Homemade Funfetti Cupcakes.
So… this whole sprinkles thing.
It’s kind of getting annoying, right? Look at me! I’m obsessed with sprinkles! Wah wah wah. I need attention. Yeah. Not cool. I may as well just slap on some glitter eyeshadow and tease my hair. But in reality, I’m so obsessed with sprinkles because now that I’m in my mid-to-late (read: really late) 20s, it’s not so appropriate for me to be walking around sporting the newest shade of Urban Decay and blinding folks with glistening flecks from my lids. Um… what would you rather have? Me wearing loose sparkles on my eyes or a compulsion to bake you colorful vanilla cakes?
So sprinkles it is. Everyone needs a vice.
They are sort of like trashy gossip tabloids. Or the new, freakishly awkward version of 90210. Or chocolate covered bacon. Or skinny jeans. I really have no business dealing with any of the above but I die a little inside when I don’t get what I want. I’m okay with being a walking celeb stalker, wearing pants that make me look like a stuffed sausage and knowing the exact story line on every tween drama.
And making homemade funfetti cupcakes. I’m okay with that too. Funfetti cupcakes were always an obsession in our house growing up. Heck, they still are. Sometimes I still buy the boxed version. Yes I do. But I’ve also been making them from scratch for a loooooong time and really didn’t think you had any interest considering they are… hello… a vanilla cupcake with sprinkles. Simple. Yummy. Easy. Lovable.
Don’t mind my crumbs. I’m messy. So if you feel like creaming some butter and scooping some flour, you’re in for a treat. My favorite part? Different sprinkles. Wowza. Sometimes I use the regular old things – you may refer to them as jmmies, but I just can’t get behind that. Other times I use the nonpareils, which I love because they have super bright, fun colors. If you haven’t noticed, I like bright colors. And sprinkles. And glitter. And bacon. Okay I’m done.
Homemade Funfetti Cupcakes
Ingredients
Homemade Funfetti Cupcakes
- 1/2 cup butter
- 1 cup sugar
- 2 whole eggs
- 1 tablespoon vanilla extract
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/3 cup milk
- 1/3 cup assorted brightly colored sprinkles + more for top of frosting
Vanilla Buttercream
- 2 sticks of butter, softened
- 2 1/2 cups powdered sugar
- 1 tablespoon vanilla extract
- 1 tablespoon of milk, if needed
Instructions
Homemade Funfetti Cupcakes
- Preheat oven to 350 degrees F. Cream butter and sugar in the bowl of an electric mixer until fluffy, about 3 minutes. Add eggs and vanilla and beat until combined. Combine dry ingredients in a bowl. Add half of the dry ingredients, mixing until just combined. Add the milk. Once mixed, add remaining dry ingredients. Fold in assorted sprinkles. Pour into cupcake tins and fill 2/3 of the way full. Bake for 18-20 minutes. Let cool, then frost.
Vanilla Buttercream
- Cream butter in the bowl of an electric mixture until completely smooth and creamy. With the mixer on low speed, add in powdered sugar slowly. Gradually increase mixer speed and add vanilla, then beat for 2-3 minutes, scraping down sides and bottom of the bowl. If frosting is too thick, add milk 1 teaspoon at a time until desired consistency is reached If it’s too thin, add sugar gradually until it thickens. Frost cupcakes and top with sprinkles.

Sprinkles!!! omg. I LOVE sprinkles. So much in fact that I always double ice my ricotta cookies and add more sprinkles. Even so much that when I go out for ice cream I specifically ask for layers of ice cream and sprinkles. Now I want ice cream and it’s so hot and humid that I think I might just go get some!! :) Thanks for posting such wonderful ideas!!
Came back on to get this funfetti recipe and saw your comment and can I just say—OMG!! I DO THAT TOO! Layer ice cream and sprinkles in a cone or a cup and then have them put more sprinkles on top? When I go to the Mister Softee truck the guy gets sooo pissed at me. But whatever, I want it like that!
Yes! That is exactly what I do!! Unfortunately, there is no ice cream truck that goes around my town. omg, if there was i’d be a million pounds. However, I go to this place called jitty joes and the girls get so aggravated with me it is funny! My boyfriend refuses to take me there. But hey, the is how i like my ice cream!! sprinkles!

The first patch sank when I took them out, and on the second batch the icing didn’t look stiff like yours does in the picture…. ?
Hi J! They could have fell for a number of reasons – oven not hot enough (all overs differ in temperature), they needed to cook longer, or the oven door was opened during baking too many times to just name a few. As for the frosting, was your butter room temperature? That could have played a part but if I have problems with buttercream I usually just add a little more sugar and it stiffens right up!

I made these today for my boyfriend and I… they taste excellent. My cupcakes turned out a bit more yellow and not so fun-fetti like. I think it might be the differences between products in the US and Netherlands. :(

I just made a similar recipe to this for a 3 layer funfetti cake with white chocolate buttercream frosting and strawberries and blueberries for the filling. I can’t wait to try this recipe!
I never thought of adding those kind of sprinkles in the batter. It looks so amazing. Looks like so much fun! The colors came out great. I think my kids would love that! They can help throwing them in. I’ll be trying this recipe!

I made these last night and they didn’t turn out very well. They were gorgeous, but tasted more like bread with sprinkles than cake. I am thinking I may have used the wrong kind of flour-did you perhaps use cake flour instead of regular?
Hi Jessi! Sorry they didn’t turn out… I did use all purpose flour, did you measure all the ingredients? Not sure why they would not be sweet!
I did measure them all. I’m pretty OCD about that when it comes to baking. I think I’ll give it another go-maybe I’ll have better luck next time.

I tried making these today. They came out very dense and not very light and fluffy. What am I doing wrong? I’m fairly new to baking so I don’t have any clue what went wrong. I followed the recipe exactly.
My family is so obsessed with Funfetti that my mom made my brother a groom’s cake for his wedding using Funfetti cake mix. I like it, but I’m more of a chocolate gal. Yet I’ve pinned this recipe because my son would LOVE colorful cupcakes like this. And I like to make that kid smile.
SUCH yummy cupcakes. I love how dense they are. One thing to tell bakers that i completely let slip… USE THE WHITE VANILLA EXTRACT! One thing i love so much about this blog entry is the look of the white fluffy icing. I was very disappointed the second i dropped in the brown vanilla extract and realized I wasn’t going to get it. Love your blog!

I love making funfetti cupcakes! I was waiting for the day you’d try to make them!! I made some a few months ago (http://yellebellyboo.blogspot.com/2011/03/funfetti-cupcakes.html) but I used long sprinkles (what we call Jimmies in New England) and the color was more spotted than yours, which swirled more. I had really wanted to make a funfetti CAKE, but I couldn’t find a recipe. Apparently proportions in the batter change between cupcakes and cake. If you find a recipe, please let me know!
I will do some testing and try to figure it out!

I love you for making these and posting them. Funfetti is my little guilty pleasure, I love it. I moved to Israel and it’s a land where boxed cake mixes dont really exist. So thank you, now I have my fix for my guilty pleasure.
