Roasted Garlic, Red Pepper and Mushroom Quinoa.
You can wipe that smirk off your face.
And pick your jaw up off the floor.
No butter. No bacon. No chocolate.
This can’t be fun.
Or can it?
See, I think something is really funny. I can post 5 healthy recipes a week, then post one that is over the top; complete with 3 sticks of butter and a picture that makes your pants button pop. And because of that, this is one indulgent blog.
But the fact is… we eat a bunch of healthy stuff in this house. Sure, sometimes it tastes disgusting. Um… broccoli? Gag me.
But other times it tastes amazing. Sort of like this quinoa dish.
Roasting garlic is one of my favorite things to do. I often send Mr. How Sweet to the store, and he buys garlic in bulk. In case you are curious, garlic in bulk tends to mean 15 heads at once. What is one to do? Roast it of course. All of it. At once. It’s sweet. It’s salty. It’s buttery.
It completes me.
So yes, when I tell you that quinoa, mushrooms, peppers and garlic can be delicious, listen. I would never lead you astray.
Roasted Garlic, Red Pepper and Mushroom Quinoa
Ingredients
- 1 head garlic
- 1 cup of quinoa
- 2 tablespoons olive oil
- 1/2 cup chopped red pepper
- 1/2 cup chopped mushrooms
- salt & pepper to taste
Instructions
- Preheat oven to 400 degrees. Chop the top off the garlic and peel away the loose outside paper. Drizzle olive oil on cloves, wrap in foil, and roast for 20-30 minutes, or until golden. Let cool.
- Cook quinoa according to directions on package. While quinoa is cooking, heat a skillet on medium heat and add olive oil. Add red pepper and mushrooms and saute until soft, about 6-8 minutes. When quinoa is done, fluff with a fork and add peppers and mushrooms. Squeeze the entire head of garlic cloves into the quinoa, mashing some with a fork and leaving others whole. Season with salt and pepper and mix well.

I LOVE dishes like this. I still prefer rice over quinoa, but I try to use this 50% of the time. I like it when I want a lighter dish. I have to say, I never really roast garlic, but after your description of it, I need to try!
It really DOES look amazing… but I’m afraid. Seriously…You haven’t yet me astray yet, which is why I need you to answer the following question in complete honesty for me: What’s the TEXTURE like? I don’t mind veggies nearly as much as it seems that you do, but I have a complete disgust for mushy and well…. grainy things. I love rice for it’s cloudlike fluffiness, but something tells me that this isn’t soft and fluffy. IS IT?
Hmmm…. it’s definitely not mushy. It’s more like chewy with a slight crunch? It doesn’t seem grainy to me.
OK….I’m trusting you completely. I’m going to try it this weekend. An overly healthy friend from culinary school gave me a bag of red quinoa for Christmas (yes, I have weird friends) and it’s been sitting in my pantry ever since.

So I have heard great things about quinoa, and I went to the grocery store in search of this healthy food…where do you find it? Is it rice? Pasta? Potato? Alas, I couldn’t find it and left with Oreos.

I find quinoa in the organic/health section of my grocery store. But at Trader Joe’s it is with the rice and pasta.

Not astray at all! I love all of those things, and am now feeling bereft because I haven’t had roasted garlic since I moved out six months ago. (It’s hard to roast garlic when you live on the street.)
(I’m joking. I just realised that just saying “moving out” is fairly ambiguous.)

Last time I made quinoa it came out very mushy and grossed me out. This sounds delicious with the roasted garlic! I’ll have to give quinoa another chance.

I haven’t experimented nearly as much as I want to with quinoa…I just don’t like to cook grains very much because they take awhile!! This looks beautiful, though I hate mushrooms and would probably have to sub eggplant or something!
Roasted garlic is to die for!! Once I made a roasted garlic soup that called for something like 7 heads of garlic. It was amazing!

I love the texture of Quinoa. I am weird about texture and I don’t like mushy things. I love oatmeal but I have to undercook it so that is itn’t creamy. That is why I don’t like cheesecake, pumpkin pie, or pudding. I need a texture and for some reason creamy or mushy foods gross me out. Haha…wow this was incredibly off topic. I simply meant that the “crunch” of Quinoa is what makes it one of my favorite grains…way better than rice!

Yum! I had quinoa for the first time a few months ago when my office-mate brought in your pumpkin quinoa parfaits for breakfast. Now I looove it. My boyfriend isn’t a super picky eater, but he’s funny about unfamiliar foods like quinoa. Wonder if I can get him to try this so I don’t have garlic breath all alone? :)

Have you seen the counter-top garlic roaster? I don’t mind roasted garlic in the winter where the oven warms the house, but sometimes I crave roasted garlic in the summer but don’t want to turn the oven on for it. Have you ever tried to freeze roasted garlic successfully?

Quinoa is so delicious! As a vegan, I have it high on my list of awesome things to eat that give my body all those snazzy things it needs :P It’s delicious and for anyone who has never tried it before, just go whip some up! You will not be dissapointed, I promise! I do suggest making sure you follow the directions on the package because it can be done wrong (like any pasta/rice, it can be underdone and overdone). Delicious recipe and drool-worthy pics… can’t wait to make this :)

I’ve been eating a ridiculous amount of quinoa cooked in chicken broth with earth balance and nooch… like daily. May need to try this out so I don’t burn it out ;)
I seriously, love quinoa! With veggies and melted Daiya (or cheese) on top…it is just the perfect meal! This looks delicious!
I love the combination of roasted garlic, mushroom a red peppers. The only way to make this better would be to add sundried tomatoes and nooch (or cheese).
When I make eggs, those are my go-to ingredients.

I love quinoa! I’ll have to try this – I do something similar with sauteed veggies/garlic (plus feta– you’ve gotta try that crumbled in) but roasted garlic is genius. Also, I like to make my quinoa with chicken broth instead of plain water. Gives it a bit more flavour!
