But this has like, tons of bananas.
So it’s practically a health food.
Definitely a breakfast food.
Absolutely an eat-right-this-minute food.

Triple Fudge Banana Bread
makes one loaf (or about 3 mini loaves)
2 cups whole wheat pastry flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2/3 cup brown sugar
1 large egg
2 teaspoons vanilla extract
4 large bananas, mashed (about 1 1/2 cups)
1/2 cup unsalted butter, melted and cooled
1/4 cup milk
4 ounces dark chocolate, melted
3/4 cup milk chocolate chips + 1/2 teaspoon flour
Preheat oven to 350 degrees F. Spray a loaf pan (mine was 9×5) liberally with non-stick spray or grease with butter. In a bowl, mix together flour, cocoa, salt, cinnamon, nutmeg and baking powder, then set aside.
In a large bowl, whisk egg and sugar together until smooth. Whisk in vanilla extract, then add bananas and milk and mix until combined. Add in dry ingredients slowing, mixing with a spoon until batter comes together. Add in melted butter and mix until incorporated, then stir in melt chocolate.
Toss chocolate chips with 1/2 teaspoon to coat, then fold into batter. Pour batter into loaf pan. Set pan on a baking sheet, then bake for 55-60 minutes, or until center is set and a toothpick inserted comes out clean. Remove bread from over and sprinkle with additional chocolate chips if desired. Let cool completely (1-2 hours) before cutting.

Michelle, I have to say i cant agree with you more.. Jessica is so entertaining. She as well is so creative with her recipes. When you think they cant get any better, they do! Hmmm…my husband loves banana bread, but not when it’s combined with chocolate. So if I make this, I can have it all to myself! {insert evil cackle here}. :-) thanks for the yummy recipe!

I’m just curious as to why you coat the chocolate chips with flour before you add them to the batter. Does it make a difference?

I may be missing this, but where in the directions does the 1/4 cup of milk come in?
I would assume, as in making regular banana bread, that it should read:
“then add bananas and MILK until combined” ???????
It is baking in the oven now.
I used 3 small loaf tins, I assume the baking time is slightly shorter when using them?

The bread is done and has been taste tested.
Using 3 small loaf pans, I tested at 40 minutes..knife came out of center with batter on it.
At 50 minutes, tops were a bit dark, centers were cooked.
(Naturally ovens vary)
The small loaves were dense, but very chewy, like good brownies, and a definite banana/chocolate flavor, with the surprise of biting into a choc. chip.
Some may find the bread not sweet enough, I prefer to bake with less sugar as a rule, the amount of sugar in this was just right for me.
I would not substitute white sugar for brown, I think the brown adds to the chewy texture.
I used white flour instead of WW flour.
This is a good breakfast bread, it would go great with a good tea!
Now, on to…Orange Cookies!!!!

Triple fudge? Now you’ve got my attention. I like to make a whole wheat banana bread and eat it for breakfast. Rachel says its not breakfast but I say since it’s a “bread” its ok as breakfast. I’m really going to get a look if I try to pass this off for breakfast – but who cares. It’s triple fudge! :)

Thank you! My house could not smell more heavenly! These are baking in my oven as I type this. I used a mini-mini loaf pan? It holds eight 2.5×4.5 loaves. Perfect for my sweets swap this Sunday! My only concern is that my batter was no where near “pourable” consistancy. What am I doing wrong? I’m hoping to perfect this gem by Sunday…. the girls are counting on me!

So sometimes, when things are slow at work, I “use my time wisely” by looking up recipes to try when I have my own kitchen.
And more often than not, I find myself at your website and get more and more excited by the second.
I almost cried with joy after reading this one.
I know what I’m making the very second I finish moving into the new place!
Or, more likely, as I’m moving and sorting and storing, these things will be baking so I’ll be surrounded by the smell of chocolate with chocolate on chocolate baking in my oven.

I just made this, and waited only long enough for it to cool off slightly before cutting myself a huuuge piece! It turned out amazingly — thankyou for the recipe! I don’t know what whole wheat pastry flour is, so I just used regular whole wheat flour, and it’s still yummy. The triple-chocolate masks all the banana quite well ;) (not a huge fan of bananas in baked goods, but I needed to use up the ones that got mushy in my kitchen.) Thanks again for a ROCKING recipe.
