Hello clams casino pizza!! This is probably in my top ten as far as recipes I’ve shared on the blog. If you happen to make this… try to use fresh clams. GAH.

Caramelized pineapple quesadillas with strawberry salsa. Do you think I’m a bit obsessed with fruit? Sheesh.

Annnd these crab cake sliders with kiwi salsa. I cannot get enough.

What have your go-to summer meals been lately? I’m in a rut of eating tomatoes and burrata and basil and bread. Not that I’m complaining…

    The grilled blackberry basil smash sandwich and the caramelized pineapple quesadilla are being made today. One for lunch and one for dinner. Those two meals have got some of my favorite food combos of the summer. But then so is tomatoes, cheese, basil and or bread or pasta. So obviously, tomorrow has got to be the pasta for dinner an the pizza for lunch! Suddenly I have a lot of eating to do this weekend. I have plans to make many, many foods now! LOL

    Every single one of those pictures has literally just made me drool!

    That pizza with the clams is genius. I am such a seafood addict and that looks like a great dinner time meal. I love the blackberry melt, I also like to put goat cheese in mine to get that melting cheesy goodness with a bit of bite. So i am so glad you post these up

    That grilled cheese looks so good! But i have to say that your recipe for Sweet & Spicy Chicken, Corn & Avocado Tostadas with Blueberry Peach Salsa from last year is my go to summer meal. We ate it so often last summer that my husband (who normally just eats what’s in front of him) actually requested it when I brought home some fresh corn the other day. We had it that night and it was just as good as I remembered! Love your recipes :)

    I made that blackberry basil grilled cheese several times last summer while my man was out of town and that’s how I fell in love with your blog!

    We’ve been on a Mexican kick lately. It’s just so easy to make taco salad/burritos/whatever! And so delicious.

    I found that brown butter skillet pasta recipe on here a few weeks ago and made it – was a huge hit with anyone who wanted to sample it when i brought it for lunch at work… def a great way to get yummy veggies into my favorite staple iteams… butter, cheese and pasta lol

    I’ve made the smash sandwiches, the brown butter veggie skillet and the pineapple quesadillas with strawberry salsa- love them all! I had been in a major dinner rut, with summer road trips and constant (I mean, out of control) eating out. So I’ve spent the past few days playing catch up with some homemade summery goodness. Glazed chicken tostadas with roasted corn, avocado and blueberry peach salsa; coconut chicken tenders with peach honey mustard (served with pineapple cornbread topped with leftover fruit salsa); roasted vegetable mac & cheese; and a couple of fresh-picked berry cobblers. I really need caprese in my life, maybe one of your fun summer pizzas and a chopped salad or two. Also, I am fully ready to spend the next month OD’ing on watermelon , tomatoes and corn. Pumpkin and apple season (swoon) will be here before we know it!
