Triple Fudge Banana Bread.
I did just say TRIPLE FUDGE. You heard correctly.
But this has like, tons of bananas.
So it’s practically a health food.
Definitely a breakfast food.
Absolutely an eat-right-this-minute food.

Triple Fudge Banana Bread
makes one loaf (or about 3 mini loaves)
2 cups whole wheat pastry flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2/3 cup brown sugar
1 large egg
2 teaspoons vanilla extract
4 large bananas, mashed (about 1 1/2 cups)
1/2 cup unsalted butter, melted and cooled
1/4 cup milk
4 ounces dark chocolate, melted
3/4 cup milk chocolate chips + 1/2 teaspoon flour
Preheat oven to 350 degrees F. Spray a loaf pan (mine was 9×5) liberally with non-stick spray or grease with butter. In a bowl, mix together flour, cocoa, salt, cinnamon, nutmeg and baking powder, then set aside.
In a large bowl, whisk egg and sugar together until smooth. Whisk in vanilla extract, then add bananas and milk and mix until combined. Add in dry ingredients slowing, mixing with a spoon until batter comes together. Add in melted butter and mix until incorporated, then stir in melt chocolate.
Toss chocolate chips with 1/2 teaspoon to coat, then fold into batter. Pour batter into loaf pan. Set pan on a baking sheet, then bake for 55-60 minutes, or until center is set and a toothpick inserted comes out clean. Remove bread from over and sprinkle with additional chocolate chips if desired. Let cool completely (1-2 hours) before cutting.

Jessica, I read a ton of food blogs. But hands down yours is my favorite. You could charge money for the amazing recipes and pictures. Thanks for inspiring me and making me laugh everyday! I wish you lived here by me (Colorado) and we could hang out! “Triple Fudge” has to be two of the prettiest words in the English language!

Hmmm…my husband loves banana bread, but not when it’s combined with chocolate. So if I make this, I can have it all to myself! {insert evil cackle here}. :-) thanks for the yummy recipe!
I’m just curious as to why you coat the chocolate chips with flour before you add them to the batter. Does it make a difference?
Yep – prevents them from sinking to the bottom!

I may be missing this, but where in the directions does the 1/4 cup of milk come in?
I would assume, as in making regular banana bread, that it should read:
“then add bananas and MILK until combined” ???????
It is baking in the oven now.
I used 3 small loaf tins, I assume the baking time is slightly shorter when using them?
Oops – yep so sorry about that. Just fixed it. Let me know how it turns out! I didn’t try the mini loaves but I would probably start with them at about 20-25 minutes then check.
The bread is done and has been taste tested.
Using 3 small loaf pans, I tested at 40 minutes..knife came out of center with batter on it.
At 50 minutes, tops were a bit dark, centers were cooked.
(Naturally ovens vary)
The small loaves were dense, but very chewy, like good brownies, and a definite banana/chocolate flavor, with the surprise of biting into a choc. chip.
Some may find the bread not sweet enough, I prefer to bake with less sugar as a rule, the amount of sugar in this was just right for me.
I would not substitute white sugar for brown, I think the brown adds to the chewy texture.
I used white flour instead of WW flour.
This is a good breakfast bread, it would go great with a good tea!

where do you get the whole wheat pastry flour??? I have looked several places! Please don’t say trader joes :( lol.
I find it at my local grocery store – Trader Joe’s actually doesn’t have it. It is in the organic/health food section, mine has had it for years!
So my baby love banana, bread, and chocolate. I am just going to tell him I made this up because he’d want you to adopt him asap lol. Oh and by baby, i mean he’s the youngest (2) so he’s totally cleared for massive chocolate consumption. :D
Triple fudge? Now you’ve got my attention. I like to make a whole wheat banana bread and eat it for breakfast. Rachel says its not breakfast but I say since it’s a “bread” its ok as breakfast. I’m really going to get a look if I try to pass this off for breakfast – but who cares. It’s triple fudge! :)

Looks great, but I don’t quite get what’s so ‘triple’ about the fudge?
I called them triple fudge because they have dark cocoa powder, melted chocolate and chocolate chunks. Three kinds of chocolate.

Thank you! My house could not smell more heavenly! These are baking in my oven as I type this. I used a mini-mini loaf pan? It holds eight 2.5×4.5 loaves. Perfect for my sweets swap this Sunday! My only concern is that my batter was no where near “pourable” consistancy. What am I doing wrong? I’m hoping to perfect this gem by Sunday…. the girls are counting on me!
They took 25 to 30 mins. Oh, and I added semi-sweet morsels to the tops before baking. Is that bad? Right, I didn’t think so.
