425 degrees F.

In a large bowl, combine flour, sugar, salt, baking powder and soda, and whisk until combined. Using a fork, pastry blender or your hands, add butter pieces to the flour and mix until coarse little crumbles remain. Toss in cranberries. Add buttermilk and stir with a spoon until just combined, not overmixing. Use your hands if needed to bring the dough together.

Use  1/4 cup measure to drop batter onto a nonstick baking sheet, or press dough on a sheet of parchment paper or cutting board, then using a biscuit cutter to shape the dough into rounds. Bake for 12-15 minutes, or until biscuits are golden brown.

I love the inside/interior shot of that cranberry…I never really paid attention, but they are kinda weird inside, aren’t they.

I love how puffy your biscuits are.

And that latte-ish looking drink in the last shot with the cinnamon sticks in it…I want THAT!

Perfect breakfast. I have a crush on cranberries and I rarely use them…bad on me. My Moms raw cranberry sauce is one of the main reasons I look forward to thanksgiving!

And by the way, I didn’t even notice the tiny wrinkles in your placemat until you said about it…..looking at the food is much more important to me!

I have a love/hate relationship with cranberries, but I think they are so pretty and festive… Something so pretty should really taste so fabulous! I never realized what they looked like on the inside ~ funny little guys ;-) Your biscuits look great and I have a bag of cranberries just sitting in my frig.waiting to be used for something fun, not just cranberry sauce Eeeww! So funny you just mentioned sitting on your couch with the 9x 13 pan of breakfast cake ;-) When I got home from work last night ~ I was checking my emails with a 9x 13 pan of a raspberry crumble a spoon and glass of milk. That was dinner and it was delicious…XoXo

If you find a taker on the placemat ironing, can you send them over to my house to do mine too? I swear I have to iron them EVERY time I take pictures. I’ve taken to hanging them up in a closet now (instead of my previous rolling and throwing in a basket tactic) but it’s still not a flawless method.
And about the biscuits – they look awesome! Your photos are so so gorgeous. If you ask me, the wrinkled mats add character! ;)

And to think you say you aren’t crafty/artsy/ Baking is totally an art. I can’t bake to save my life. Of course I hate following directions and you cant exactly wing it when it comes to measurements with baking. Who needs a fancy centerpiece when you can load a lovely little basket with these babies?!

Cranberries… baked into a biscuit. YUM. I have two bags of berries that I got for super cheap at our brand new Trader Joe’s that I need to use. These might be on the menu.

Also, love the stemless stemware. I realize that sounds like an oxymoron, but I have some very similar stemless wineglasses and love them.

Ironing is the worst. I have about 5 items of clothing that need to be ironed and they rarely get worn for that very reason. Can you imagine being our grandmothers and ironing everything? Tablecloths, handkerchiefs, dish towels, plus every single item of clothing? I would die.

I am totally loving this recipe! Have you tried Trader Joe’s Cranberry Apple Butter? If not, you must! I had it last night on a cranberry roll and over top of my chicken. Holy Crap it was so good!! The reason I’m tell you is because it would be perfect with your Cranberry Biscuits, which I plan on making!!!

Can you freeze biscuits? I freeze bread all the time, and I think biscuits would be ok,but I just want to double check.

Those biscuits look so soft… I feel like I’d find them down south at some old school southern restaurant. But, uh, during fall, because I’m not sure when else you’d find fresh cranberries.

They got amazingly puffy – beautiful biscuits! I can’t get my family past the jarred/jellied cranberry product. I made homemade orange ginger cranberry sauce last year and no one touched it. They’re a lost cause.

These are lovely! I am right there with you on the cranberries. I bought a bag at TJ’s the other day and I haven’t decided what to do with them. I know if I make them into a sauce that does not contain whipped cream or jello I will be the only one to eat them. This is a great idea for Thanksgiving morning. This way I can use my cranberries and then still make a jello type salad that everyone will eat. The cinnamon butter sounds perfect too…yum.

i think you read my mind. my plan was to get online and find a recipe to use up to gigantic bag of cranberries my mom decided to buy. we’ve never bought cranberries, mind you. i have no problem making several batches of these gems so we can fit something else in to our fridge. thank you!
