Thanksgiving Leftover Breakfast Biscuits.
This might just be the best day of the year.
Because you realize that your fridge is most likely packed to the brim with leftovers and um, what is better than mashed potatoes and gravy and stuffing… AGAIN?
Nothing. That’s what.
I’m sort of a T-Day leftover purist in that I prefer my mashed potatoes and gravy and stuffing warm and piled on my plate quite similarly to how they were less than 24 hours ago, but that’s just dinner. Alright. Maybe lunch. I mean we have alllll these leftovers so why not do breakfast too?
Or maybe that’s when you eat the leftover pie. I dunno.
And it’s not like this just has to be breakfast. It can totally be a snack. Or whatever.
If it isn’t your thing, I highly suggest some turkey BLT tacos or this thanksgiving leftover breakfast hash with holy crap! mashed cheddar potato pancakes. Which can also be a snack. Or lunch. Or everything because it’s obnoxiously perfect.
Uh, yeah. Do it.
Thanksgiving Leftover Breakfast Sandwiches
Ingredients
leftover:
- biscuits, buns or dinner rolls (or toast/english muffins!)
- cranberry sauce
- warm mashed potatoes
- warm turkey
- poached, fried or scrambled eggs
Instructions
- Spread of biscuit or bun with a layer of cranberry sauce, then spoon potatoes top. Add a small slice of turkey topped with the egg of your choice. Eat!

I’m a leftover purist too, it’s like a 2nd chance to taste everything, can’t wait for lunch :)
Sounds amazing!! I didn’t get to make my turkey yesterday! My Husband decided to paint his car and my roasting pan was in the garage so I couldn’t get it!! Stinky! I still have my bird, so I’ll probably make him this weekend!!! I want turkey leftovers!!
I am of the philosophy that anything with a gooey egg is that much better!

These look fantastic Jess! Leftovers are one of the best parts of Thanksgiving and even though ours was last month, I’m still very tempted to roast another turkey (ok, maybe just turkey breasts) so that I can make turkey sandwiches, soups, and THESE breakfast sandwiches!
Wish I was eating this for breakfast right now! I think I am going to start celebrating Canadian and American Thanksgiving.
No Thanksgiving here, so no leftovers. And now I desperately want this.

I am in Canada so sadly I have no thanksgiving leftovers today either… however I’m currently imagining how it would taste in my mind, and it’s AMAZING
These look beyond amazing. I cannot with that egg yolk in your last photo, it’s making my mouth water. I agree with you, I’m a Thanksgiving purest when it comes to leftovers. I want them all on my plate the same way I had them yesterday, but this breakfast looks to-die-for!

Drool. Just drool. Perfection of a picture, OK, two pictures…the drippy egg yolk down the side and onto the table/surface…and the steam shot… Utterly gawguusss!!!!

I have the leftovers turkey 22#’s from 12 people for which only 5 made it.(due to Illness)
No apple pie ,there is some of the pumpkin chocolate chip cookie pie .I made it from your recipe ,it was sooo yummy! I had that for breakfast,with some turkey. Hey its Black Friday, I can do that. Is that a beer I see in one of your pictures?
