Fluffy Delicious Cornbread.
Would you believe that I really just had my first piece of cornbread a few years ago? I think I had tried some as a child and it was very dry, which turned me off from it immediately. But years later, I tried some real cornbread – it was flavorful and delicious and I never looked back.
I am by no means an expert in cornbread or any southern dish, but we absolutely devoured the entire pan in one night.
Especially since it was slathered in cinnamon honey butter.
based slightly on Bob’s Red Mill
1 cup whole wheat pastry flour
1 cup finely ground cornmeal
1 tablespoon baking powder
½ teaspoon salt
2 tablespoons sugar
½ cup creamed corn
1/2 cup butter, melted
1/2 cup milk
1/2 cup heavy cream or half and half
2 eggs
Preheat the oven to 375.
Combine dry ingredients together, then add eggs, corn, heavy cream, butter and milk, stirring until smooth. Pour in an 8 x 8 square pan and bake for 20-25 minutes.

Confession: I don’t make my own cornbread mix because Trader Joe’s has an AWESOME boxed mix. I don’t usually use boxed mixes of any sort, but this one ROCKS! Though, your recipe looks pretty tasty too :)
I’ve loved every boxed mix I’ve ever made from TJ’s so I will have to look for it next time I go!

I grew up in the Great(est) State of Texas and you better believe we had our fair share of southern cornbread. However, I think we just used the recipe on the cornbread packaging HA! It was still SO good, so long as you butter the skillet!

Oh my gosh. Corn bread has to be one of the more delicious things on the planet and it is a sin that I have never made it!
I’ve never had corn bread but I think that’s because I live in England and it’s not so popular here. I might give it a try now I’ve seen how simple the recipe is though :)
No matter what recipe it is, it is 10 million times better if it is baked in a cast iron skillet.
The texture of that looks awesome!!! I looove cornbread…try drizzling maple syrup on it! We used to do breakfast for dinner when I was little and it was typically either waffles or cornbread, syrup + bacon. YUM.

I love adding cheddar and green chiles to my cornbread… YUM.
I can vouch for Jessica here. I made it and it is SO delicious and SO easy! We had it with chili and I ate all the leftovers. Oops. It really is so moist, even a day later.

We are cornbread addicts in my house. We call it Johnny Bread though! I use an organic cornmeal that has the cornflour still in it. So you can just add that, no other flours, and then it’s gluten-free as well! (We have a few gluten free friends)

Best way to eat cornbread….take a slice and cut in half, spread some butter on, then pour with maple syrup! Doesn’t get much better than that!

My family LOVES cornbread! Well, sweet cornbread. Like Jiffy, the one in the blue box. I’ve been trying for ages to find a from scratch recipe that tastes like Jiffy. I’m going to have to give yours a go! :)

I really didn’t use a recipe, I just mixed room temperature butter with honey and cinnamon!
I wish I remembered the recipe my dad uses (it’s from a cookbook called the “white trash cookbook” so you know it has to be good). The key is definitely putting creamed corn in the mix!

I just had cornbread for the first time in college. Kind of random, but growing up my great Aunt Anne made cornbread every year for Thanksgiving. But she had alzheimer’s and was pretty forgetful, and nobody trusted the cornbred. So it appeared at our Thanksgiving table every year, but I was never allowed to eat it. I helped my grandfather feed it to the birds instead.
Anyway, then I tried it in college and loved it! My favorite recipe is this one:

The BEST cornbread I have ever tried so far (and in fact, bake almost every night, just baked one and is cooling right now) is Mark Bittman’s cornbread. I use a bit more sugar, add a bit more oil, and also add vanilla to it but so far, nobody can resist it, myself included! Yours look like it can give his a run for his money though, so I’ll have to try yours too! :-)

ummm. the title says it all! Just a tab of butter and I would say pure heaven.
I just made this EXACT recipe…I L-O-V-E cornbread…but I decided to healthify it (lower cal/fat and higher protein) and replaced the butter/milk/cream combo with 1 cup plain/non-fat greek yogurt and then just upped the cream corn a tiny bit. Holy yumness! It was super delish and hungry-man approved.
