Creamy Mushroom Gnocchi.
Most days the thought of bearing my own offspring scares me to death.
I can barely tie my own shoes.
I lay on the couch most Saturday mornings until 11 am. Or later.
Sometimes I yawn in church. And chew gum.
Sorry, Dad.
I watch Sopranos marathons for four hours straight and then spend another two asking my husband if Tony is real because I know, I just know that he has to be real. He has to be.
I watch mindless trash like Jersey Shore too.
Not apologizing for that one Dad… I know you watch it too.
I don’t water my flowers.
I don’t clean the refrigerator.
Laundry is merely a blip on the radar.
And just yesterday, I went to spray a baking sheet with Pam and grabbed Raid instead. Raid, as in the poisonous ant killer. Raid, as in the life-ending serum that you drown insects in. Yes, I almost served Mr. How Sweet chicken tenders spritzed with Raid. How delicious!
Sometimes I have ice cream for dinner. And I nap. Oh boy… do I nap. Can I still nap with a kid? Like, really nap. Not a little 15-minute shut eye that makes you wish you’d simply stayed away and done something productive.
I stay in my pajamas some days until 8 o’clock at night. Hot, sexy sweatpants… XXXL sweatpants from college. Mr. How Sweet is lucky, right? Oh well, you can’t have it all…
But what I’m really worried about?
What I fret about all day? What keeps me up at night?
I might need to eat vegetables. Really people.
Honestly, do I have to? I don’t think I’ll ever love anything enough to eat a broccoli stalk.
And that whole balanced meal business? Snooze.
No more caramel and bacon for dinner I suppose.
Woe is me.
When that time comes, and I’m sure it will as I will rightfully deserve to have a smart-mouthed little brat screaming at me in the dressing room of Limited Too (memories!), I think I’m only going to make myself dinners like this.
Boil water. Dump in pasta. Saute onions. Add mushrooms. Add wine. [Lots of it.] Add cream.
Voila. Dinner is done in 15 minutes.
Creamy Mushroom Gnocchi
serves 2
1 pound whole wheat gnocchi
1 tablespoon olive oil
1/2 onion, chopped
1 garlic clove, minced
2 cups mushrooms, chopped
1/3 cup white wine
1/2 cup heavy (or light) cream
1/4 cup freshly shaved parmesan cheese + more for topping
fresh parsley for garnish
salt and pepper
Heat a skillet over medium heat and add olive oil. Add onions with a sprinkle of salt and pepper and saute until soft, about 5-6 minutes. While onions are cooking, prepare pasta and boil according to directions. Once onions are translucent, add garlic then add mushrooms. Cook until mushrooms are soft – about 5 more minutes.
Add wine and cook for 2-3 minutes. Stir in cream. Turn off heat and stir in parmesan. Add cooked gnocchi to cream sauce. Serve with chopped parsley and more parmesan.
Oops! I forgot a step: drink the wine. Lots of it.

I think of those things too, like how can I possibly lay on the couch all night with no one bothering me if I have a kid? I’m sure we’ll figure it out eventually. Any idea for a quick dinner is good to me, especially if it has pasta and wine!

Oh my… I think we may have been twins in a past life. I chew gum AND yawn – lots – in church. I don’t clean my fridge, and rarely water my flowers – hence most of the ones in my house are fake. AND I love mushrooms. This looks amazing!

Hysterical post! I do have kids; the good news is you can still wear the sweats all day, and my mom (and sisters) always told me “nap when they nap.” Good advice! And don’t worry about the veggie thing. I think my youngest went for months eating only peanut butters sandwiches, carrots, and apples. While they change your life and your heart in a zillion ways, they’re soooo worth it! (And I can’t wait to try this recipe!)

HA! that sounds like me but i have 5 kids! LOL. ALOT of people asked my hubby and I how we were going to have kids of our own when we act like kids most of the time anyways! Well it DOES work! I’m grateful for Saturday morning cartoons and me lounging in my bed with coffee until they come screaming for food (usually around 11am or so). I’m a lazy weekend person!
The gnocchi look delish! Have you ever made homemade? How does the consistency of this compair to the lightness of homemade? My Nonna used to make gnocchi weekly for me (cuz i was spoiled) and SO miss it!

I don’t know why I don’t enjoy it… maybe because I don’t *love* pasta or I’m not Italian? But nothing can compare to homemade! I love the whole wheat boxed version because it cooks in minutes.
omg sometimes I have dreams that I have a baby and I forget to like, you know feed it and I don’t have diapers. And then I wake up in a cold sweat and realize I don’t have a baby but if I did those things would actually probably happen.

You CAN absolutely do all of those things and still have children, minus the raid spray.
I have two kids and still manage to make extravagant dinners very often.
I still nap, sleep late sometimes, wear sweatpants, watch trashy tv, it’s just how you go about it.
Having kids is the best and hardest thing ever.

I feel EXACTLY the same way about babies. They’re cute, but… And my husband is 7 years older than I am which means it’s his biological clock is ticking now. Right now we’re faced with the fact that I have things I want to do but he’s ready for babies yesterday. Scary!

Best post ever!!! Omg after watching my nephew last night (he’s teething), I was so happy to hand him back. I love him to death but I told my husband on the car ride home how happy I was to go home, change into my sweats and lay on the couch watching housewives. I love my life! =)
Love this! and seriously, that gnocchi looks absolutely amazing….and I’ll admit, I have way too much laundry piled up in my bathroon…and stay in my my pj’s way throughout the day, too. I mean…conserving clothes…like I said, I already have too much laundry to do.

I still take naps. Real naps. But of course it’s not at my leisure–it’s got to be when my daughter is napping. That is when I should be cleaning the house or doing other responsible things, but sometimes, I just love a good nap!!
I was hoping to hear about a pregnancy too! I think you will have super cuter babies and will come up with the most creative recipes for your blog! I am trying for a baby now, and am obsessed with little ones. PS My sister’s little one is 5 and loves to help with cleaning.

Oh boy…I watch Jersey Shore and teen mom while my oldest child (6) is sleeping or at school and the younger one (1 and half) does not realize how trashy it is so she plays next to me while I vicariously live thru Snookie :)
I try to show a good example in front of them as far as eating goes…I do however keep jelly beans in my glove compartment, sneak bites of cake out of the fridge while they are in tub, and sometimes my husband and I order wings at 11pm.
I put jeans on to take my son to the bus and change into yoga pants when I get back in the house.
As long as everything looks good on the outside, I’m happy.
