Dinner and Dessert.
Sometimes I like to be domestic. [When “domestic” doesn’t mean doing laundry or cleaning bathrooms.]
Aren’t your vegetables supposed to take up like, half of your meal or something? Whatever.
Tonight we had chicken, whipped sweet + yukon potatoes, and blueberry balsamic brussels sprouts.
Guess what?! This week, I’m going to show you how I roast my chickens. You know, since I’ve been roasting them practically once a week. I am pretty obsessed. It will probably bore you to tears. Oh! And that blueberry balsamic syrup I mentioned the other night? It is just blueberry balsamic vinegar reduced in a saucepan. I didn’t make my own with blueberries and actual vinegar. I’m lazy.
But not too lazy to make dessert. Which was probably the best dessert we’ve ever had.
Whole wheat cookie cups with vanilla ice cream.
I sort of threw it together at the last minute… but if you’re intrigued I will try to remake it again and share. It was the most delicious thing ever but now I feel like I have to go run 20 miles. I should probably stop eating like I’m about to hibernate. This week I will eat apples. Lots and lots of apples.

Omg, same here. I’ve been eating steak and potatoes every single night for the past 3 nights. it’s a bit, awkward. But holy yum, blueberry balsamic? stop it. You just stop it with all this amazingness!

Cookie cups….oh my!
If they made all white meat chickens, I would totally roast one. I just don’t like dark meat. Got any suggestions on what to do with the dark meat?

Thank you! I really don’t, especially for any of my posts that I post under Fit Bites. I just randomly snap them. But for the recipe posts I probably spend 1-2 hours on photography.

Corbett-I don’t like dark meat either. Luckily, my husband does but because of work, he can’t always eat dinner with us. So, I’ve found that if I take the dark meat and shred it and smother it in something I don’t mind it so much. For example, in bbq sauce for pulled chicken sandwiches, with salsa and taco seasonings for nachos or tacos, in a thick and hearty soup with lots of noodles and veggies, or even in chili.
ps I’d love the recipe for the dessert. I got some ramekins for xmas that need to be broken in. (besides, if it’s whole wheat then the dessert is good for you, right? hehehe!)

And I’m intrigued by the roasted brussel sprouts. I’ve never really been a fan of brussel sprouts. But, I absolutely am in LOVE with roasted broccoli, so your post is making me wonder if I would like brussel sprouts roasted. Hmmm…I may just have to try them!
