Chocolate Chip Cookie Bailey’s Milkshakes.
This is a story all about how I put giant chocolate chip cookies into a blender. With homemade Bailey’s.
Again. Because it wasn’t too long ago that I did nearly the same thing… again. With kahlua. It’s just that… I made the homemade irish cream over the holidays and obviously when you have a giant pitcher of something like that in your fridge, it calls out to you.
I’m serious. Every morning when I opened the fridge and that was the first thing I saw? It was nearly impossible not to guzzle some of it’s deliciousness right there. Merry Christmas to me.
But even before I made that elixir of the gods I knew that if I was going to attempt something like that in my kitchen, I would be putting it in these milkshakes. And I thought, wow – how good would some of those brown butter chocolate chip cookies I made be inside of a bailey’s milkshake? phenomenal, right? yessssss.
Then I went to grab some of those brown butter chocolate chip cookies I made and uh, they were gone. Missing, stolen, destroyed… however you want to look at it, they had disappeared. Annnnnd to make matters worse, I think there was, like, six dozen? Maybe?
I think I ate them all. *Think.*
Anyhoo, I was lucky enough to be making these spiked shakes at noon on a Sunday, which fortunately meant I could pick up some of my favorite chocolate chips ever. Which also probably means I have a whole other host of issues, but whatever. Totally worth it.
Chocolate Chip Cookie Bailey's Milkshakes
Ingredients
- 2 1/2 cups coffee ice cream
- 1 1/2 cups milk
- 1/2 cup irish cream liqueur
- 2 large chocolate chip cookies + 1 more to crumble on top
- 6 ice cubes
Instructions
- Add all ingredients to a blender and process until almost smooth, leaving some small pieces of cookie if possible. Pour in glasses and crumble more cookies on top. Serve!

all of these sweet milkshakes, all of these creamy liquors… i am loving every second of it all on how sweet it is! if it has coffee ice cream in it, does that mean i can have it for breakfast? and brown butter chocolate chip cookies have been made in my kitchen before. and they mysteriously go missing too. :)

Oh no, sounds like those brown butter cookie thieves are at it again! ;) This is exactly how I’d like to spend my 2013 as well… with a warm beverage (or cookie?) in the other hand though, because I’m freezing right now!

I usually get my Bailey’s fix each year at Christmas. My aunt makes this Irish cream pie that is phenomenal. Unfortunately our Christmas plans changed this year, and alas there was no pie. So…I need this in my life. Plus, chocolate chip cookies!? Ahhh.

Ok, so I want to try to make an alcoholic milkshake – using the “apple pie moonshine” my husband and I made over the holidays. Think apple pie in liquid form. Yum. Any suggestions? Should I cook up some apple pie filling and blend it with vanilla ice cream and some of the moonshine? Maybe add a little “crumb” topping? More like a blizzard, than a milkshake, but I think it may work.

You got me singing the Fresh Prince theme song with that first line! This sounds like the most perfect combination of food. I LOOOOOOOVE Bailey’s! (I also love Kahlua! Those are literally my favorite alcoholic drinks ever). And, unfortunately, I’ve also experienced that moment when I think I’ve got 36 or so fresh cookies lying around and it turns out I ate them all >blush<.
